This make-life-simple Everyday Kale Slaw with a simple lemon dressing is vegan and gluten-free and is designed to be made ahead for the busy workweek. It keeps 4-5 days in the fridge and be used daily to top tacos, buddha bowls, burgers, even pizza!

Everyday Kale Salad with Roasted Lemon Vinaigrette

lacinato kale,

cabbage,

¼ of a red onion,

herbs

olive oil

lemons

garlic garlic

salt, pepper and chili flakes

Optional seeds pumpkin seeds

Place all slaw ingredients in a big bowl &#8211; kale, cabbage, onion, herbs. Toss well.

Add the oil, lemon juice to taste, minced garlic and a generous amount of salt and pepper. Add chili flakes to taste.  Toss well. Taste and adjust the salt and lemon. You want the salad to taste tangy and flavorful!  Store in a sealed container in the fridge for 4-5 days!

This is soOo Good! My husband also is a huge fan and he typically doesnt like any sort of kale salad! Have made a big batch two weeks in a row! 2nd time around I left out the onions (personal preference)

I've made this salad everyday since I found it! The sweetness of the lemons after roasting are incredible and so unique!

I followed this to the letter, including roasting the lemons, and it truly was delicious - and yes amazingly it does hold up in the fridge quite well, fantastic for busy weeknights.

I absolutely loved this recipe and spent a happy week feasting on it. Used ingredients I had on hand - curly kale, Chinese cabbage and lots of mint in my herb mix. Yum. I want to make a version for a friend allergic to citrus. Could I  replace the lemon with a vinegar of some sort in their portion? Thanks Sylvia

This crunchy kale slaw is perfect for meal prep Sunday! Use it all week as a taco topping, side dish, or dinner salad with chicken. Versatile and delicious!&nbsp;

Crunchy Kale Slaw (or Salad)

c shredded kale

c shredded red cabbage

c shredded green cabbage

c carrots

c hemp seeds

sunflower seeds

tbsp extra virgin olive oil

apple cider vinegar

tsp honey

tsp kosher salt

tsp black pepper

Combine the shredded kale, cabbages, carrots, hemp seeds and sunflower seeds in a large bowl. Toss.

In a small, lidded jar combine the olive oil, apple cider vinegar, honey, salt, and pepper. Shake until the vinaigrette is emulsified.

Pour the vinaigrette over the slaw. Toss throughly to combine. Serve immediately as a side salad or as a topping for tacos or pulled pork. Kale slaw keeps in the fridge in a tightly sealed container for at least 4 days, and up to a week.&nbsp;
