Combine the soy sauce, 2 tablespoons water, brown sugar, sesame oil and red pepper flakes in a small bowl.

Heat a large deep nonstick skillet over high heat, spray with oil and add the ground beef. Cook, breaking the meat up with a wooden spoon until cooked through, about 5 minutes.

Add the onion, garlic and ginger and cook 1 minute.

Pour the sauce over the beef, cover and simmer on low heat 10 minutes.

To assemble the bowls, place 3/4 cup rice in each bowl, top with scant 2/3 cup beef, cucumbers, Gochujong, sesame seeds and scallions.

These Korean Beef Bowls are easy to make with ground beef in a flavorful sauce to serve with rice or in a lettuce wrap!

Korean Beef Bowls

Salt/pepper

beef broth

cornstarch

honey

rice vinegar

hot sauce

Combine the beef broth with the cornstarch and mix until well combined. Make sure the broth is not warm/hot so that you don’t activate the cornstarch. Mix in the remaining sauce ingredients and store in a cool place until ready to use.

Season the ground beef with salt/pepper. Heat a large skillet over medium-high heat and add the ground beef. Cook and crumble for 3 minutes, then add the onions and garlic. Sauté until the beef is cooked through, 5-6 minutes. Drain any grease.

Add the sauce and bring it to a boil. Let it continue to boil, thicken, and reduce for 3 minutes, or until desired consistency is obtained. Stir periodically as it cooks. There will be a lot of sauce at first, but it will continue to reduce and thicken.

Remove from heat. Garnish with green onions, sesame seeds, and red pepper flakes. Serve over rice, cauliflower rice, or in lettuce wraps! (See notes for my method for making perfectly cooked rice.)

Tbsp sesame oil ((15 g))

Tbsp fish sauce

Tbsp brown sugar ((15 g))

Tbsp gochujang

green onions, chopped ((60 g))

cooked brown or white rice ((75 g))

½ oz prepared Korean Inspired Beef (recipe above) ((100 g))

persian cucumber, thinly sliced ((50 g))

¼ avocado, sliced ((25 g))

Tbsp green onions, chopped

Tbsp cilantro, chopped

toppings: sriracha, jalapeños, sesame seeds

Cook the ground beef.

Heat a large skillet over high heat with a spritz of oil. Add beef to the pan, breaking it up a bit, and then let it sit without stirring for a couple of minutes for it brown on the bottom. Season it with salt and pepper.

Add bell pepper and brown the beef.

Add chopped bell pepper to the pan, and break up the meat further, letting the meat and peppers cook for about 3-4 minutes while you make your sauce.

Make the sauce.

In a small bowl or jar, whisk or shake the ginger, garlic, soy sauce, rice vinegar, sesame oil, fish sauce, brown sugar, and gochujang sauce all together.

Finish making the Korean beef.

Pour the sauce over the cooked meat and bell peppers, combining well. Stir in your chopped green onions. Cook for one more minute before turning off the heat.

Assemble the bowl.

Prepare your bowl by layering greens in the bottom of a large bowl. Add your cooked rice and top with the cooked Korean beef. Add your sliced cucumbers, carrots, and avocado. Fry an egg, leaving the yolk nice and runny (if you prefer), and add it on top of your beef.

Garnish and enjoy!

Finish with a sprinkle of green onions, cilantro, and optional sriracha, jalapeños, and sesame seeds. Enjoy!

We made this tonight for the first time. SO good! 

I like mine a little spicier than my family so added some extra kick to my bowl. We customized it... I had cauli rice and they had jasmine rice. Then we added steamed broccoli, shaved carrots and cilantro.
