Beef Brisket Enchiladas are the ultimate use for leftover brisket for any Mexican food lover! These beef enchiladas are made with smoked brisket, but you can sub almost any cut of beef for these indulgent enchiladas.&nbsp;

Beef Enchiladas made with Smoked Brisket

Preheat oven to 375 degrees F.&nbsp;

Heat up red chile sauce in a large skillet to get warm.

To soften the corn tortillas – take the tortillas, one by one, and dip them into the warm red chile sauce to coat them (see photo above in the post), then place them on a plate. This will help soften the tortillas so they don’t break up when you roll them. It also helps infuse the tortillas with sauce.

Add your filling. Add approximately 2 tablespoons of the shredded or chopped beef, 1 tablespoon cooked spinach, and a scant teaspoon of crumbled goat cheese (or cheddar). Gently roll the tortillas and layer the rolls on a 12x8" baking dish, seam side down, in one layer.&nbsp;

Repeat with the remaining tortillas until the dish is packed tight.&nbsp;

Top the dish with the remaining chile sauce, 1 cup of remaining shredded beef, and the shredded cheese.&nbsp;

Bake 15-20 minutes, until cheese is melted and bubbly.&nbsp;

Garnish with cilantro and enjoy!

Smoked Brisket Chili Recipe (recipe and video)

Sauté

In a large pot over medium heat, sauté bacon until crispy. Remove with a slotted spoon and reserve for later. If there is excess bacon grease remove it, otherwise cook the onions in it.

Soften

Add onions and cook until soft (about 5 minutes). Add bell pepper and garlic; cook 1 additional minute to soften.

Combine

Add the leftover cubed brisket and all dry seasonings. Let cook 1 minute stirring often. Get those seasonings integrated!

Add Liquids

Add beer and allow it to deglaze the pan and cook off the alcohol (about 1-2 minutes). Then add chipotle, coffee, tomatoes, beans, corn, green chili, and the reserved bacon.

Simmer

Bring to a low simmer, cover, and cook for a minimum of 30 minutes. The longer it cooks the more integrated and concentrated the flavors get. My recommendation is at least an hour (or better yet two) for a nice rich chili. If the stew starts to get too thick, you can add water ½ cup at a time to thin it out.

Smoked Brisket Chili

Beef Empanadas are an incredible use for leftover smoked brisket and great appetizer idea for the holidays. Combine brisket, sautéed vegetables, herbs and spices rolled in puffed pastry dough and served with a creamy crème fraîche BBQ dip.

Beef Empanadas Recipe using Smoked Brisket

Preheat Oven

In a medium sized skillet add 1 tablespoon extra virgin olive oil, and add onions and peppers and cook about 5 minutes, until starting to soften. Add the brisket, garlic, and jalapeño, and 1 tablespoon BBQ sauce, and cook an additional 5 minutes.

Process

Place the mixture in the food processor, add the cayenne powder and parsley, and pulse a few times (just enough to mix everything together, but not so much that your filling looks like a paste). Taste and adjust seasonings. If it’s too dry, add an additional tablespoon of BBQ sauce and pulse again.

Layout Pastry

Roll out dough into 12 squares approximately 3” by 3”. If you are using store bought puff pastry I like to roll it out a little thinner than the way it comes from the box.

Fill

Brush the edges of small squares with egg wash, and place 1-1 ½ tablespoons of the filling in the center. Fold one edge to meet the opposite edge and seal edges together using the tines of a fork.

Place on a baking sheet lined with parchment paper. Place in oven and bake for 20 minutes, or until the dough is golden. Serve with your favorite dipping sauce.

For the Empanadas

Mix crème fraîche, BBQ sauce, hot sauce, and salt, together in a small bowl. Transfer to serving bowl for dipping.
