Cheesy Quesadillas 

Stk Zwiebel, rot

Stk Paprika, gelb

Stk Tomaten

350 g Cheddar, am Stück

Stk Tortillawraps, Weizen

EL Olivenöl

0.5 TL Salz

Schritt 1

Zwiebel(n) sehr fein würfeln. Paprika waschen, entkernen und fein würfeln. Tomate(n) halbieren, entkernen und ebenfalls klein würfeln. Käse grob reiben. Alle Zutaten in einer Schüssel vermengen, salzen.

Schritt 2

Eine Pfanne ohne Öl auf mittlerer Stufe erhitzen. Ein Tortilla hineinlegen, mit der Käse-Gemüsemischung belegen, mit dem 2. Tortilla bedecken. Nach ein paar Minuten und immer wieder Drehen des Tortillas, vorsichtig mit einer Spachtel umdrehen.

Schritt 3

Sobald beide Seiten knusprig braun sind und der Käse geschmolzen ist auf ein Brett geben. 2 Minuten rasten lassen und mit einem Messer vierteln. Etwas Olivenöl drüberträufeln.

Easy Creamy White Chicken Enchiladas

flour tortillas ((soft taco size))

chicken ((I use Rotisserie))

monterey jack cheese ((or pepper jack))

cream cheese

garlic powder

tbsp butter

tbsp flour

tbsp taco seasoning ((NOT the whole packet))

(14.5 ounces) can of chicken broth ((2 cups))

sour cream

green chiles

Preheat oven to 350 degrees and grease a 9x13 baking dish.

In a medium size bowl, mix the chicken with the cream cheese, garlic powder and HALF of the shredded cheese (about 1 cup).

Evenly stuff the mixture into your flour tortillas and place them into your prepared pan.

In a sauce pan over medium heat, melt the butter and then stir in the flour and taco seasoning. Add the chicken broth and whisk until smooth; allow the mixture to heat up for a few minutes until warm. Add 1/2 a cup of the shredded cheese and whisk until well incorporated.

Stir in the sour cream and can of chiles; whisk for just a minute or until the sour cream is completely dissolved, but do not allow it to boil.

Pour the sauce over the enchiladas and top with remaining cheese.

Bake for 22-25 minutes and then switch the broiler on for a few minutes to brown the cheese.

The adults in the family like to serve these with hot sauce! Refried beans and spanish rice are also delicious on the side.

Easy Orange Chicken

(24 ounces) bag frozen popcorn chicken

(17 ounces) jar orange marmalade

bbq sauce ((any brand will work))

soy sauce

cooked white or brown rice

Cook the popcorn chicken and rice according the package instructions.

While the popcorn chicken is cooking, combine the orange marmalade, bbq sauce, and soy sauce in a medium size sauce pan. Warm on medium low for about 5 minutes, stirring frequently, until the marmalade has melted and everything is combined.

In a large bowl, combine the cooked popcorn chicken with the hot orange sauce. Toss the chicken gently until it is completely coated with the sauce.

Serve over a bed of rice and enjoy!
