Keto No-Bake Cookies are seriously SO GOOD! With only 6 ingredients, they are made within minutes and will satisfy your sweet tooth. These keto peanut butter no-bake cookies are now my new guilt-free treat, and I hope they become yours too! 

Easy Keto No Bake Cookies

½ cup natural unsweetened peanut butter

tbsp butter

tbsp powdered Swerve

tbsp unsweetened cocoa powder

vanilla

unsweetened coconut flakes

Melt the butter, and rather the rest of the ingredients.

In a medium-sized bowl, add the peanut butter, melted butter, vanilla, cocoa powder, and powdered swerve. Stir together. 

Add the shredded coconut and gently fold in. 

Using a 1” cookie scoop, scoop out 15 cookies. 

Roll each cookie into a ball. Use the palm of your hand and gently flatten each cookie. 

Place the tray in the freezer for 20 minutes. 

Delicious right from the freezer!  I used almond butter (peanut butter is sometimes too overwhelming for me).  I also used 4 T. sweetener instead of 3 T.  I might even go up to 5 T. next time.  I am interested in trying cashew butter.  I am really enjoying the recipes on this website:  this one, the zucchini bread with almond flour.  I'm very impressed.

This delicious keto birthday cake is just like the traditional vanilla sheet cake you know and love without all the added carbs and sugar.

almond flour

coconut flour

baking powder

salt

keto-friendly granular golden or brown sweetener,

butter, unsalted

eggs, room temperature

heavy cream

sour cream

vanilla extract

almond extract

butter, softened

powdered erythritol sweetener,

heavy whipping cream

These fudgy Keto No Bake Cookies will remind you of classic no bake chocolate cookies without all the carbs! At just one net carb per cookie these sweet treats won’t break your keto diet!

Keto No Bake Cookies

coconut oil

creamy low carb peanut butter or almond butter

cocoa powder

sugar

vanilla extract (optional)

UNSWEETENED coconut flakes

hemp seeds

sea salt

In a medium size sauce pan combine the coconut oil and the peanut butter over medium low heat.

As the mixture begins to melt stir until well combined.

Stir in the cocoa powder, vanilla (if using) and the sweetener.

When the mixture has completely melted (your fudge mixture should be smooth with no visible granulars) remove from heat and stir in the coconut flakes and the hemp seeds.

Set aside and allow mixture to cool slightly.

Carefully spoon into silicone mini muffin tins until 3/4 full.

Sprinkle with sea salt if desired.

Freeze for 15 minutes until set. Remove from tins and store in an air tight container in the freezer.
