Jerk Chicken is marinated in a flavorful and spicy Jerk Chicken Marinade and cooked on the grill.

Jerk Chicken Marinade

chicken drumsticks

scallions

yellow onion

spicy pepper

garlic

ginger

limes (juice only)

lime

soy sauce

canola oil

brown sugar

tsp allspice

cinnamon

nutmeg

thyme

salt

Chop onion and scallions and add it to the food processor. Add spicy pepper, garlic cloves, and all remaining ingredients.

Pulse until the mixture if completely smooth and blended. 

Marinade:

Place chicken into a large zip-lock bag and pour all the marinade over it.

Close the bag and mix so chicken is coated evenly.

Lay the bag down in a large plate and refrigerate overnight to marinade. 

Marinating Chicken:

Start the coals and make sure to preheat the grill first. Brush the grill grate with some oil to grease it and place chicken drumsticks on the grill.

Close the lid and cook for about 5-6 minutes. Open the lid and use metal tongues to flip the chicken quarter of the way. Close the lid and cook for another 5-6 minutes. Flip chicken another quarter of the way. Repeat until chicken is cooked all around. (Depending on the size of the drumsticks, it will take 30-35 minutes.)

Use a leave-in thermometer to take the temperature of the chicken as it cooks. Insert the thermometer into the thickest part of the biggest drumstick and cook until the internal temperature is 165°.

Cooking Jerk Chicken on the Grill:

I can&#39;t think of any sauce more suited for grilling than this sweet, fiery, and flavor-packed homemade Jerk Sauce. Complex flavors burst from habanero peppers, pineapple juice, herbs, and spices. You&#39;ll love this sauce as a marinade, seasoning, or dip. Makes 1 cup

Jerk Sauce

thyme, (minced)

½ small onion, (chopped)

garlic, (roughly chopped)

(17 grams) fresh ginger, (chopped)

Scotch bonnet

(22.5 milliliters) soy sauce

(30-60 grams) brown sugar

(12 grams) allspice, (coarsely ground)

(8 grams) cinnamon

(3.5 grams) nutmeg

bouillon powder, (optional)

(60-120 milliliters) pineapple juice, (adjust to the desired consistency (or water))

(30 milliliters) oil, (or more)

In a food processor or blender, combine the following: thyme, green onions, onions, garlic, ginger, habanero, or Scotch bonnet pepper. Then add the soy sauce, brown sugar, allspice, cinnamon powder, nutmeg, bouillon powder, and pineapple juice. Pulse for about 30 seconds or until blended.

Heat the oil in a skillet or saucepan. As soon as the oil is hot, add the pureed ingredients. As soon as it starts to bubble, reduce heat and simmer for 7-8 minutes.

Serve with chicken, beef, or use as a spread for sandwich.

Add 1 cup chopped onion, 2 tbsp chopped garlic, 2 tbsp chopped ginger, 3 chopped green onion, 2 tbsp fresh thyme, 2 tsp salt, 1 tbsp dark brown sugar, ¼ cup dark soy sauce, ½ cup vegetable oil, ¼ cup white vinegar, ¼ cup lime juice, ½ cup orange juice, 1 tsp whole black peppercorns, 1 tsp ground allspice, 1 tsp ground nutmeg, 1 tsp ground cinnamon, and 3 scotch bonnet peppers (remove the stalk) to the medium jar of a blender.

Blend until smooth.

In a blender or food processor, combine the peppers, onion, green onion, garlic, ginger, orange juice, lime juice, coconut aminos, sugar, thyme, allspice, pepper and cloves.

Easy Jamaican Jerk Sauce Recipe

This jerk seasoning recipe is a spicy marinade of fresh herbs and spices similar to traditional Jamaican jerk seasoning but without added sugar. Add this versatile sauce to everything from meat to veggies. It&#39;s Whole30 compliant and paleo friendly.

Jerk Seasoning (Whole30, Paleo)

scallions (green onions)

wiri wiri peppers (or 1 scotch bonnet

coconut aminos

yellow mustard

black pepper

vinegar (white, apple cider or red wine)

avocado oil

Combine all of the ingredients except for the coconut aminos, oil and vinegar into a food processor

Then process until the all spice berries are finely chopped if using whole berries (if you have a spice grinder you can also grind the berries before adding to the food processor)

Next pour in the coconut aminos, oil and vinegar and pulse for a few seconds to mix together. Alternatively you may also use a spoon to mix together

Finally, pour into an air tight container and store in the refrigerator for up to 2 weeks

We made this recipe very recently. I used it as a marinade for chicken before grilling and let me just say, this is one of the best I've tried! We will be keeping this in our rotation.

This has become my Franks Hot Sauce. It put it on everything! It's seriously so good!
