This Korean Tofu Soup comes together in just 30 minutes for a delicious cozy meal!

Korean Tofu Soup

olive oil

onion,

garlic cloves, chopped

cube ginger, chopped

kimchi [make sure your kimchi is vegan!]

tsp red chilli flakes

tbsp sesame oil

tamari

kimchi juice

vegetable broth

pack soft tofu, drained and cut into large cubes

green onions, sliced

Heat the olive oil in a pot on medium-high heat then add the onion, garlic and ginger and let cook for 2 minutes. 

Add in the kimchi, red chilli flakes, sesame oil, tamari and kimchi juice and mix all together letting cook on medium heat for 1-2 minutes. 

Add the broth, bring to a boil, then cover and let simmr on low for 10-15 minutes. 

Remove the lid and add in the tofu and sliced green onions to serve.

I really like this recipe, the only problem I have is that I live alone and it’s a bit much for me to finish, even in a couple of days. How  would you go about saving this for later? Can you freeze it? Thanks!

This recipe is amazing! The best part is it took no time at all to make. I'm going to double the amount of tofu next time so that the left overs will absorb all the flavours. Normally I dispose of the kimchi juice which is such a shame, so I was thrilled to come across of the idea of making a kimchi  soup!

The Korean Tofu Soup is packed full of flavour with Kimchi, garlic spices and silky soft tofu. It comes together in just 30 minutes for a delicious meal that is vegan and gluten-free!

Kimchi Soup

kimchi (, at least 2 to 3 weeks old, cut into bite size pieces if not already)

Tbsp water (, drained from canned tuna)

water

185 g canned tuna ((6.5 ounces), chunk style)

Korean soup soy sauce (or regular kikkoman soy sauce)

Korean fish sauce

Tbsp raw sugar

Korean chili powder

Tbsp kimchi juice (, this liquid is from the bottom of the kimchi container)

Pre heat a medium pot over medium heat (about 20 seconds). Add the kimchi and tuna drained water. Stir them well until the kimchi is partly cooked (about 2 mins).

Add the water and the sauce. Cover the pot and boil over medium high heat. When the water is rolling boil, add the tuna without stirring it too much so as to not to break up the tuna. (It presents better when the tuna isn’t flaked off too much when you serve.)

Reduce the heat to medium low, cover the pot and boil for a further 15-20 minutes.

Garnish with green onions and season with salt, if required. Serve with a bowl of rice, kimchi and other Korean side dishes.

Vegan Kimchi Soup

Heat the oil in

Heat the oil in a large soup pot over medium heat. Add the onions and sautée for about 5 minutes.

Add the garlic, ginger

Add the garlic, ginger and chilli flakes and sautée for another minute.

Add the kimchi, the

Add the kimchi, the soy sauce, the sugar, and shiitake mushrooms, the enoki mushrooms, the tofu and pak choy and cover with the water.

Bring to a boil,

Bring to a boil, then reduce the heat and simmer, covered, for about 30 minutes.

Remove from heat and

Divide the noodles into

Divide the noodles into two deep bowls. Top up with the kimchi soup. Garnish with spring onion and cilantro. Serve hot and enjoy!

How to make Vegan Kimchi Soup

This 15-minute hot and spicy kimchi tofu soup makes a perfect meal for one person. With this classic kimchi tofu soup recipe plus a hot-stone bowl, you can always enjoy a Korean restaurant experience at home.

Kimchi Tofu Soup (Meal-for-one Recipe)

g kimchi

200 g soft tofu

mushroom

½ tbsp sesame oil

chicken stock ((Or vegetable stock,

cilantros ((Optional))

Use a pair of scissors (or a knife) to cut 150g kimchi into bite-size pieces. Set aside.

Cut 200g soft tofu into 2 inch cubes. Cut a small wedge of onion. Chop off the seafood mushrooms&#39; roots and discard. Peel and slice a clove of garlic. Chop some green onions, fresh peppers, and cilantros, set aside.

Preparation

In a small stone bowl (or saucepan), heat sesame oil over medium high heat for 1 minute.

Add onion and garlic, stir with chopsticks for about 1 minute until fragrant. Add kimchi, stir for 1 minute until hot.

Reduce the heat to medium low, add soybean paste, stir until well mixed. Add tofu and mushrooms, pour in chicken stock or water to immerse the tofu.

Sprinkle Korean chili powder over the soup. Gently stir until the color of the soup looks even. Turn heat to medium high to bring the soup to a boil.

Turn heat to medium high to bring the soup to a boil. Then reduce the heat to medium low and simmer the stew for 5 minutes. Add an egg to the stew, simmer for about 3 minutes until the egg is soft boiled (runny yolk, set white).

Garnish the kimchi tofu stew with chopped green onions, cilantros, and fresh peppers.

Serve hot with steamed rice.
