This easy coconut mug cake is fluffy and moist. It cooks in the microwave in less than 2 minutes.

Keto Coconut Mug Cake

unsalted butter (melted)

coconut flour

tsp baking powder

tbsp granular erythritol

tbsp milk (can use coconut, almond

In a large microwave-safe mug, add all ingredients except shredded coconut. Mix with a small whisk until batter is smooth and egg has been completely beaten in.

Stir in 1 tbsp of shredded coconut.

Cook cake in microwave at full power for about 1 minute 30 seconds or until cake is fully cooked. Cake will initially rise very high before sinking back down when it stops cooking.

Allow cake to cool a few minutes before eating. If you want a nicer presentation, you can remove the cake from the large mug and place it into an 8 oz mug. Top with whipped cream or coconut whipped cream before serving.

(90 grams) cream cheese

(100 grams) Granular Swerve

(220 grams) almond flour

(56 grams) coconut flour

baking powder

lemon juice

(125 grams) Confectioners Swerve

Preheat your oven to 350°F (177°C) and line a 9x5 inch loaf pan with parchment paper.

In a large bowl, combine the almond and coconut flour with the baking powder and mix until combined. 

In a separate bowl, combine the cream cheese, butter, and Granular Swerve with a hand mixer. Add your eggs one at a time while mixing until everything is combined.

Then add the lemon juice, flour mixture, and lemon zest and mix on the lowest setting to combine. 

Pour the batter into your loaf pan and bake for 45-60 minutes or until the center is firm and the edges are golden brown. 

Check the cake at about the 30-minute mark, and again at 40 minutes. If the top of the cake is becoming too brown, cover it with tin foil.

Let the cake cool for 10 minutes in the pan. Then lift the parchment paper to remove the cake from the pan and transfer the cake to a wire rack to finish cooling.  

While your cake is cooling, prepare the glaze icing. Mix the Confectioners Swerve, cream cheese, and lemon juice in a bowl.  

Spread the glaze evenly on top of the cooled cake and let it drip down the sides.

Preheat  oven  to  350  degrees.  Grease  a  6-cup bundt  pan  and  set  aside.  In  a  large  stand-up  mixer  bowl  using  the  paddle  attachment  on  the  mixer,  beat  together  the  butter,  cream  cheese,  and  Swerve  until  light  and  fluffy  and  well  incorporated. 

Add  the    almond  extract  and  mix  well.&nbsp; &nbsp;

Add  the  eggs  and  sour  cream  and  mix  well.&nbsp;

Add  all  the  dry  ingredients  until  well  combined. Beat the mixture until it is light and fluffy.

Pour  the  batter  into  the  greased  bundt  pan.  Bake  for  40  minutes  until  a  toothpick  inserted  to  the  bottom  of  it  comes  clean.&nbsp;

Preheat

Preheat waffle maker to medium high heat.

Whisky it

Whisk together all the chaffle ingredients - egg, cream cheese, almond flour, baking powder, heavy cream, monk fruit, vanilla and cake batter extract.

Pour batter

Pour 1/3 of the chaffle mixture into the center of the waffle iron. Close the waffle maker and let cook for 3 minutes or until waffle set. You want this chaffle to be spongy and not crisp.

Remove & repeat

Remove chaffle from the waffle maker and repeat with remaining batter until you have three cake chaffles.

Make the frosting

While your chaffles are cooling, make the frosting. Beat the butter together in a small bowl. The longer you cream the butter, the more lighter in color it gets. Mix together butter, powdered erythritol, vanilla. Slowly add in heavy cream until you reach your desired frosting consistency.

Frost it

Layer your chaffle cake. Place down one chaffle and spread frosting on top. Lay down a second chaffle on the frosting and frost it's top, lay down the third chaffle. Frost the top and the sides of all chaffles.
