This lemon chicken recipe will bring a zing to meal time!

Lemon and Oregano Grilled Chicken

1 (3 1/2 to 4 pounds) whole chicken or chicken pieces

extra virgin olive oil

balsamic vinegar

lemon

fresh oregano, chopped

fresh thyme, chopped

garlic,

red pepper flakes

kosher salt and pepper

fresh basil for, serving

1. If using a whole chicken, remove the chicken giblets. Pat the outside dry. Place&nbsp;the chicken on a cutting board, breast side down, so that the chicken's back is facing up.&nbsp;Using a pair of sharp kitchen scissors, cut closely along either side of the backbone.&nbsp;Remove the bone and discard. Turn the chicken over so the breast is now facing up and&nbsp;press down firmly on the breast and flatten the chicken.&nbsp;Place the chicken in a resealable bag.&nbsp;3. In small bowl, whisk together the olive oil, balsamic vinegar, lemon zest + juice, oregano, thyme, garlic, and crushed red pepper flakes. Pour the marinade over chicken, rubbing the marinade all over the chickens skin. Seal the bag and place in the fridge for 1-2 hours or preferably over night.&nbsp;4. Preheat an outdoor grill or large grill pan to medium high.&nbsp;5. Season the chicken generously with salt and pepper. Grill, breast side down, covered for 10-15 minutes, or until the chicken has a nice char, flip and grill another 10-15 minutes. Flip once more and grill until cooked through and the chicken registers 160 degrees F on a thermometer. Let rest 10 minutes.&nbsp;6. Serve the chicken with fresh melon, basil and oregano. Enjoy!

Preheat the oven: Heat to 200°C (180°C fan-forced). Season the chicken: Rub chicken with olive oil, Mingle&#39;s seasoning. 

Assemble: Place chicken skin-side up in a baking dish. Add garlic, lemon wedges, and rosemary around the chicken. Optionally, toss vegetables with oil and season, and add them to the tray. 

Roast: Bake for 40-50 minutes until the chicken is golden and cooked through (75°C internal temp). Baste halfway with pan juices.

Serve: Rest chicken for 5 minutes, garnish with rosemary sprigs, and serve with roasted veggies.

One Pot Lemon &amp; Herb Chicken Risoni 

Chicken 500 grams boneless chicken thighs

lemon juice

tbsp Olive Oil

tbsps Mingle's Lemon & Herb

red onion, finely chopped

zucchini, cubed

capsicum,

chicken stock

baby spinach

Risoni

cherry tomatoes

cream

feta, crumbed

tbsps Mingle’s Lemon & Herb Seasoning

Combine all chicken marinade ingredients in a bowl and leave for a minimum of 20 minutes in the fridge. 

Preheat oven to 180°C Heat 1 tbsp olive oil in a oven proof pot over high heat. Cook chicken until lightly browned on the outside but still pink inside. Remove from skillet. 

Add 1 tbsp olive oil into the pot that the chicken was cooked in. 

Add onion and saute for 1 minute. Add remaining veg (leave out the spinach &amp;amp; tomatoes). Cook for 3 minutes. 

Add Risoni, stock, cream, chicken, cherry tomatoes &amp;amp; spinach to the pot and bring to a simmer. 

Once the pot is simmering, scatter feta over the top. 

Bake for 15 minutes in the oven until the risoni is cooked. Squeeze lemon over the lop &amp;amp; serve.

Cook asparagus in boiling water in large uncovered skillet on medium-high heat 5 minutes or until tender-crisp. Drain well. Place on serving dish.
