The Best Keto Pizza Crust

almond flour

tsp xanthan gum ((optional))

tsp baking powder

tsp italian spices (see recipe here)

salt

1/16 tsp pepper (add 1/4 tsp if you like more pepper)

egg (room temperature, whisked)

mozzarella

Pizza sauce, shredded mozzarella, pepperoni, bacon, olives, peppers, mushrooms etc. (for topping)

Pre-heat oven to 350*F.

Add all of the dry ingredients to a bowl and whisk them together. (This includes almond flour, xanthan gum, baking powder, italian spices, pepper and salt).

In another microwavable bowl, add your shredded mozzarella and microwave for 30s at a time, stirring in-between until fully melted. (It takes me about 1min total but I have quite a terrible microwave, lol so yours may take less time).

Once the mozzarella is well-melted, add your whisked egg and mix (it's okay if these two don't fully combine).

Add your dry ingredients and mix again until a thick dough starts to form.

Use your hands as the dough comes together to continue mixing the mozzarella with the rest of the ingredients. You'll need to knead the dough for a couple minutes to get it to blend together. If you are still having difficulty blending the mozzarella with the other ingredients, see my tips above to help you out!

Once you can form a pretty even dough ball, transfer it to two large greased pieces of parchment or wax paper.

Roll the dough out to be the thickness of your desired pizza crust (~1/4-1/2 inch thick).

I rolled mine into a rectangular shape by gently pressing in the sides with my fingers to make it all even but you can make a classic round pizza instead! (Note in the picture my dough looks smaller, this is because I used a piece of leftover dough about 2/3rds of the size of the amount this recipe makes so you'll get a larger crust than mine).

Using the parchment paper to lift it, gently transfer the pizza crust onto a baking sheet and place in the pre-heated oven.

Bake for ~14-20min or until your your crust becomes golden brown around the edges. It should be firm enough to easily spread toppings on.

Turn your oven up to 400*F.

Next, add whichever toppings you prefer while the crust is still warm. Then place the pizza back in the oven to bake for another 7-10min or just until the cheese is melted/the toppings are warm.

Fat Head Pizza - The Holy Grail

Mix the shredded/grated cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.

Stir then microwave on HIGH for another 30 seconds.

Add the egg, salt, rosemary and any other flavourings, mix gently.

Place in between 2 pieces of baking parchment/paper and roll into a circular pizza shape (see photos above). Remove the top baking paper/parchment. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.

Make fork holes all over the pizza base to ensure it cooks evenly.

Slide the baking paper/parchment with the pizza base, on a baking tray (cookie tray) or pizza stone, and bake at 220C/425F for 12-15 minutes, or until brown.

To make the base really crispy and sturdy, flip the pizza over (onto baking paper/parchment) once the top has browned.

Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the cheese. Bake again at 220C/425F for 5 minutes.

All the flavors of pizza (but without the carby crust) cook together in the slow cooker for an easy family-friendly meal idea!

Keto Crockpot Pizza Casserole

A delicious keto pizza casserole that will be enjoyed by all. The gluten free crust is made with a simple mix of eggs, cheese, and cream.

Low Carb Pizza Casserole - Gluten Free

oz cream cheese (softened)

eggs

heavy cream

Parmesan cheese (grated)

garlic

oregano

Asiago (or Romano cheese or Parmesan or any combination)

low carb pizza sauce

Pizza toppings (optional)

Preheat oven to 350°Grease 13x9 inch baking pan.

In food processor or with electric mixer, combine cream cheese and eggs until smooth. Add the cream, 1/4 cup Parmesan, garlic and oregano. Blend until ingredients are well combined.

Sprinkle the 1 cup Asiago (Parmesan or Romano cheese) and 1 cup of the mozzarella cheese in the bottom of the greased baking pan. Pour egg mixture over the cheese.

Bake for 30 minutes then remove from oven.

Spread with the pizza sauce. Add pizza toppings over top if desired. Cover with remaining 1 cup mozzarella.

Using oven broiler on high, broil a few inches from the heat elements until top is brown and bubbly.

Let sit for a few minutes before cutting.

Keto Pizza Crust With Yeast 

vital wheat gluten (154)

oat fiber (96 grams)

ground flax meal (70 grams)

tbsp powdered monkfruit/erythritol sweetener (20 grams)

dry yeast (14 grams)

tbsp Italian or pizza seasoning

garlic powder

tsp sugar (necessary for the yeast, will not affect the final nutrition facts of the dough!)

tsp xanthan gum

olive oil

eggs room temperature

parmesan cheese (30 grams)

mozzarella (30 grams)

water

Pre-heat your oven to the lowest setting then shut it off once it comes to temperature.

Meanwhile, in a large bowl combine all of the dry ingredients including; vital wheat gluten, oat fiber, ground flax meal, powdered monkfruit/erythritol sweetener, yeast, italian seasoning, garlic powder, sugar, baking powder and xanthan gum. Do not add the salt just yet (see above in the tips as to why).

Whisk your eggs very well in a separate bowl with the two cheeses and salt.

Add your warm water and oil to the dry ingredients and stir a few times. Then also add the cheese and egg mixture.

Mix well until a dough begins to form. At this point I put my dough in my KitchenAid mixer with the dough hook attachment on the setting 3 or 4 and let it run for ~5-8min.

OR if you do not have a mixer, you will have to knead the dough for ~ 10min or more by hand. You can tell when the dough has been kneaded enough when it has some more elasticity to it and holds it's shape better. It will also be easier to form into a somewhat smooth ball.

Speaking of that, form your dough into a rough ball and place it into a greased bowl, covered with Saran Wrap or a towel. Place this inside your previously warmed oven with the door ajar (or some place warm but not hot) to rise for ~1 hour (OR 30-40min then place in the refrigerator over-night and bake the next day for the best flavour!)

Pre-heat your oven to 425*F prior to baking.

After the 1 hour in a warm place (or 30-40min in a warm place and then in your fridge overnight) your dough should have pretty much doubled in size.

Break it into 2 halves. Save one have for another time (see storage instructions above) place the half you are using between two greased sheets of parchment paper. Roll it out using a rolling pin until it&#039;s slightly bigger than the pan you are using. Pinch the edges over to form a crust.

Then place onto a parchment-lined and olive oil-greased pan or baking sheet (brush olive oil over the parchment paper). **ALSO SEE MY PRO TIP FOR GETTING A CRISPIER PIZZA CRUST ABOVE. I FOLLOWED THIS METHOD INSTEAD**

Top the pizza dough with whichever pizza toppings you prefer (be sure not to over-do high moisture toppings for a crispier crust). I used pesto, brie, cooked rotisserie chicken and some roasted red peppers.

Bake the pizza crust for 10-14min or until the cheese is melted and the crust is browned.

Cool for a couple minutes, then you can top with fresh basil or chili flakes, then slice and serve! Enjoy the BEST Keto Pizza Crust Made With Yeast!

Cauliflower florets

Pepperoni

Low Carb Pasta Sauce (we use Rao’s Homemade Marinara)

Parmesan cheese (powdered)

Italian Seasoning

Steam the cauliflower. Place cut cauliflower in a microwave safe bowl with 1 cup of water. Cover with a damp paper towel and microwave on high for approximately 3 minutes or until the cauliflower is tender. Don’t overcook!

Drain the cauliflower pat dry with a paper towel. Set aside.

Preheat oven to 400 degrees F.

In a large skillet over medium high heat cook the Italian sausage, approximately 15 minutes. When the sausage has finished cooking drain the excess fat. Set aside.

In the same skillet at olive oil and saute mushrooms over medium high heat for 10 minutes to remove the excess water. Set aside when done.

Prepare a 13x9 inch casserole dish by spraying it with non-stick spray then spread ½ cup of pasta sauce on the bottom.

In a large bowl add the cauliflower, cooked Italian sausage, mushrooms, and green peppers. Toss together until well mixed.

Spread ½ of the mixture in the casserole dish. Top with ½ cup of pasta sauce, followed by ½ of the pepperonis (kind of press them down in between the other toppings), and finally 6 ounces of mozzarella cheese.

Next spread the remaining toppings mixture over the cheese followed by the pepperonis (save 10 slices for the top of the casserole), remaining ½ cup of pasta sauce, and 6 ounces of mozzarella cheese.

In a small bowl mix together the Parmesan cheese and Italian seasoning.

Sprinkle the Parmesan mixture over the casserole and top with 10 slices of pepperoni.

Place in oven and bake for 30 minutes, or until the casserole is warmed through and the cheese is fully melted.

Place parchment paper in the bottom of a 9x13 baking sheet, or spray extremely well with vegetable oil or butter. Set the pan aside. 

Preheat oven to 350F.

Place eggs into the bottom of a largeblender container or in a food processor bowl. Add riced cauliflower, garlic, pepper, Italian seasoning, salt, and shredded cheese. Blend or process on low speed until everything is well incorporated and the cauliflower has broken down even further. 

Pour the cauliflower mixture into the prepared pan. Pat the dough into an even layer about 1/2 inch thick.

Bake at 350F for 40 minutes.

Remove from the oven and turn the oven up to 450F whilst you add toppings to the pizza.

Begin with the pizza sauce, followed by the mozzarella and Parmesan.

Add the sausage, red onion and green pepper and return to the very hot oven for 7-10 minutes.

Remove from the oven and allow to cool for5 minutes before taking it out of the tin and serving.

Combine the cream cheese, 1/4 cup parmesan cheese, 1/4 cup mozzarella cheese, eggs, and garlic powder in a mixing bowl. Use a hand mixer to mix together.

Grease a 13 X 9 pan and pour the cream cheese crust into the pan. Bake for 15 minutes on 350 degrees or until golden brown.

Let the crust cool down for 5-10 minutes. Mix the salt and pepper and herbs into the sauce. Spread the sauce on the cooled cream cheese crust.

Spread the toppings you don't want on top of the cheese on the sauce. I normally put the sausage on the sauce and top with the cheese. Then put any remaining toppings to the top of the cheese. I always put the pepperoni on top of the cheese.

Bake for an additional 10 minutes.

Cut into 12 squares for serving. Each serving is 3 pieces.
