Garlic Butter Lamb Chops

lamb loin chops

Remove loin chops from the fridge 20-30 minutes before cooking.

Place them on a paper towel-lined cutting board and pat them dry with paper towels. Season well with salt and pepper.

Heat a dry 12-inch cast iron skillet* over a medium high heat. In the skillet, place the chops narrow fat side down. You probably will need to use tongs to keep them balanced and to press the chops down so that the fat renders and turns crisp and brown. It’s about 5 minutes.

Once the fat has melted into the pan, lay the chops flat on one of their sides. Cook for another 3 minutes, until browned, then turn and cook on the other side.

Turn the heat to medium-low. Using a spoon, pour off most of the lamb fat and then add 2 tablespoons off butter (or ghee), garlic and thyme.

Stir well until the butter is foaming, and spoon the butter over the lamb for a minute or so. Place lamp chops in a serving dish and pour butter sauce on top. Enjoy!

Lamb Chops with Creamy Mustard Sauce

Combine all the ingredients for the marinade in a small mason jar. Cover it with a lid and shake until all the ingredients are combine.

Place lamb chops on a large plate/casserole and pour the marinade over the lamb chops. The marinade sauce should cover all sides of the lamb chops.

Let the lamb chops marinade for 30 minutes at room temperature.

In a large skillet, heat 1 tablespoon of olive oil on medium heat and add lamb chops.

Cook on medium-high heat about 4 minutes on each side and until it gets the internal temperature of 160F.

Remove the lamb chops from the skillet and set aside.

Add wine to the same skillet and bring to boil.

Add mustard, fresh thyme, and minced garlic and bring to boil until the sauce gets thick. It’s about 2-3 minutes.

Add back to the skillet the pan-seared lamb chops.

Simmer on low-medium heat for a minute or two.

Season the sauce with salt, cracked black pepper and fresh thyme.

Sweet potato & spinach bake

sweet potatoes, peeled and thinly sliced (about 3mm thick)

Heat oven to 200C/180C fan/gas 6. Put the cream, garlic and herb sprigs into a small saucepan and slowly bring to just below boiling. Turn off the heat, season and leave to infuse.

Put the spinach into a colander, pour over a kettle of boiling water and leave to drain for a few mins. Then squeeze out as much water as possible. Season with salt, pepper and freshly grated nutmeg.

Grease an ovenproof dish generously with butter and spread half the sweet potato slices across the bottom. Top with a layer of spinach, then the remaining potato. Pour over the cream mixture, through a sieve to remove the garlic and herbs, then sprinkle with cheese. Bake for 45-55 mins until golden and tender.

Meanwhile, if you’re serving the chops, heat a griddle or frying pan and finely chop the leaves from the herb sprig. Rub over the chops with the oil and some seasoning, then griddle or fry for 3-4 mins on each side or until cooked to your liking. Leave bake, and chops if serving, to rest for 5 mins, then serve with a big green salad.

Whisk first 6 ingredients in small bowl. Transfer to large resealable plastic bag. Add lamb; seal bag and turn to coat. Marinate in refrigerator at least 4 hours or overnight.

Prepare barbecue (medium-high heat). Drain lamb, leaving some marinade clinging. Grill lamb until slightly charred and cooked to desired doneness, about 2 1/2 minutes per side for medium-rare. Transfer to platter.

Stir honey and 1 tablespoon water in small skillet over medium heat until warm. Brush over lamb chops.

A double-sided chop deserves pride of place at the dinner table, so serve this tender and juicy lamb recipe with a classic Cumberland sauce.
