How To Cook (And Carve!) A Turkey Breast

turkey breast

butter, softened

olive oil

salt

black pepper

garlic powder

paprika

white wine

chicken broth

carrots

Fresh rosemary, thyme or sage

Place the carrots and onions (and fresh herbs if using) in the bottom of a baking dish for the turkey breast to sit on.

Rub the olive oil and butter all over the skin of the turkey breast, then season with the salt, pepper, garlic powder and paprika.

Pour the wine and chicken broth into the bottom of the baking dish, then place the seasoned turkey breast on top of the vegetable rack.

Roast the turkey in the oven for approximately 20 minutes per pound, depending on the size of your turkey breast. A 7 1/2 pound turkey breast will take between 2 1/2 to 3 hours. Check the temperature of the breast to make sure it&#8217;s at 165 degrees.

Remove the turkey from the oven and let rest for 10 minutes, covered in foil.

Carve both sides of the turkey breast of the bone, then slice into pieces and serve.

Heat up the oil in a pan.

Peel and chop the onion, and fry gently over a medium heat until soften, then add the ginger, chopped garlic, turmeric, garam masala, and cumin, and stir well. Season with salt and pepper.

Cook for a further 2-3 minutes, so that the spices can release their fragrance, then add the plum tomatoes and cook for about 5 minutes, or until the tomatoes become mushy.

Add the stock, and let to simmer gently until the liquid is reduced and the sauce thickens slightly.

Add then turkey, give it a stir, then add the yogurt and chopped coriander.

Take off the heat, and serve hot with rice or flat bread.

milliliters double cream

chopped coriander, toasted flaked almonds, steamed rice and garlic naan breads, to serve

<p>Heat the oil in a <a href="https://www.bbcgoodfood.com/review/test-best-casserole-dishes">casserole dish</a> or shallow pan over a medium heat, and fry the onions for 10-12 mins until golden. Stir in the garlic, ginger, chilli and all the spices, and cook for 2 mins more until the mixture resembles a paste. Stir in the tomato purée, passata or chopped tomatoes and mango chutney, and bring to a simmer. Cook for a further 10 mins.</p>

<p>Stir in most of the cream and the yogurt, if using, and return the mixture to a simmer. Add the turkey and continue to simmer until the turkey is piping hot. Remove from the heat, drizzle over the remaining cream and stir through briefly. Scatter over some coriander and flaked almonds, and serve with the rice and naan breads on the side.</p>

Leftover Turkey Shepherd's Pie

turkey

frozen peas and carrots

jarred gravy (or leftover gravy,

potatoes (or you can buy pre-made mashed potatoes at the grocery store)

Add the butter to a large skillet over medium heat.

Add the onion and cook for 5 minutes until softened.

Next add the peas and carrots, stirring in with the onions.

Add the salt, pepper and flour. Stir and cook for 2 minutes then whisk in the chicken broth.

Once the mixture comes to a boil pour in the milk and gravy. Stir and cook for 5 minutes until the sauce has thickened.

Taste for seasonings then add the cooked turkey to the skillet and stir to combine.

Spoon the turkey mixture into a 2 quart baking dish then top with the mashed potatoes.

Bake, uncovered for 20-25 minutes. Check to make sure the filling is warmed through and serve.

I just got to the end and noticed there's no preheat temp for baking it... I hope 375 is good cause I'm not a cook, as you can see... ????

Loved this recipe! We used sweet potatoes for the top because that's what we had leftover. It was a hit, everyone loved it!

This recipe is delicious but when I made it it was very soupy, despite following the directions to the letter. I had to drop spoonfuls of mashed potatoes on top, like little islands, and there was no possible way of smoothing them across the top. Next time I’ll try one cup of stock instead of two.

This was a wonderful recipe! I eat gluten-free and lactose-free, so i added rice flour and olive oil instead of butter and oat creme, instead of milk. 

Instead of frozen peas and carrots, i cut up two carrots into very small pieces. And then added fresh green beans.

Came out delicious!!! Unfortunately, none left over to freeze as we gobbled it all up!

Leftover Turkey Fried Rice

onions, finely chopped (approximately half an onion)

jalapeño pepper, sliced (optional

white rice, cooked

tablespoon soy sauce

sesame oil

teaspoon vegetable stock powder

teaspoon white pepper

teaspoon ground black pepper

carrots and peas vegetable mix, frozen

tablespoon green onions, finely chopped

white sesame seeds (for garnish)

Heat oil in a large wok or skillet over medium high heat for 2 minutes until sizzling and hot. Add onions and garlic and sauté for 2 minutes until fragrant. Stir in jalapeño (if using).

Add shredded or cubed turkey and stir to combine, about 1 minute. Move the turkey mixture to one side of the skillet and add eggs to the empty space in the skillet. Stir the eggs until scrambled and cooked through, yet still tender, about 1 minute. (The eggs should be springy and bright in colour, and not too dry at this stage). Stir to combine all ingredients together.

Add cooked rice and all seasoning including soy sauce, sesame oil, vegetable stock powder, white pepper, salt and black pepper. Stir well to combine, about 2 minutes. If the rice is not soft enough, add up to 1/4 cup of water to soften it.

Add carrots and peas, and stir fry for 2 minutes while evenly mixing and distributing the ingredients. Then, stir in green onions.

Serve hot on a plate, and sprinkle sesame seeds on top.

Made this recipe with Holiday leftovers. Loved it so much, I made it again 2 days later!!

That is such a great idea! We usually have tons of turkey leftover since there is only two of us. Great recipe, pinned and bookmarked to use for the days after thanksgiving. My husband loves jalapeños, he adds them on everything, he is going to  love your recipe!

I made this recipe twice, and I doubled the recipe both times. I prepped the ingredients while the rice cooked in the rice cooker. The turkey, vegetables, eggs, rice, and seasoning proportions are perfect, with the exception of the pepper. If you love pepper, then perhaps the combination of a full teaspoon of white pepper and a full teaspoon of finely ground black pepper is appropriate for a single batch, but when doubling the recipe, you would have four teaspoons of pepper, which is a sizeable amount. I cut the pepper in half for my first try, and then I cut the pepper in half again for my second try (i.e., I used 1/4 teaspoon of white pepper and 1/4 teaspoon of black pepper in my second batch). My 93-year-old mother said that she could still taste the pepper in the second batch. I think the recipe is delicious with 1/2 teaspoon of white pepper and 1/2 teaspoon of ground black pepper, but my lips felt hot for several minutes after eating, and I did not include a jalapeño pepper... just as well. I definitely will use this recipe again. The leftover turkey fried rice was yummy the next day in a pork and tofu soup. The pairing was delicious and a great way to use leftover fried rice. Preheat oven to 425 F. Add fries to a parchment-lined baking sheet in one even layer. Bake for 10 minutes each side.

When fries are mostly cooked through, top with leftover turkey, veggies, cheese curds and gravy. Bake another 5-10 minutes until cheese is melted.

Remove from oven, top with cranberry sauce and garnish with fresh parsley if desired. Serve and enjoy!

This recipe does it's best to disguise turkey (especially leftover, frozen turkey) as a 'not-dry' meat.  But alas, there is not much you can do to make turkey taste moist and flavorful..  However, the recipe makes a real effort, is good and sort of easy.  Would recommend making the sauce in a VERY large pan because when all is added together, a 'large' skillet is no where near large enough.

This recipe was good, but dry...I would use half the amount of noodles or double the veloute.  Also you need to remove the mushrooms once they are sauteed.

I did super-dice up the mushrooms so they would blend in with the turkey (with a pampered chef food chopper). Great way to hide them from myself and my kids, who don’t totally love mushrooms. I did not have white wine so I used chicken broth there. The rest I followed. Kids liked it, husband and I loved it. For sure my top recipe for this dish now.

This was fantastic. I didn't have left over turkey so I baked turkey cutlets for 20 minutes and shredded them then followed and doubled the recipe. It was so good and turkey was moist and tender. My daughter said it's the best thing she ever ate and my husband (pickiest eater in the house) had two servings. Thank you!

So I used beef instead of turkey, no pasta or cheese....It was OK at best.  I"m curious to know who actually followed the recipe?  I stunned at the comments of people who butchered/alternated  the recipe and have the nerve to give it less than 5 stars???  NO ONE CARES.....FOLLOW THE RECIPE.

Very nice.  Balanced recipe.  I used egg noodles and probably would add a bit of onion another time, but this is better crafted than the simplicity suggests.

My husband and I really enjoyed this recipe.  I used dry sherry for the white wine and about 1-1/2 cups of white cheddar (50% more because I had it on hand), and the mushrooms and sauce were delicious.  I substituted Mrs. Miller's medium egg noodles for the spaghetti, but should  have reduced the amount used to 12 oz. instead or 16.  If I were making this for 8 servings, I would increase sauce ingredients by to 25% to 50%.  This recipe requires a bit of prep work, but it makes a lot and is a keeper.

Delicious. I used fresh linguine, turkey stock and Swiss cheese. I was surprised it didn't include onions, so added minced dry ones. I added more wine, cream and broth to make sure it wouldn't be dry.

Tried this because I was tired of my old turkey tetrazzini recipe and I had the ingredients for this on hand. I used more garlic and added some green seasoning because I'm from the Caribbean and the ancestors expect.  Mixing it in the pan made it easy to get the sauce soaked in to the turkey and noodles which was a problem with my old recipe. I only baked it for 15 minutes because I worried about it drying out. It was delicious and we all enjoyed it. It is quite a big recipe so you might want to half it if your family doesn't like leftovers.

Excellent recipe for this classic dish which i used to prepare with the 1970’s typical Campbell’s Cream of Mushroom. I need to adapt for my daughter’s celiac condition and this is very easy to make gluten free without changing the flavor using good GF pasta, GF flour and GF panko. Thanks!

We loved this!  Used sherry, bow tie noodles and added our leftover dressing.  We will make this again.

Used 3-4 cups broth per other suggestions, sour cream instead of heavy &, from Joy of Cooking, sliced almonds instead of Panko.  Came out great.  Oh, and also 2 9oz packages fresh linguine instead of dried spaghetti.  Made a lot more than just one pan, basically ~1-1/2 pans.
I forgot to add the peas but was worried they would way over cook anyway

Spent a lot of time & money on something that tastes much better in the boxed frozen aisle. 
Flavor was ok however; It came out Dry & we were Totally disappointed

Creamy Turkey Dumpling Soup is the perfect way to use leftovers from Thanksgiving. It&#x27;s hearty, full of vegetables, and easy to make. And the best part is the light and fluffy dumplings.

Creamy Turkey Dumpling Soup

carrots,

celery ribs, diced

potatoes,

(35 grams) all purpose flour

(2.3 liters) chicken broth/stock

(235 milliliters) milk

(400 grams) chopped cooked turkey meat

poultry seasoning

(300 grams) all purpose flour

baking powder

¾ cup (180 milliliters) milk

In a large stockpot melt the butter over medium heat. Add carrots, celery, potatoes, and onion. Cook until onion is softened. Stir in garlic and cook for 30 seconds to 1 minute.

Stir in flour and cook for 1 minute. Stir in broth, turkey, milk, and poultry seasoning. Taste and add salt and pepper to taste. Bring soup to a simmer.

SOUP:

In a medium bowl combine the flour, baking powder, poultry seasoning, salt, and pepper. Stir in the milk and egg just until combined and there isn&#x27;t any dry flour.

Drop batter by 2 tablespoonfuls on top of the soup. Cover with a tight fitting lid and simmer for 15 minutes. Don&#x27;t peek.
