Keto Peanut Butter Fudge

113 g butter (1/2 cup)

272 g sweetener (I used stevia & erythritol blend) (1.5 cups)

Line an 8x8 baking dish with parchment paper or greaseproof paper and set it aside.

Add the coconut cream, butter and sweetener to a pot over medium heat and heat until everything melts together and there are no granules of sweetener left.

Mix in the peanut butter, vanilla and salt.

Pour the mixture into the lined baking dish and allow it to cool to room temperature.

Once cooled, place it in the fridge for 2 hours or until firm.

Slice with a hot knife (for clean lines) and enjoy!

Line an 8 x 4 inch loaf pan with parchment paper.

Melt almond butter and chocolate in a double boiler on the stove over medium heat. Stir constantly with a spatula until the mixture is completely smooth and evenly mixed.

Pour chocolate mixture into lined loaf pan. Use spatula to smooth out the chocolate and evenly spread it across the loaf pan.

Place loaf pan into freezer for about 1 hour or until fudge is set.

Once fudge is set, let it soften at room temperature before cutting with a sharp knife. Cut fudge into 1-inch squares. You should have enough for 18 squares. Store uneaten fudge in an airtight container.

Tablespoons butter (room temperature)

In a medium saucepan, combine chocolate, cream, and Pyure sweetener. Place over low heat and bring to a simmer, stirring frequently. Simmer very gently over low heat for 1 minute.&nbsp;Remove from heat and whisk in collagen and vanilla extract. Allow to cool to room temperature.

While chocolate mixture is cooling, line an 8" X 8" baking dish with parchment paper.

In a large mixing bowl, beat the cream cheese and butter together until fluffy using a hand mixer.&nbsp;

Slowly add the cooled chocolate mixture to the cream cheese mixture in small amounts, beating after each addition

Stir in the walnuts.

Spread the fudge mixture evenly in the prepared 8x8 glass pan.

Spread the fudge out evenly and cool in fridge until solid (about 2-3 hours). After it has cooled, cover it.&nbsp;

When fudge is completely solid, using the edges of the parchment paper, lift the fudge out of the baking pan and place on a cutting board. Using a serrated knife, cut into 16 pieces. Store in an airtight container in the refrigerator.

In a medium saucepan over medium heat, bring the heavy cream, sweeteners, and coconut oil to a low boil. Reduce the heat and simmer 20 to 30 minutes, or until the mixture is thickened and reduced by about one third.

Remove from heat and add the chopped chocolate. Let stand 5 minutes, until melted, then whisk until well combined and smooth.

Whisk in the collagen, if using, the cocoa powder, vanilla extract, and salt until smooth.

Spread the mixture in prepared pan. Sprinkle with sea salt or chopped nuts, if desired. Chill 6 hours until firm and cut into squares.

Stick (113 grams) salted butter

Tbsps. (30 grams) Confectioners Swerve

Tbsp. (5 grams) Unsweetened dark cocoa powder

Melt your salted butter and chocolate chips. To do that, chop up the salted butter into smaller pieces and place it in a microwave-safe bowl with the chocolate chips.

Microwave and heat in 30 second increments, stirring the butter and chocolate chips together after every 30 seconds until well-combined and completely melted.

Now that the butter and chocolate chips mixture is ready, use a sieve to sift your Confectioners Swerve and cocoa powder into the bowl. 

Mix everything together with a rubber spatula until everything has been thoroughly incorporated.

Pour some water into your bread pan and line it with parchment paper. You'll want to make sure you have some excess parchment paper hanging over the sides to make it easier to pull your keto fudge out of the tray.

Then, gently pour your chocolate mixture into the pan. To get it nice and even, you can smoothen it with a spatula or gently tap the pan on the table a few times to distribute the batter.

Refrigerate it for at least 1 hour to let the chocolate fudge set. However, if you're impatient, you can always freeze it for 30 minutes, and save yourself some time.

Made this for Christmas dessert so easy and delicious.  Made one minor change I used a square silicone mold for 21 perfect squares.

Just made this and OMgosh😲 to die for! Made half the recipe...so easy due to your inclusion of grams. Stirred in 2T pecan pieces and now just waiting for an hour to pass. Licked the spoon and whisk so got a pre-taste😉 No need to look elsewhere for a fudge recipe, so thank you for this. I have some PB2 powder and wondering if I could use this to get chocolate-pb fudge. If so, would I need to adjust any of the ingredients? Which ones and by how much?

This is my go-to sweet treat!  It is a perfect morsel of yumminess that is so satisfying.  Absolutely use the sea salt topping!!  Seriously, I have been off sugar and most carbs for about 3 months now and this has been the single recipe that has kept me going. Add all ingredients to a small saucepan set over medium-high heat.

Heat a medium size sauce pan over medium heat. Melt butter, then add brown sugar. Stir continuously until sugar dissolves and it begins to simmer and a thick brown caramel begins to form. This usually takes 6-8 minutes for me. (see video below)

I have made this so many times - it really is the best fudge recipe out there! 

I just wanted to share a rather delicious mistake I made with this recipe today. I abandoned the simmering cream/butter/sweeteners for longer than usual, and when I finally realized it I saw that it had reduced a LOT more than 1/3, and in fact had that browned butter/caramelized texture, colour and smell. After adding the chocolate and everything else, it pretty much seized because it was so thick. And separated. Remembering how to thin out chocolate from Carolyn's chocolate mousse recipe (which I've also made a thousand times), I brewed up some espresso and gradually whisked it in to rescue the chocolate. 

What I've ended up with is an even more intense, death-by-chocolate fudge that has undertones of brown butter. AMAZING!!!!

Hi, can i use pure powdered monkfruit instead? Would it be too sweet if i use the same amount as the recipe?

The first time I made this I substituted regular organic grass fed milk for almond milk and it was great.
No one believed it was sugar free.
HOWEVER, the next time I made it, I accidentally let the cream come to a HIGH Rolling boil.  After the fudge cooled in the frig more than 6 hours, the fudge stuck to the wax paper when I cut it.  Was this because of the rolling boil or some other reason?

Love this! I was short one ounce  bakers chocolate, so I added a bit extra cocoa. It is really very good. took longer to reduce the cream but worth the wait.  Thankyou for this excellent recipe. April

I made this because my friends and I are in love with your peanut butter fudge and they requested I make the chocolate and put it together with the peanut butter fudge.  So, that is what I did!  This fudge is so creamy and wonderful.  Came out absolutely perfect.  I put it in the loaf pan and then made a recipe of the peanut butter fudge, poured it over the chocolate fudge and put it in the fridge overnight.  It came out amazing!!!  So very good!  My friends are amazed they can eat something that tastes as good as this and it is sugar free (Keto).  Every time I go to a get together now, guess what they ask for?  Yep, the chocolate/peanut butter fudge.

I made this and followed the instructions and ingredients exactly. I guess with keto ingredients there is a lot of variation. I used Lindt Excellence 100% cacao bars and weighed them. I used Organika collagen and measured 1/3 cup. I used Lakanto powdered sweetener with 2 tbsp sweetener as indicated. I used coconut milk and followed the instructions to simmer the coconut milk (dairy free) and it took a long time to reduce and thicken. I brought it to a boil and simmered it for 45 min and still didn’t think it was thick enough but it had reduced somewhat. When I mixed in the chopped chocolate it did thicken up further but after adding salt, collagen, and cocoa it was pretty runny. Poured it in the prepped pan anyway and let it set in the fridge. Today it is really soft but absolutely delicious. I was really hoping for nice squares like you got but although I pulled it out and cut pieces it’s pretty soft. Not sure why, maybe the collagen?
