A decadent chocolate lava cupcake with gooey chocolate center that you can't miss! It tastes indulgent but is actually healthy due to its higher protein and fiber content. It's also gluten free, vegan and very quick & easy to make.

Healthy Chocolate Lava Cake

oat flour (gluten free)

lupin flour

sugar free sweetener

tbsp cocoa powder

tsp baking powder

tsp baking soda

salt

ripe banana (1 small banana) -

milk

lemon juice

vanilla extract

chocolate

Pop all ingredients into a blender and blend until mixture is smooth.

Pour mixture into cupcake mold. The batter should make about 6 cupcakes

Poke a little block of dark chocolate or sugar free chocolate into the center of each cupcake. My suggested serving size is about 10g (0.35 oz) of chocolate per cupcake, but I used more because I like it better with more chocolate!

Bake for 15-20 minutes, then remove from the oven and allow to rest for a couple of minutes before serving.

Decadently rich, this gooey Gluten Free Chocolate Lava Cake has a soft chocolate shell and a gooey molten center. Perfect with a melty scoop of ice cream!

Gluten Free Chocolate Lava Cake

chocolate chips

(1/2 cup) salted butter

pink salt

coconut sugar

eggs

almond flour

butter

cocoa powder

vanilla ice cream

raspberries

Melt the butter and chocolate chips in a microwave, stirring every 30 seconds until smooth.

Whisk in the salt, vanilla, and coconut sugar until smooth.

Add the eggs and egg yolks and whisk until combined.

Finally, add the almond flour and whisk until combined.

Grease the ramekins with butter and then dust liberally them with cocoa powder.The more you dust, the better chances your cakes will turn out and not stick to the ramekins.

Divide the cake batter between the four ramekins and place the ramekins on a small sheet pan.

Bake for 11 minutes until the top is set but the cake is still jiggly when you shake it.

Remove from the oven and allow the cakes to sit for 30 seconds before you turn them over onto a plate. The longer you sit in the ramekin, the more they&#8217;ll cook. So, if you want that gooey center, try to work quickly.

Top with vanilla ice cream and serve with fresh berries.

One of my favorite recipes. I made this for my girlfriend’s birthday dinner and it was a hit so I made it for my own  birthday.  It’s so tasty warm and gooey but I love it the next day cold.
