This keto pecan pie bars recipe is buttery, crunchy, and melt in your mouth delicious. And these low carb pecan pie bars are everything you love about a classic pecan pie but in bite-sized form. Oh, and instead of being loaded with carbs and sugar, each bar only has 2 NET CARBS!

Keto Pecan Pie Bars | The Best Low Carb Pecan Pie Bars

(168 grams) Blanched Almond Flour

Cup (56 grams) Melted Salted Butter

Cup (40 grams) Confectioners Swerve

Large Egg

Tsp (4 grams) Pure Vanilla Extract

Cup (180 milliliters) Unsweetened Almond Milk

Cup (110 grams) Pecans, Chopped

Cup (100 grams) Brown Swerve

Tbsp (28 grams) Refined Coconut Oil

Tsp Pure Vanilla Extract

Tsp Xanthan Gum

Tsp Sea Salt

Preheat the oven to 350°F (180°C) and line a 8x8 inch baking pan with parchment paper.

In a medium-sized bowl, add and mix the flour and Swerve together. Then add the melted butter, and vanilla extract, and give everything a quick mix. Finally, add and mix the egg into the ingredients until well combined.

Now press the dough into the lined pan and bake for 10-14 minutes, until the edges are golden brown.

Once the edges are golden brown, let the crust cool and start making the filling.

Combine all of the filling ingredients (except for the pecans) in a small saucepan.

Stir constantly, and bring to a light boil over medium heat.

Simmer for around 3-5 minutes until the mixture thickens and turns caramel in color.

Remove from heat and stir in chopped pecans.

Now pour the filling onto the crust, and spread it evenly with a spatula.

Bake for about 15 minutes - until the filling is bubbly.

Cool completely before cutting into 9 bars.

Just made these and wow are they delicious! I sprinkled a bit of pink salt on the finished product for a little contrast. It's a perfect start to my Thanksgiving holiday. Thanks for this recipe.

keto pie crust (unbaked)

eggs

brown sweetener (or ChocZero Caramel Sugar-Free Syrup)

allulose (or BochaSweet)

butter (melted)

vanilla extract

salt

pecans

Prepare keto pie crust, if needed.

Beat eggs, sweeteners, butter, vanilla and salt until well blended.

Stir in pecans then pour into pie crust.

Bake at 325°F for 35-40 minutes or until toothpick inserted halfway between center and crust comes out clean. The middle of the pie should not be set completely.

Cool slightly, then serve. Leftovers can be stored in the fridge for at least a week.&nbsp;

Sugar Free Keto Pecan Pie

Swerve Brown

Bocha Sweet ((or allulose))

tsp vanilla extract (or maple extract)

tsp salt

Prepare the pie crust according to the directions and bake at 325F for 10 minutes. Remove and let cool while preparing the filling.

In a large saucepan over medium low heat, melt the butter with the two sweeteners, stirring until the sweeteners have dissolved. Bring to a simmer and cook about 3 minutes, until it darkens in color and thickens slightly. Remove from the heat and let cool to room temperature.

Once the syrup is cool, whisk in the vanilla and the salt, then whisk in the eggs until smooth and well combined.

Place the pecans in the cooled crust and pour the filling overtop. Return to the oven and bake 45 to 50 minutes, or until the filling is mostly set but the middle still jiggles slightly when shaken.  Let cool completely before serving. 

Note: If the crust is browning too quickly, cover the pie with aluminum foil, shiny side up, about halfway through the baking time. Let cool completely before serving. 

I have been craving pecan pie since thanksgiving…I had to try this recipe and so glad i did. It was easy to make and the middle was actually gooey…just like what a pecan pie should be.  I only cooked it for 40 min but my oven seems to run hot.  I wish I could post a photo. This is the real deal.  Thank you  so much!!!!!!!!!
