Beef Kafta Afghan Kebab Recipe

Soak wooden skewers in water for 30 minutes to 1 hour. Remove from water when you are ready to start cooking.

Lightly oil the grill of your barbecue and preheat to medium-high for 20 minutes.

In a food processor, chop the onion, garlic, and parsley.

Add the beef, soaked bread, and the spices. Puree mixture in the food processor until fully combined forming a fragrant meat paste.

Remove the beef mixture from the food processor and place in a large bowl. Take a handful of the mixture and mold it on a wooden skewer. Repeat the process. For best results, ensure each Afghan kebab is approximately 1 inch in thickness.

Lay the skewered kofta kebabs on a baking sheet.

Place the beef kafta on lightly oiled, heated barbecue. Grill on medium-high heat for 4 minutes on one side, turn over and grill for another 3-4 minutes. Meat should be crispy and well browned.

Serve Afghan kebabs with pita bread, tahini and Middle Eastern salad.

Turkish Adana Kebab

1lb/500 gr ground lamb

Soak 4 wide wooden skewers in water. Let them sit for 30 minutes.

In a mixing bowl, combine ground lamb, red pepper flakes, paprika and salt together. Use your hand and mix until everything is well combined and you have a sticky mixture. 

Divide the meat into 4-6 pieces, depending on the size of the skewers you use.

Wet your hands and roll each piece into a ball and then mold each around a skewer forming a flattened kebab. 

Heat a cast iron skillet (or a grill). Brush it with a little oil or use cooking spray. Cook the kebabs, flipping them up every few minutes. They will be cooked within 8-10 minutes. Don’t overload the skillet if it is not large enough. 

While you are cooking the kebabs, in another hot skillet, cook tomatoes and peppers halved or whole. Don’t let them fully cook. Just getting some chars on them would be enough.

Serve the kebabs with cooked tomatoes- peppers and fresh parsley.

Ensure chicken is free from excess moisture. Drain it completely.

Mix all the ingredients in a mixing bowl. 

Taste the marinade and add more salt &amp; spice if needed.

Marinate the chicken well and rub each piece for few seconds.

Cover completely.&nbsp; Refrigerate for over night or at least 4 hours. Resting tenderizes the chicken and it absorbs flavors well.

If using wooden skewers, soak them in water for a while.&nbsp;Line the chicken and onions alternately on the skewers.

Preheat the oven to 240 C for minimum 15 to 20 mins. 

Place them in a tray and grill for 15 mins. After 15 mins,

Flip them and grill for another 15 mins.

The last 5 mins, move the tray to the top rack or broil.

At this stage you can brush some butter or oil over the kababs if you prefer.

Serve chicken kebab hot with mint raita or chutney.

Grilled Cajun Chicken and Sausage Kebabs are packed with bold and spicy cajun flavors.

Cajun Chicken and Sausage Kebabs

Prepare the cajun seasoning by combining all ingredients in a small bowl.

Soak wooden skewers in water while you make the cajun seasoning. (Soaking them in water helps prevent them from burning on the grill).

Add sausages to mixing bowl. Drizzle with olive oil and half of the cajun seasoning. Toss to coat.&nbsp;

Season the cut chicken with remaining cajun seasoning.

Layer skewers alternating with pieces of chicken, sausage, and chopped vegetables. You can pack them together closely.

Clean and heat your grill. Spray with non-stick cooking spray or oil.

Place prepared kebabs on hot grill.&nbsp;

Cook for a few minutes on each side, gently rotating them 2 or 3 times as they cook, until the chicken is cooked through.&nbsp;

Remove to a plate. Serve immediately.

Delicious baked and fried mix veg kabab recipe. The whole kebab mixture is made of raw minced veggies. Very easy to prepare. You can bake them as well as pan fry.

Veg Kabab Recipe, How to make Kebab Recipe (2 Ways)

potatoes (or 1 medium potato)

cauliflower

carrots (or 1 small to medium carrot)

white button mushrooms (or 6 to 7 button mushrooms)

onion (or 1 medium onion)

mint leaves

coriander leaves

½ teaspoon Ginger Garlic Paste

besan (or gram flour)

salt (as required)

turmeric powder

red chilli powder

½ teaspoon Garam Masala

Rinse and dice or quarter the veggies. Take all of them in a food processor or food chopper or in a mixer or grinder jar.&nbsp;

Also add mint and coriander leaves.

Make a fine mince of the veggies. If using a mixer or grinder jar, then use the pulse option for a few seconds or run the mixer for a few seconds. Then scrape the sides and again run the mixer for a few seconds. Again scrape and run the mixer for a few seconds, till the veggies are minced very well. Do not make a paste.&nbsp;

Take the minced veggies in a mixing bowl or pan.

Add ginger-garlic paste. Also add all the spices powders.&nbsp;

Mix very well and keep aside.

Then heat a small pan and add 10 tablespoons besan in it.

On a low flame, stirring often roast the besan.

Roast the besan till its color changes and it gives a good aroma.

Add the roasted besan to the minced veggie mixture.

Season with salt.

Mix very well. The kebab mixture is light and not heavy.&nbsp;

Now take a small portion of the veg kebab mixture and shape into a ball.&nbsp;

If the mixture falls apart while shaping, then some more roasted besan needs to be added. Depending on the type of veggies used and their moisture content, you may need to add less or more besan.&nbsp;

Flatten each ball and place them in a greased baking tray. Grease the tray very well with some oil.

Place the baking tray in a preheated oven at 180 degrees celsius. Preheat the oven for 15 minutes at 180 degrees celsius, before you place the kebab in it.&nbsp;

Once the veg kebab are half baked, then remove the tray from the oven. Brush the top of the kebab with some oil.

Keep the tray back in the oven and continue to bake till the veg kabab are golden and slightly crisp.

Baking time varies from oven to oven. So consider an average time of 20 to 35 minutes for baking. Wait for 1 to 2 minutes and then gently remove the kebab with a spatula.&nbsp;

Heat 2 to 3 tablespoons oil in a pan. You can use any neutral flavored oil. Place the kebabs in the pan.

Pan fry the veg kabab on a low to medium flame. 

When one side is golden and browned, gently turn over and fry the second side. Flip once or twice and fry till the kebab are golden and crisp.

Place them on kitchen paper towels. In the same way, fry the remaining kebab in batches.

Serve mix veg kabab hot or warm with mint chutney, mint raita or tomato ketchup.
