Lemon Cheesecake Yogurt Cups

reduced fat vanilla wafers

oz 1/3 less fat cream cheese (softened)

Heat oven to 350°.

Line cupcake tin with liners. Place a vanilla wafer at the bottom of each liner.

Gently beat cream cheese, sugar and vanilla until smooth using an electric mixer.

Gradually beat in fat free yogurt, egg whites, lemon juice, lemon zest and flour. Do not over beat.

Pour into cupcake liners filling half way.

Bake 25 minutes or until center is almost set.

Cool to room temperature. Chill a few hours in the refrigerator.

Top with fresh berries and powdered sugar if desired.

Biscoff Cookies, (1 package)

Limoncello Cheesecake with Biscoff Crust

Preheat the oven to 350 degrees F. Place one oven rack in the middle of the oven, and one at the bottom. Place a large rimmed baking sheet on the bottom rack to catch any leakage. Line the bottom of a 9 1/2 inch springform pan with parchment paper. Then clamp the ring around the bottom tightly. (Trim the paper edges if desired.)

For the Crust: Place the Biscoff cookies, sugar, and salt in a food processor. Pulse until the cookies are finely ground. Then add the melted butter and pulse again to combine. Pour the crust mixture into the prepared pan. Press the crumbs with your hands over the bottom of the pan, and about 2/3 the way up the sides of the pan. Bake for 10 minutes.

For the Limoncello Cheesecake Filling: Meanwhile, place the cream cheese in the bowl of an electric mixer. Beat on high for 2 minutes to soften and fluff the cream cheese. One at a time add the eggs, not adding another egg until the previous egg is completely blended in. Scrape the bowl with a spatula. Then add the remaining ingredients and beat until completely smooth. Pour the filling into the crust and bake for 45 minutes.

For the Sour Cream Topping: In a medium bowl, mix the sour cream, sugar, and limoncello until smooth. Once the cheesecake has baked and is mostly set in the middle, spread the sour cream filling over the top of the cheesecake and place back in the oven for 10-12 minutes.

Cool the cheesecake on the counter for 1 hour. Then place in the refrigerator to chill and set for at least 3 hours. Later, take the ring off the springform pan and slide the cheesecake onto a cake plate. Slice and serve cold.

Mini Lemon Cheesecakes

Preheat oven to 350° and add cupcake liners to muffin pan, or with a non-stick cooking spray.

In a medium bowl, mix graham crackers, sugar and butter with a fork until combined.

Press graham cracker crust mixture into the bottom of the muffin pan.

Place muffin pan in oven for 5 minutes, remove and set aside.

For the Crust

In a large bowl, beat cream cheese on medium speed until creamy. Then, add in sugar and beat until smooth.

Add whisked eggs to cream cheese mixture and beat on low speed until combined.

Stir in lemon juice, lemon zest, and vanilla until blended.

Scoop cheesecake filling evenly into prepared muffin pan.

Bake at 350° for 16-18 minutes. Cheesecake will be done when the center is still a bit wobbly.

Remove from oven and let cool for 1 hour.

Remove cheesecakes from pan and place in a container and cover. Place container in the refrigerator and chill for 4 hours, or overnight.

For the Lemon Cheesecakes

In a small saucepan, whisk eggs, sugar, lemon juice, and lemon zest until well combined.

Add butter to pan, stirring constantly. Mixture will thicken and will be done when glaze sticks to the back of a spoon.

Remove from pan, pour into a small, heat-safe bowl, and let cool for 15 minutes.

Cover bowl and place in the refrigerator until cold, or overnight.

Add glaze to each mini cheesecake and enjoy.

Keep refrigerated.

No-Bake Lemon Cheesecake

((3 ounces 85 grams) lemon Jell-O)

(4 ounces 115 grams) powdered sugar

(10floz/282 milliliters) heavy whipping cream

Press the graham cracker crust into a 9-inch (23cm) springform pan.

In a small bowl, pour 1 cup (8floz/225ml) of very hot water and sprinkle the lemon Jell-O on top. Stir until completely dissolved and allow it to cool down for 20-30 minutes. (You don’t want this mix hot when it’s getting added to the cream cheese or it will clump)

With an electric mixer, whip the cream cheese until light and creamy.

Slowly add the cooled Jello to the cream cheese, 1 tablespoon at a time, and mixing thoroughly between additions to prevent the Jello from setting once it hits the cream cheese.

Add the powdered sugar, lemon zest, and vanilla and beat until combined.

In a separate bowl, whip the heavy whipping cream to soft peaks, and then gently fold the whipped cream into the cream cheese mixture until fully combined.

Pour evenly in the pan on top of the crust, cover the pan and refrigerate for at least 6 hours or preferably overnight.

When ready to serve, run a thin knife around the edges to separate the cheesecake from the pan before releasing it.

Store any leftovers well covered in the refrigerator for up to 2 days.

Crush the digestive biscuits in a food bag with a rolling pin or in the <a href="https://www.bbcgoodfood.com/content/test-five-best-food-processors">food processor</a>. Melt the butter in a <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a>, take off heat and stir in the brown sugar and biscuit crumbs.

Line the base of a 20cm loose bottomed cake tin with baking parchment. Press the biscuit into the bottom of the tin and chill in the fridge while making the topping.

Beat together the mascarpone, caster sugar, lemon zest and juice, until smooth and creamy. Spread over the base and chill for a couple of hours.

Preheat oven to 350. Line an 8x8 inch baking pan with foil and lightly grease with cooking spray.

First prepare the crust. In a food processor (or good quality blender) pulse graham crackers and sugar until fine crumbs form. Add melted butter and pulse again until mixture comes together. Press into the bottom of prepared pan and bake 10 minutes.

Next prepare the cheesecake layer. In a medium-large bowl cream together cream cheese, sugar, egg, lemon juice, and vanilla until smooth. Pour mixture over crust.

To make the strawberry swirl, add strawberries and sugar to a blender or food processor and pulse until finely pureed. (add 1-2 tablespoons as water until mixture is easily spreadable)

Drop spoonfuls of the strawberry mixture over the top of the cheesecake layer. Use the tip of a knife to swirl the strawberry mixture into the cheesecake mixture - a figure 8 pattern works great! (Careful not to insert the knife too far so that you don't disturb the crust at the bottom)

Bake for 25-35 minutes until cheesecake is set. Allow to cool for 20-30 minutes, then transfer to fridge to chill at least 30 minutes or until ready to serve. Store chilled in airtight container or covered with plastic wrap.
