Keto Fried Rice with Asian Shredded Beef

konjac rice

sesame oil

red chili

Scallions (thinly sliced)

mushrooms (sliced)

Place the konjac rice in a colander and place in the sink under running hot water for 2 minutes.

After 2 minutes, turn off the water and leave the rice to drain.

Place a wok or large non-stick frying pan over high heat.

Add the sesame oil, garlic, chili and 5 spice and saute for 2 minutes.

Add the scallions and mushrooms and saute for another 3 minutes.

Add Low Carb Asian Shredded Beef and combine with the other ingredients and saute for 3 minutes, until heated through.

Add the drained konjac rice &amp; tamari and stir well.

Push the ingredients towards the edges of the pan, leave a space in the center. Crack the egg into the center of the pan and scrambled slightly, slowly mix the other ingredients into the egg, until the egg is cooked through.

Add the pepper and stir well.

Remove from the heat and serve sprinkled with sesame seeds.

Frozen Cauliflower Rice {Or Fresh!}

Head Cauliflower OR 10-12 oz Frozen Riced Cauliflower (approximately 4 scant cups)

Onion (or 1/8 of a medium onion) (finely chopped)

Garlic (minced)

Sea Salt (to taste)

Prepare cauliflower

Prepare either the fresh or frozen cauliflower as directed below and set aside.

Chop onion

Once your rice is ready to go, set it aside and very finely chop (or process in a food processor) 1/4 of a small onion. Set aside.

Heat oil

Then, heat the oil over medium-high heat in a medium-sized skillet.

Add ingredients

Add the riced cauliflower, chopped onion, garlic, and sea salt.

Stir fry

Stir fry for 5 to 6 minutes for frozen or 3 to 4 minutes for fresh. Or until most of the water is evaporated, the onion is tender, and the rice has an al dente texture. Do not overcook or it will become mushy. Also, be sure not to cover the pan. This will also make the rice mushy. Taste and add more salt if needed.

Store

Store covered in the fridge for up to 3 to 4 days.

Break up cauliflower

Before opening the bag, hit it on the countertop several times - or until the rice is completely broken up and not clumped together. This ensures that it cooks evenly. Important - Do not thaw! Otherwise, it will be a watery mess.

Preparing frozen cauliflower

Trim

Wash and trim the cauliflower of any brown spots.

Then, tear off the leaves and cut it into quarters. Hold each quarter section of the cauliflower vertically and cut off the hard center. The florets will fall right off! If the florets are too big, you can cut them into smaller pieces. See the pictures in the post above if you need a visual aid.

Grate

Use either the grater attachment on your food processor or a cheese grater to rice the cauliflower. I don&#039;t recommend using the S blade on your food processor because the pieces with come out very uneven.

Here are three simple methods for cooking up frozen cauliflower rice into a delicious and easy keto meal.

Frozen Cauliflower Rice One-Pot Meals, Made 3 Ways

This Mexican cauliflower rice is the perfect side dish to pull pork or taco bowls. Very low carb and delicious.

Mexican Cauliflower Rice

Butter

garlic powder

onion flakes

Salt

Tomato Puree

Cilantro (finely chopped)

Place a large frying pan over medium low heat. Add the butter, garlic powder and onion flakes and gently sauté for 3 minutes.

Add the cauliflower rice, salt and pepper and sauté for 3 minutes, until the cauliflower is beginning to soften.

Add the tomato puree and stir well. Continue to cook for another 3-5 minutes until the cauliflower is cooked through.

Take the pan off the heat and stir through the cilantro.

Serve and enjoy.

I just found this and have a huge head of Cauliflower, begging to be cooked. I will use all, but have Jarred Mexican Salsa for the Tomato Puree. Cannot wait to Create this! OLE!

Delicious!  I had a bag of Trader Joe’s frozen cauliflower only. I used a bit less of the other ingredients. But we loved it!!!
I also love that it was so easy and fast to put together. 
It was a great side dish for keto cheese enchiladas!

Oh! I really loved this. I used a pack of frozen riced cauliflower from Costco (you know, the ones with 3-4 packs inside) so probably a little more than the 2 cups in the recipe. Sauteed it for quite a while until it was quite dry. I do not have tomato puree, so I used a tablespoon or maybe 2 (anyhow, a generous squirt) or tomato paste from a tube, and a splash of beef broth instead. It was slightly on the salty side, but that is most likely from the beef broth and tomato paste I used. But, actually I love extra salty food so it was great for me. I might cut down the salt next time though. Maybe.  The cilantro makes it taste so light and fresh. I had with cajun spiced drumsticks and the non keto people also had corn and rice.

An easy 4-ingredient Coconut Cauliflower rice for a low-carb Asian style side dish.

Coconut Cauliflower Rice

Cauliflower Head (riced, equivalent to 4 cups raw cauliflower rice)

Coconut Oil (or ghee or butter)

Canned Coconut Cream (or 1/3 cup canned coconut milk)

Lime Juice

Garlic Powder

Coconut Oil

Optional - For ultra-creamy rice, pop the can of coconut cream in the fridge the day before to make sure the cream lays on the top of the can when you open it

(Skip if you are using frozen cauliflower rice) Trim the cauliflower head, remove the green leaves and the cauliflower feet. Discard them.

Cut the cauliflower into small florets.

Place 2 cups at a time of cauliflower florets in the food processor with the S blade attachment and process on high speed for 30 seconds until it resembles rice. Set aside in a bowl. If you don&#39;t have a food processor, use a hand grater box.

Repeat the above process until all the cauliflower florets are turned into the rice. Measure 4 cups of cauliflower rice.

Preparing the cauliflower rice

Heat and melt 2 tablespoons of coconut oil butter in a non-stick pan and stir in the 4 cups riced cauliflower.

Stir fry on medium high heat, in coconut oil for 4-5 minutes, until slightly golden grilled, still tender but cooked through.

If you refrigerated the can of coconut cream, open without shaking and scoop out the thick cream that lay on top of the can, measure 1/2 cup. If you didn&#39;t refrigerate the can, shake before opening and measure 1/2 cup. Stir in the pan.  Keep cooking until the rice is creamy and fragrant, about 9 minutes in total.

Season before serving with salt,  garlic powder, cilantro, lime zest, or juice if desired.

You can stir in an extra tablespoon of coconut oil before serving for an extra creamy texture.
