It may seem like a challenge, but good gravy that's also keto-friendly is achievable. Here's how to make it with xanthan gum and which keto Thanksgiving recipes to use it on.

Keto Gravy

butter

c. turkey pan drippings

beef broth

Worcestershire sauce

garlic powder

Kosher salt

black pepper

xanthan gum

I can’t rate the exact recipe since I only had 1/4 cup pan drippings and changed the broth to chicken as the drippings were from roasted chicken. I also added 1/8 tsp more of the xanthan per another review. It tasted very good! Even my picky adult daughter asked me to always make it this way. 
A tip for the XANTHAN GUM: Mix it with the Worcester, garlic, salt, pepper and add some of the hot drippings from the pan. (Use a glass measuring cup and just scoop the liquid)  Whisk immediately. Continue adding more hot liquid. It’ll become paste. When it’s no longer clumpy add to the pan and continue to whisk away.

This recipe was excellent! The only modification was I cut the recipe in half, used bacon drippings, and added a little garlic salt/parsley mix. Yummy! In the end, I did also add another shake of xanthem gum to get the thickness right. As a gravy lover, this recipe will be a staple.

Had turkey and keto gravy tonight and I am happy 😊  I thought I was running out of good ideas but I keep finding more substitutions and being satisfied with my keto meal's.

First time making low carb gravy. It was delicious over our turkey. I will definitely be making it again.

This gravy is excellent! I added 1/8 tsp more xanthan gum to thicken it a little which made the texture perfect! Taste was great with the pan drippings I had. Which had roasted garlic seasoning in it.

We stuck to our Keto lifestyle for Thanksgiving and I’m so glad to have found this recipe! We used it on our turkey and loaded mashed cauliflower and it was great. Will definitely make this again!

Garbage label. This is regular gravy. Gluten free maybe, but not Keto.

Air Fryer Italian Stuffed Portobello Mushroom Caps

4 inch Portobello Mushroom caps, stems and gills removed

Tablespoons avocado oil

Tablespoons Balsamic vinegar

Salt and pepper

Cup Shredded Mozzarella Cheese

Cup pork

Cup Shredded Parmesan Cheese

Italian seasoning

Tablespoons Melted Butter

Pre-heat the air fryer to 400F.

Brush the inside of each mushroom cap with avocado oil and balsamic vinegar.

Season the inside of each with salt and pepper.

Sprinkle the mozzarella cheese in the center of the mushroom caps.

In a large mixing bowl, combine the pork rinds, parmesan, Italian seasoning and melted butter.

Spoon the pork rind mixture evenly into the mushroom caps.

Spray the inside of the air fryer with cooking spray and place the mushrooms in the air fryer, 2 at a time (unless all 4 will fit) and cook for 12 minutes or until the tops are brown and crisp and the mushrooms are tender.

Serve!

Pecan halves

Granular Sweetener (Click here to see my favorite on Amazon)

cinnamon

egg white, beaten until frothy

Preheat oven to 250F.

Line a 9x13 sheet pan with parchment paper or a silicone baking mat.

In a mixing bowl, mix together the pecan halves and the egg white.

In another large bowl, mix together the sweetener, cinnamon and salt. Add in the pecan halves and the egg white and mix well to coat the pecans.

Lay the pecans out on the baking sheet in a single layer.

Bake in the oven for 1 hour, stirring every 15 minutes. The pecans will brown and get crunchy.
