Preheat the oven to 425F.

In a medium bowl, whisk together the brown sugar replacement, garlic, 2 tablespoons of the avocado oil, mustard, vinegar, paprika, and chipotle powder until well combined. You will end up with a thick paste.

Heat the remaining 1 tablespoon oil in an ovenproof skillet over medium heat. Pat the tenderloin dry and sprinkle all over with salt and pepper.

Brown the tenderloin on all sides, about 4 minutes. Then spread all over with the garlic brown &quot;sugar&quot; paste.

Place the whole pan in the oven, uncovered, and cook 18 to 25 minutes or until the internal temperature of the pork reaches 140F.

Remove from the oven and let rest 5 minutes before slicing.

Tablespoons extra virgin olive oil

red bell pepper (thinly sliced)

baby Bok choy (chopped)

Tablespoons toasted sesame oil

soy sauce

Tablespoons toasted sesame seeds (optional)

Heat the olive oil in a wok or a large frying pan with high sides over medium-high heat. Add the pork and cook, stirring occasionally, until the pork is nicely browned on all sides, around 3-4 minutes.

Add bell pepper, ginger, cashews and garlic powder. Stir fry the veggies until they become crisp-tender, around 2-3 minutes.

Add the bok choy, sesame oil, and soy sauce. Continue to stir fry until the bok choy wilts and the other ingredients are coated, approximately 1-2 minutes.

Remove from heat and transfer to individual serving plates. Garnish with toasted sesame seeds or green onions if desired, and serve immediately.

Made this and it was so quick, easy, and DELICIOUS! I subbed the bok coy for spinach and it works great. Can’t wait to make this again!!
