Couscous often gets forgotten about and honestly, I don't know why. It's much easier to make than most grains or pastas and you can take the flavor profile with it anywhere. A simple drizzle of olive oil and lemon juice is our favorite way to serve it, but the possibilities are endless. 

Lemony Herb Couscous

c. couscous

c. low-sodium chicken broth

olive oil

lemon

tbsp. parsley

Kosher salt

black pepper

red pepper flakes

Do you consider couscous a pasta or a grain?

A good dish. A little too much olive oil, but perhaps I need to use a milder oil.   I have a recipe for a cold dish of couscous, that has golden raisins and zucchini and more.  The kids all loved it. I had forgotten about it, and now I can’t find it.

Delicious. I used a little less olive oil. Was happy to find this recipe! It went very well with my creamy cucumber salad and seared lamb loin!

Nice blueprint. I use oregano instead of parsley and paprika instead of red pepper.

The instructions say to take the couscous off heat and let sit for 10 minutes. This results in soupsoup. Couscous package instructions say to simmer for 8-10.

Fish with yoghurt tartar sauce and grain salad

(150 grams) arrowroot

tsp turmeric

(280 grams) low-fat thick Greek-style yoghurt

tbs low-fat mayonnaise

cornichons, finely chopped

tbs chopped dill, plus extra sprigs, to serve

tbs baby capers, rinsed, drained, chopped

(200 grams) wholemeal couscous

tbs finely chopped flat-leaf parsley leaves

red onion, thinly sliced

x 110 grams flathead fillets

A simple four ingredient recipe for lemon herb couscous that takes nearly 15 minutes and is a fantastic side to Mediterranean dishes.

Add couscous to a small pot and place over low-medium heat. Use a spatula to toast the couscous for a few minutes, making sure all the kernels are lightly toasted.

Pour out couscous and reserve to a bowl and set aside. In the same pot, add liquid (vegetable or chicken stock) and bring to a low boil.

Once boiling, add lemon juice and pour in couscous and give it one good stir. Turn heat off and place a lid on the pot. Let couscous absorb stock for about 10 minutes.
