These low carb soft caramel candies are a simple grandmotherly treat that you can make yourself at home. And each caramel has less than 1g net carbs.

Low Carb Keto Caramels

cooking spray

butter

sugar-free pancake syrup or equivalent sugar-free syrup

heavy whipping cream

vanilla extract

salt

  Attach a candy thermometer to a medium sized sauce pan.  Add butter and melt over low heat. Stir in syrup and sweetener. Bring to a simmer, stirring constantly.

p id=&#8221;instruction-step-2&#8243;>2.  Simmer mixture over low heat, stirring constantly, until mixture reaches 220 degrees F, about 3 minutes. Stir in heavy whipping cream.  The mixture will be bubbly.

id=&#8221;instruction-step-3&#8243;>3.  Continue heating mixture, stirring constantly, until it reaches 250 degrees F, about 1 minute.. Remove mixture from heat.

=&#8221;instruction-step-5&#8243;>5.  Transfer the mixture into a bowl and whisk for several minutes as it cools down.

This is soooo good! Caramel is one of my favourite foods! I have modified this recipe a bit - doubled it for one thing, only use Kerrygold grass fed butter (tried it with other butters and the Kerrygold seems to brown better and impart a deeper flavour) and at the cool down stage as I’m stirring it just before pouring in the molds, I add 1 tsp of vanilla and 1 tsp of caramel extract. Not only do they look rich, they taste just like a real full sugar caramel. Thanks so much for the inspiration! This doubled recipe makes about 64 small caramels about 1 tbsp each. Combine this with a yummy gooey Keto Fudgy Brownie recipe . . . Over the top goodness!

Yum!! I've actually never really liked Werther's, but I love homemade caramels and need to try this sugar-free version. I love the shapes, too!

Oh my gosh, these are sooo good!!! Mine aren't as nice a color as yours, but they taste great! I only had unsalted butter, so I added salt a pinch at a time until I liked the taste. I made a 1/4 batch because I wanted to see if it will be suitable for what we call Millionaire's Shortbread (it's bars that are shortbread bottom layer, caramel layer, topped by a chocolate layer) These aren't sticky like "real" caramel, but I love the flavor and I think it will work fine for the bars. But I think I'll probably regularly make bite sized ones as well, I could eat these all day!

Mine ended up being a hard almost instantaneous melt away.. I think I heated the mixture too long cause I put it in a medium sauce pan and my thermometer wasn’t submerged enough. Next time I plan to double the recipe and use a small pan. Maybe add caramel flavor and. Ow salt. Not sure I like the salt. I used tillamook unsalted butter FYI.

I made them (with a candy thermometer) but they weren’t caramel...they were fudge. What did I do wrong?

On low heat, melt the butter. You can brown the butter if you'd like, but that's optional (I like it though!).

Once the butter is melted, turn the heat to medium-low and add ChocZero syrup &amp; Lakanto and whisk frequently.

Keep whisking past the boiling point. Once it starts frothing, turn off the heat and keep whisking for 20 seconds.

Let it cool to room temperature before wrapping.

For Soft Keto Caramels / Keto Candy:

Same Instructions as the Soft Caramels for #1 &amp; 2

Get it past the boiling point and when it starts frothing, whisk for 10-15 seconds.  Do not let it create giant bubbles. After, remove from heat and whisk for another 20 seconds.

For Medium Chew Keto Caramels / Keto Candy:

Get past the boiling and froth stage. Keep Whisking. After 10-15 seconds, it'll start creating large bubbles. Remove from heat.

Pour into silicone mold. You'll need to work quickly. You have **seconds** to pour it into the molds before it hardens.

For Hard Keto Candy (like Werther's Original):

Question - I'm looking for a caramel sauce that I can dip and coat some not-as-good=as-advertised cookies. And of course, the recipe looked fantastic, so I doubled it! Now, instead of a dozen cookies, I'll have to bland my way through 24+. So I'm looking to sweeten things up a bit. 
1) would this recipe work as a dipping sauce?
2) if so, do you recommend hardness level 1 or 2?
