Easy to make One Bowl Lemon Brownies are so buttery and full of fresh lemon flavor. Made with fresh lemon juice, lemon zest and topped with lemon glaze.

One Bowl Lemon Brownies

all-purpose flour

white granulated sugar

salt

(3/4 cup) unsalted butter (softened to room temperature)

eggs (room temperature)

Preheat oven to 350 degrees F.

Line a 9x9-inches baking dish with parchment paper and grease it with baking spray or butter, set aside.

In a large bowl, using an electric mixer beat together: flour, sugar and butter until creamy.

Add salt, eggs, lemon juice and lemon zest to the flour mix. Beat on medium speed until smooth, about 3 minutes. Stop once to scrape the sides and bottom of the bowl with a spatula. Pour batter into the prepared baking dish.

Bake in the preheated oven for about 25 minutes, start checking after 20 minutes of baking. A toothpick inserted in the center should come out clean and the sides of the cake will start to get golden brown, while the center will be settled.

Remove from oven and cool in the baking dish for 10 minutes, after that transfer the cake to a cooling rack and continue cooling.

Lemon Brownies:

Add all the ingredients to a medium bowl and stir to combine until smooth, with no lumps. If the mixture is too thin, add more confectioners sugar, 1/4 cup at a time. If the mixture is too thick, add more lemon juice, 1 tablespoon at a time.

Spread the glaze over the cooled brownies. Let it settle.

Slice into bars and serve.

Store in the fridge in an airtight container or wrapped in plastic wrap  for up to 4 days.

Preheat the oven to 350°F. Prepare an 8x8&quot; pan by spraying with cooking spray or lining with foil, and set aside.

In a large bowl or the bowl of a stand mixer, beat together the butter, sugar, and lemon zest until light and fluffy. Add the eggs one at a time, mixing well after each addition, then add the lemon juice. Add the flour and baking powder, and mix until just combined.

Pour the batter into the prepared pan and smooth into an even layer. Bake 20-25 minutes, or until a toothpick inserted into the brownies comes out clean. Let cool for 10-15 minutes.

To make the glaze, whisk together the powdered sugar, lemon juice and zest, then pour over the brownies, spreading evenly to coat. Let cool completely before slicing and serving.

I sped up this process by throwing them in the fridge. Spread the remaining glaze over the bars, and let it set. Once again you can speed this up by placing them in the fridge. Cut into bars, and serve. Makes about 24 small brownies.

Preheat the oven to 325. F.

Line an 8 x 8 glass baking dish with parchment paper. Set aside.

In a large bowl combine cake mix, eggs, lemon zest and oil together and blend well with a hand mixer on low speed, gradually increasing to medium speed, until the batter is well mixed. 

Pour the lemon batter into the prepared baking pan, making sure it is spread evenly with a rubber spatula.

Bake for 18  to 25 minutes – starting with 20 minutes and if the top of the brownies are starting to crack it is close to being done.

You don’t want to overbake.  The brownies should be a bit chewy and gooey in the center, and not raw. Complicated? Not at all.  

Cool the brownies on a wire rack until completely cooled.  

While the brownies are cooling, mix up the lemon glaze and then apply to the top of the brownies.

Then using the sides of the parchment paper, lift them out of the pan, and cut into individual lemon bars. You should get 12 bars with this recipe.

These are delicious. I used zest and fresh lemon juice in the brownie mix and love the extra flavor. I also flip the brownies over, remove the parchment and glaze so that the presentation is prettier!
