Mix together the egg yolks, sugar, milk, and pancake mix in a very large bowl until it is smooth with no large lumps.

In another large bowl, beat the egg whites with a hand mixer until stiff peaks form when lifted.

Carefully fold the egg whites into the pancake batter, until just incorporated, making sure not to deflate the batter.

Grease two 3.5-inch (9 cm) metal ring moulds and set them in the middle of a pan over the lowest heat possible.

Fill the moulds about ¾ of the way full with the batter, then cover the pan and cook for about 10 minutes, until the center of the pancakes are slightly jiggly.

Release the pancakes from the bottom of the pan with a spatula, then carefully flip them over, making sure not to spill any batter inside.

Cover and cook for another 5 minutes, then serve with butter, syrup, and berries!

Fluffy Protein Japanese Pancakes

Large Whole Eggs

¼ Cup Milk Substitute (2 Ounces (or Milk))

Scoop Protein Powder (Your Choice Flavor 30 grams)

Tablespoons Sweetener (I like Erythritol)

½ Cup Pancake Mix (or Make Your Own 59 grams)

Take out a bowl

Add into it your 3 Large Egg Yolks (keep your Egg Whites off to the side), Milk Substitute, Protein Powder, Sweetener, and Pancake Mix

Mix everything up until smooth

Use a whisk or hand mixer and beat your Egg Whites for a couple minutes or until they can shape waves without crashing (stiff peaks some would say!)

Add your Egg Whites into your other mix and lightly mix them in

Take out a cake pan or multiple, coat it/them with some non-stick cooking spray, and evenly distribute your mix

Bake your Japanese Pancakes on 325F/162C for around 20 minutes (remove them with a little jiggle left so they don’t overcook)

Cake Pan Method

Take out a stovetop pan that has a lid, turn your burner on low heat, and coat it with some non-stick cooking spray

Pour some of your mix in once it heats up and cover your pan

After 1-2 minutes remove your cover and add a little bit more mix on top

Cover and repeat the process one more time

Flip your pancake over, cover it again, and let it took for a couple minutes

Fluffy Japanese Pancakes

Whisk the egg yolk with the sugar until pale and frothy. Mix in the milk and vanilla.

Sift flour and baking powder into the mixture and whisk until incorporated.

Bowl 1 - Yolk Mixture

Whisk 1/3 of the meringue into the yolk mixture until completely incorporated. Add half of the remaining meringue and mix delicately. Add the remaining meringue and fold into the mixture using a spatula – be careful not to deflate the batter.

Heat a large non-stick pan (with a lid) over low heat. Add a very small drizzle of oil. Using ¼ cup scoops, scoop the batter into the pan. Cover and cook for 2-3 minutes.

Remove the lid, add another ¼ cup of batter on top of the pancake already cooking. Cover and continue to cook for another 4-5 minutes.

Flip the pancake…EVER. SO. GENTLY! Cover and cook for 4-5 more minutes until done. Repeat with the remaining batter. Serve!

Made these with Trader Joe's gluten free pancake mix instead of flour. Cut the sugar to 1 tbs with the yolk. The mix already has some sugar and baking powder so only added vanilla. The secret is in the meringue. They puffed up perfectly on my pancake griddle. a light coating of butter worked better than oil. the first one stuck when I tried to turn it. Turning them is tricky, takes a couple or more times to get the hang of it. I got 4 pancakes out of the recipe. My sloppy turning wasn't pretty but they tasted yummy. Didn't even need syrup.

They were perfect until I delicately transfered them to my plate : prrrrrrt ! Bye bye air... they became flat under my eyes @$!%€ ! Maybe they weren’t cooked enough ? 

So close, will definitely try again. And even if they became flat, the taste is simply delicious !

This was my 4th try at fluffy pancakes and it was a success!! The first time the pancakes came out wonderfully fluffy, probably more by chance than anything else!  Cream of tartar,? Nope. Steaming? Nope. But I lowered the heat to 3 (1-9 ceramic top) and covered. Bingo!  Can't wait to make these for my grandsons next Christmas! Thank you!!

Unfortunately mine (first attempt) were not as fluffy (maybe 1cm thick). When i poured the second layer it spread till beyond the first layer instead of clumping up on top of it. I didn’t know when to stop beating the egg whites, after 5min, still barely peaks that i just stopped at some point thinking i must be overbeating it already. Also i made my own cake flour mixing all-purpose with cornstarch. Taste-wise though it’s great. I’ll try again next time, will tag you when it’s perfect. Thanks for sharing!

Whisk together the flour and baking powder in a large bowl.

In a separate bowl, add the butter, milk, and egg yolks, stirring to combine.

In a third bowl, use a hand mixer to beat the egg whites until soft peaks form.

Pour the milk mixture into the flour mixture and stir with rubber spatula until just combined. Add the beaten egg whites and gently fold to combine.

Heat an 8-inch (20cm) nonstick skillet over low heat. Pour 1 ½ cups of pancake batter into the skillet, smooth out the top, then cover with a lid. Cook until golden brown on the bottom and a toothpick inserted into the center comes out clean, about 20 minutes. Transfer the pancake to a plate and repeat, making 3 more pancakes with the remaining batter.

These fluffy soufflé Japanese pancakes are irresistible. They're light, melt in your mouth and lower in calories compared to regular pancakes due to its lower fat content. Serve with fresh berries and your favorite toppings.

Japanese Fluffy Soufflé Pancakes - Sugar Free

all purpose flour or cake flour

tsp vanilla extract

tsp salt

tsp cream of tartar

tbsp sugar free sweetener (monk fruit erythritol)

berries

Whipped Cream

Grab a large bowl and make sure it is clean and grease free.

Separate 4 egg whites into the large bowl and pop it in the freezer for about 10-15mins. Split 2 egg yolks in another mixing bowl, and the remaining 2 yolks can be kept in the fridge for other recipes. We're only using 2 egg yolks in this recipe.

Separate eggs

Add milk and vanilla extract into the bowl with 2 egg yolks.

Add sifted flour and baking powder and mix well. Don't overmix it.

Prepare flour mixture

Add cream of tartar and salt to the mixture.

Now beat the egg white mixture with an electric mixer on medium speed for about 30 secs until it turns frothy.

Then slowly add your sweetener in thirds and turn on your electric mixer to the highest speed.

Beat the egg whites until it's smooth and glossy. Continue to beat until stiff peaks form. It will take about 3 minutes. Make sure to not overbeat it.

Now fold the meringue into the flour mixture in thirds. Mix well but do not overmix it

Beat Meringue

Heat up 1 or 2 large pans over low heat (or the lowest heat on gas stove). Grease your pan(s) lightly with oil and wipe off excess oil with a paper towel. If you have two large pans then you can make all 6 pancakes in one go.

Scoop 2 large (almost overflowing) tablespoons of the mixture to the pan for each pancake, making 3 pancakes each pan.

Cover it for about 5 mins. Then add another 1 tablespoon of the mixture on top of the pancakes. Don't spread the mixture sideways if you want thicc pancakes. Stack it up high!

Add about a tablespoon of hot water to the pan and then cover it to let it steam for another 5 mins.

If you have any extra batter, stack it on top, add more hot water, then steam it for another 2 mins or so.

Then open the lid and gently flip the pancakes over. Add more water to the pan and cook the pancakes for another 4 mins.

Your pancakes are done! Add your favourite toppings, whipped cream or maple syrup. Dust some sugar free powdered sugar on top and enjoy!

Vegan Fluffy Japanese Pancakes

coconut

apple cider vinegar

tbsp vanilla extract

pastry flour (120 grams)

tbsp potato starch (20 grams)

baking powder (21 grams)

yeast,

black salt, optional

coconut milk (180 milliliters)

tbsp coconut yogurt (15 grams)

tbsp sugar (36 grams)

tsp baking soda

black salt, optional

Combine the coconut milk and apple cider vinegar together and set aside. If making version #2, stir in coconut yogurt as well. 

Add pastry flour, potato starch, sugar, baking powder, nutritional yeast and black salt to a bowl and whisk to combine. Make a well in the middle of the dry ingredients and pour in the 'buttermilk' and vanilla. Gently stir together until JUST combined. It's okay if you still see some lumps of flour DO NOT over mix. Heat a large, deep pan over medium heat. 

In another bowl, use a hand held electric mixer and whip up the aquafaba. Add in the cream of tartar and whisk until foamy. Gently fold in the aquafaba using a spatula (skip this step if making version #2).

Fluffy Pancakes (3 cm height): the batter will be enough for about 4. Cover the pan and let them cook for 9-12 minutes.

Extra Fluffy Pancakes (5 cm height): the batter will be enough for 2. Cover the pan with a lid and let them cook for 14-17.

Fluffy Pancakes (3 cm height): 5-8 minutes

Extra Fluffy Pancakes (5 cm height): 10-15 minutes

To test doneness, insert a toothpick in the middle of one of the pancakes. It should come out clean or with a few cooked crumbs. 

Once cooked, turn off and remove from heat. Transfer the pancakes onto a plate and remove the ring mold and parchment paper. If you find the pancake stuck to the ring mold, use a thin knife and carefully run it around the ring mold to remove the pancake. 

Serve with vegan butter, fruits, coconut whip cream and maple syrup and devour!! 

such a great recipe ! i made it impromptu with makeshift carboard moulds and the pancakes were surprisingly easy to make. it was also rlly flavourful (im sure its because of the 1tbsp of vanilla haha)

This recipe is phenomenal!! So delicious, easy to make, incredibly fluffy and sweet, and so true to the non vegan kind. I tried to make these non- vegan years ago and they never came out as delicious as these vegan ones did! Truly exceptional!

This was so fun too make.  I made the version without Aquafaba.  It was delicious!

This recipe is EDIBLE GOLD! absolutely love it. I skipped the nutritional yeast and black salt and they still turned out absolutely delicious. I recommend reducing the aquafaba so that it’s concentrated so the meringue is extra strong. But such a good recipe!

These are really good! Just have to be careful with the aqufaba if using it, at first I overwhipped and the pancakes were too dense :( but no one else to blame but me! I also love to add more spices - cinnamon or nutmeg, since I am not using black salt anyway it gave them a nice little boost :) Thank you for the recipe!
