Medium Onion

Grind all the Masalas in the Garam Masala section and set aside

Now quickly run your ginger, garlic and onion from the first section through a food processor/ chopper or dice by hand.

Combine all the ingredients except the Hara Masala ones in the Instant Pot along with half a cup water, give it a mix and put to pressure for 30 Minutes then natural release.

When you open the lid to the instant pot there will still be some water left in it (see video) - saute on medium heat for 5-7 minutes until the mix starts to stick to the bottom.

While it&#039;s cooling run the Green Masala ingredients through the food processor to mince. Just a few short pulses will do the trick, you want a fine dice not a paste.

Once the mixture is cool then for extra meaty kababs you can simply go in with clean hands and mash it together or run it through the food processor to acheive a more paste like consistency (you won&#039;t lose the lovely meat texture entirely). Process on high speed for 30 second intervals till the consistency is to your liking.

Stir in ALL the hara masala - it will seem like a lot but it works.

Shape the kababs to your preferred size. Tip: Damp palms make this easier so keep a bowl of water near you.

Flash freeze on a tray then move to a freezer safe container. Keep well for 6 months.

Marinade

Place marinade ingredients into a large plastic ziplock bag or a large bowl.

Meat

Chop meat into 2-inch cubes, add lamb to marinade. Seal bag and rub the marinade into the meat.

Refrigerate

Leave sealed bag or bowl in the fridge to marinate the lamb meat. For best results leave as long as possible, but can be anytime between 2- 24 hours

Thread

Thread the lamb onto skewers- we made two large kebab skewers. You could do 3 medium or 4 small skewers if prefered?

Preheat

Preheat gas BBQ grill for 5 minutes, oil the grill plate before placing the kebabs on.

Gas BBQ Grill - High heat

Light the charcoal BBQ grill 30 minutes prior to cooking, the flames should have calmed down &amp; the charcoals should have turned white? Oil the grill plate before placing the kebabs on.

Charcoal BBQ Grill

Preheat for 5 minutes, place foil under grill plate.

Oven Grill

Grill/BBQ

Cook for 6 minutes on one side then turn for another 6 minutes on the other. Do not keep turning the sticks once halfway through is fine.

COOKING TIME-The below time will result in &#039;Medium-Well&#039; done Lamb Kebab - adjust cooking time to less for medium-rare or more for well done?

Oven

Preheat oven to 200°C/400°F - Oil the baking tray or bake on foil to prevent sticking. Oven cook for 15 minutes, no need to turn.

Check

Cut into a chunk of lamb to check if cooked to the desired doneness? Cook for longer if required?

Pitta

Add Pitta bread for the last minute to warm through on the grill plate

Serve

Serve lamb on top of pitta and a salad consisting of shredded lettuce, red cabbage, cucumber, onion, and tomato. Or on a bed of rice.

Sauce

Drizzle over Garlic Mayo or/and Kebab Shop Chilli Sauce

Make awesome chicken kababs at home!!! These oven grilled chicken kebabs are succulent, flavorful and extremely delicious! Serve them as a appetizer or a side with some rice, garlic naan and curry.

chicken (boneless cubes)

Ensure chicken is free from excess moisture. Drain it completely.

Mix all the ingredients in a mixing bowl. 

Taste the marinade and add more salt &amp; spice if needed.

Marinate the chicken well and rub each piece for few seconds.

Cover completely.&nbsp; Refrigerate for over night or at least 4 hours. Resting tenderizes the chicken and it absorbs flavors well.

If using wooden skewers, soak them in water for a while.&nbsp;Line the chicken and onions alternately on the skewers.

Marination for chicken kabab

Preheat the oven to 240 C for minimum 15 to 20 mins. 

Place them in a tray and grill for 15 mins. After 15 mins,

Flip them and grill for another 15 mins.

The last 5 mins, move the tray to the top rack or broil.

At this stage you can brush some butter or oil over the kababs if you prefer.

Serve chicken kebab hot with mint raita or chutney.

Making chicken kebab

Iraqi Kabab is made from a mixture of ground lamb and beef, with a high fat content and very minimal spices. It is skewered onto long metal skewers and grilled until perfection, with lots of char grilled flavour.

Authentic Iraqi Kabab (BBQ Recipe)

Start by either grating the onion on a box grater or cut the onion in quarters, place them in a food processor and process until pureed. Once pureed or grated, squeeze the onion over a bowl to remove as much liquid as you can.

Combine the ground lamb, ground beef, grated (and squeezed) onion, salt, pepper and olive oil in a large bowl. Using gloved hands, mix everything together until well combined, then add the flour and mix it into the meat. Knead the meat mixture for at least 7 minutes. This step ensures the meat proteins bind together stay on the skewers and not fall apart. Allow the meat to rest for 15 minutes in the fridge.

Using large 1-inch flat metal skewers, grab a fistful of the meat mixture and start to skewer the meat. Using your hands to squeeze and stretch the meat along the length of the skewer, aiming for roughly 6 to 7 inches in length, and a 1/4 inch in thickness. The length is not as important (they can be shorter or longer) as the thickness; make sure it is uniform so the kabab cooks evenly. Use your thumb and index finger to create indentations in the meat roughly 1-inch apart, which helps to flatten the kabab.

Turn on your gas grill at least 15 minutes before grilling, to 450F, and remove the grill grates. If using a charcoal grill, make sure to start the coals at least 30 minutes before grilling.

Suspend the skewers on either edge of the grill so that they are directly over the flames or coals. Flip the kababs every 30 seconds, grilling them for a total of 7 to 8 minutes until visibly cooked and browned on the outside but still juicy on the inside. The fat may start to drip onto the flames and make them flare up which is totally normal.

If using, skewer the halved tomatoes and onions (with skin on) and grill alongside the kababs for 10 to 12 minutes until charred and softened.

Serve the kabab with grilled onions, grilled tomatoes, fresh parsley, sumac onions, and Iraqi bread (or pita bread).

So so so good! Soft, tasty and melt in mouth kabobs!
