Chicken Florentine Casserole - Keto and Low Carb

mascarpone cheese

parmesan cheese (grated)

mozzarella cheese (divided)

garlic

Preheat oven to 375F.&nbsp;Add the shredded chicken to a large bowl.  Add in the mushrooms.  Squeeze all the water out of the spinach, then add to the bowl with the chicken and mushrooms.

Heat a saucepan to medium and melt the butter.  Add in the garlic and sauté for about 20 seconds, careful not to brown!  Add in the heavy cream and stir.

Add in the mascarpone cheese, and stir until melted. &nbsp;Add in the grated parmesan cheese, salt and pepper. &nbsp;Turn off the heat and stir.

Pour the sauce over the bowl with the chicken, mushrooms and spinach.  Mix, then add 1/2 cup of the mozzarella cheese and stir until well combined.

Pour into a casserole dish that has been sprayed with nonstick spray.  Sprinkle the remaining 1 cup of mozzarella cheese over the top and bake for 25 minutes.

Turn the temperature up to 425F and bake for an additional 10 minutes or until the cheese is melted and golden. &nbsp;Allow to cool slightly before serving. &nbsp;Store leftovers in the fridge for a few days or freeze.

Preheat oven to 375F.

Add the cubes of parmesan to&nbsp;into the bowl of a food processor and pulse until coarsely grated.

Add all the remaining ingredients except the chicken, broccoli and mozzarella cheese and mix until well combined and thickened, to make the sauce.

In a separate bowl, add in the chicken, broccoli and mozzarella cheese (reserving 1 cup for the topping).

Spoon the sauce over the top and mix until everything is well coated. &nbsp;The sauce will be very thick, so you might think you won't have enough liquid, but trust me it's plenty!

Transfer to a greased casserole dish and add the reserved cup of mozzarella cheese over the top.

Bake for 40-50 minutes or until the broccoli is tender and the cheese is golden. &nbsp;Allow to cool slightly before cutting into and serving.

Easy Keto Low-Carb Bacon Cheeseburger Casserole

Butcher Box ground beef

onion (chopped)

worcestershire sauce

oz cream cheese

eggs

mustard (I used 1 tablespoon)

heavy whipping cream

cheddar cheese (divided)

Burger Seasoning (I like Weber Burger Seasoning

Butcher Box bacon (cooked and crumbled, add more if you like!)

Preheat oven to 350 degrees.

Place the Butcher Box ground beef in a skillet over medium-high heat. Add the garlic, onions, burger seasoning, and salt and pepper to taste.. Using a spatula, break the ground beef into chunks.&nbsp;

Add the&nbsp;worcestershire sauce&nbsp;and cream cheese. Cook until the ground beef is no longer pink and the cream cheese has melted.

Remove the skillet from heat.

In a medium bowl,&nbsp;combine the eggs,&nbsp; 1/2 cup shredded cheddar cheese, 1/2 cup shredded white cheddar cheese, heavy cream, and mustard.

Spray an 8 x 11 or&nbsp; 9x9 baking dish (I used 8 x11) with oil or cooking spray. Pour the ground beef mixture into the dish. Sprinkle the Butcher Box bacon and sliced pickles throughout.

Drizzle the liquid mixture on top.

Sprinkle the remaining 1/2 cup shredded cheddar and 1/2 cup shredded white cheddar cheese on top.

Bake for 15-20 minutes or until the cheese begins to bubble. Mine was ready around 17.

Cool before serving.

This is a easy and delicious recipe, inspired by the Pioneer Woman on the Food Network, but modified to be keto friendly.   This is great for a week night meals and is very versatile, you could even use a rotisserie chicken to save time.  You get all the flavors of Chicken Cordon Bleu but without the labor intensive prep required for the regular dish.  It’s sure to be a hit with the entire family.

Keto Chicken Cordon Bleu Casserole

Chicken (Cooked, chopped,)

Ham (Cubed *Look

Monterrey Jack Cheese

oz Cream Cheese (Softened)

tbsp Butter

Chicken Broth

Dijon Mustard

Swiss Cheese (Divided)

Parmesan Cheese

Almond Flour

In a separate bowl.&nbsp; Mix 1/4 cup of grated Parmesan cheese and 1/4 cup of almond flour.&nbsp; Mix well together and set aside.

Lets Make Our Keto Bread Crumbs

Pre-Heat oven to 350 degrees.&nbsp;&nbsp;

Grease a 9 x 13 Casserole Dish

Cook 4 cups of chicken and cut into small pieces, and season to taste.&nbsp; You could also use a rotisserie chicken.&nbsp;&nbsp;

Microwave your cubed ham in a bowl for approximately 3 minutes.&nbsp; Place a paper towel in your bowl to assist with soaking up the moisture from your ham.

Layer 1/2 of your chicken and 1/2 of your ham and half of your Monterrey Jack Cheese in the bottom of your casserole dish.&nbsp; Mix together well.

Repeat the layering step with the remainder of your chicken, ham and cheese.

Set this aside

Lets Make Our Casserole

In a sauce pan Melt Butter and cream cheese.

After melted add your half and half into the sauce pan and let simmer, whisking to combine.

Add broth, add Dijon mustard and whisk to combine, bring to a simmer.&nbsp;&nbsp;

Remove from heat and add Swiss cheese until melted.&nbsp; If you'd like you can add seasoning to your cheese sauce.

Making Your Cheese Sauce

Pour your cheese sauce over your casserole.&nbsp; Sprinkle remaining cheese over top of casserole.

Sprinkle your keto bread crumbs over top of casserole.

Bake for 30 - 40 minutes at 350 degrees until browned and bubbly.

Optional Step:&nbsp; After your casserole is cooked turn your oven on broil and brown the top for approximately 1 minute (but watch closely)

Let cool for 15 - 20 minutes

This warm and comforting Keto Chicken Cordon Bleu Casserole is the perfect quick and easy weeknight meal. It has all the traditional flavors of cordon bleu with juicy chicken, salty ham, and melty Swiss cheese, but paired with the hearty goodness of mushrooms, onion, garlic, and cauliflower - finished with a rich tarragon cream sauce and topped with Parmesan cheese. Best of all, it can be on the table in less than 30 minutes.

In large skillet over medium-high heat, brown chicken in the butter.  Once the chicken is browned on both sides, add the ham, onion and mushrooms to pan.  Reduce heat to medium and continue cooking until the onions are translucent and soft.

At the same time, steam the head of cauliflower in the chicken stock , in a covered sauce pot over high heat. Steam until the cauliflower is fork tender. Drain the chicken stock from the pan. Leave the cauliflower in the hot pan, but remove the pan from the heat. This will allow some of the excess moisture to continue to evaporate from the cauliflower.  Once nearly all of the liquid is evaporated, fork mash the cauliflower.

In medium sauce pot, combine the heavy cream, garlic, ½ cup Parmesan cheese, sour cream, 2 slices Swiss cheese, tarragon and salt and pepper. Bring to a low boil over medium-high heat and then reduce the heat to low and simmer, stirring frequently for 10 minutes or until the sauce has reduced by 1/3 and is thick.

In a 3 quart casserole dish, combine the mashed cauliflower, meat mixture and sauce.  Once all the ingredients are well incorporated, cover the top with remaining Swiss cheese and Parmesan cheese.  Bake for 25 minutes or until the Parmesan cheese on top is golden brown and has formed a crust.

Cook Bacon &amp; Broccoli (Note 3): Fry bacon slices in large skillet (Note 4) over medium heat until crispy, flipping occasionally, 5 to 10 minutes. Meanwhile, microwave broccoli until tender, 3 to 4 minutes (Note 5). Transfer crispy bacon to paper towel lined plate to drain, reserving bacon grease in skillet. When cool, crumble bacon into small pieces.

Cook Chicken: Cut chicken into bite-sized pieces (less than 1 inch) and add to skillet with bacon grease. Cook over medium-high heat until cooked through, stirring frequently, 5 to 10 minutes. Turn off heat.

Assemble Casserole (Note 6): Preheat oven to 375 F. In 9x13-inch casserole baking dish, add cooked chicken (leaving liquid behind in skillet) and dry ranch seasoning. Toss together until well-seasoned. Add broccoli, ranch dressing, mozzarella, 1/2 of cheddar, and 1/2 of bacon. Carefully stir together in baking dish until well-mixed. Top with remaining cheddar and bacon.

Bake &amp; Serve: Bake at 375 F until casserole is heated through, about 25 minutes. Let stand at room temperature until bubbling ceases, then serve (Note 7).

This recipe is a simplified casserole version of the Swiss dish cordon bleu. It&#039;s a comforting meal with chicken, ham, peas, and assorted cheeses mixed with a tasty creamy sauce. Great for low carb diets, it has only 4.5g net carbs per serving.

Cook Chicken: Cut chicken into 1/2-inch pieces (Note 4), and cook them in large pan over medium heat until cooked through. Use slotted spoon to transfer only chicken to 8x8 inch baking dish (Note 5), leaving behind any liquid in pan.

Make Sauce: Stir together all creamy mustard sauce ingredients in small saucepan over medium heat. Once it starts to simmer, turn off heat. Evenly pour sauce over chicken in baking dish, using spatula to scrape down saucepan to get every last bit of sauce.

Assemble Casserole: Preheat oven to 375 F. Cut ham into 1/2-inch strips, patting dry with paper towels if wet, and add to baking dish. Then add green peas and swiss cheese on top. Stir everything directly in baking dish until well-mixed. Evenly top with cheddar cheese, then top with parmesan cheese.

Bake: Bake uncovered at 375 F until casserole is heated through and starting to brown on top, about 30 minutes. Cool for at least 10 minutes, then cut into 4 equal portions and serve (Note 6).

Combine the ground beef and onions in soup pot or Dutch oven and sauté until ground beef is browned. Drain fat.

Add spices, Worcestershire, ketchup, tomato sauce, tomato paste and water to pot. Stir to combine and simmer for 30 minutes.

Rinse and drain soybeans. Add to chili and simmer for 5 to 10 more minutes. (optional Ingredient)

Pour into a medium size casserole dish, or baking dish of choice.

In a blender combine wet cornbread ingredients. Whirl. Add dry ingredients. Combine again. Pour over chili mixture spreading evenly. Bake at 350° for 40 to 50 minutes or until knife inserted in cornbread comes our clean.
