This sweet and zesty lemon curd is foolproof and amazing in everything from roll cakes to whipped cream.

Lemon Curd

sugar (200 grams)

tbsp lemon zest (zest of two lemons)

lemon juice (minus one tablespoon, 100 milliliters)

butter (unsalted, cold)

Separate the yolks from the whites. You can freeze the egg whites for later or make a Swiss meringue buttercream with them!

Zest the lemons. If you have a food processor handy I like to pulse the lemon zest and sugar together to really extract all the oils from them but this step is not a must.

Juice the lemons until you have about half a cup of lemon juice. Don&#x27;t forget to strain out the seeds.

Strain egg yolks into a pot and beat lightly with a wire whisk. Whisk in the sugar and give it a good mix until lighter in color. Stir in lemon juice gradually.

Heat on low, while stirring constantly with a wire whisk until mixture thickens, just starts to bubble and coats back of wooden spoon.

Remove pot from heat, then add the cold, cubed butter and mix until melted.

This is optional but I like to strain the final mixture to remove any bits of zest, etc. The final curd will be SILKY SMOOTH and amazing.

Transfer the curd to a sealable container or bowl. If string in a bowl make sure to cover the surface with plastic wrap to prevent a skin from forming.

Cook Eggs:

Cook Eggs: Add the eggs and sugar to a medium saucepan. Over medium heat, whisk until fully combined and smooth.

Add Lemon:

Add Lemon: While whisking add the lemon juice, lemon zest and pinch of salt. Continue whisking until well incorporated.

Add Butter:

Add Butter: Add the butter cubes to the saucepan. Continue whisking until mixture thickens and coats the back of a spoon, about 10 minutes. It should have the consistency of pudding.

Strain &amp; Rest:

Strain &amp; Rest: Remove the saucepan from heat. Strain the lemon curd through a sieve into a bowl. Use a spatula to make things easier. Let the lemon curd rest for 15 minutes at room temperature. It will continue to thicken as it cools.

Store:

Store: Transfer to jars or airtight containers and store in the fridge for up to 2 weeks or freeze for up to a year.

Lemon Curd Recipe

Remove from heat and pour through a fine mesh strainer into a heat-proof bowl.

Cover with plastic wrap touching the surface of the lemon curd to avoid a skin forming. Allow to cool to room temperature for 20-30 minutes then transfer to the refrigerator or divide into serving jars. Chill for several hours then use as desired.

¹This took 3 whole lemons for me
²Zest the lemon before squeezing, it's much easier that way than trying to zest an empty lemon skin. Be sure to avoid the bitter white pith when zesting (don't grate all the way down to the actual lemon!)

Beat together the eggs, egg yolks, sugar, zest and juice. Pour into a small saucepan and stir over low-medium heat until the sugar has dissolved.

(163 grams) all purpose flour

Preheat the oven to 350°F (176°C) and prepare a cupcake pan with liners.

. Add the flour, sugar, baking powder and salt to a large mixer bowl and combine. Set aside.

. Add the milk, vegetable oil, vanilla extract, lemon zest and egg to a medium sized bowl and combine.

. Add the wet ingredients to the dry ingredients and beat until well combined.

. Slowly add the water to the batter and mix on low speed until well combined. Scrape down the sides of the bowl as needed to make sure everything is well combined.

. Remove the cupcakes from the oven and allow to cool for 2 minutes, then remove to a cooling rack to finish cooling.

. To make the lemon curd, combine all the ingredients in a double boiler (or in a metal bowl over a pot of simmering water). Heat while whisking constantly until mixture thickens and reaches 160 degrees, or coats the back of a spoon.

. Pour the lemon curd into a small bowl and cover with clear wrap pressed against the top of the curd to prevent a film from forming. Refrigerate until completely cool and firm, 3-4 hours.

0. When you are ready to build the cupcakes, make the meringue frosting. To make the meringue, combine the sugar, cream of tartar, vanilla extract and egg whites in a large mixer bowl. Place the bowl over a saucepan or pot of simmering water. You can also use a double boiler.

1. Whisk constantly until sugar is dissolved and egg whites are warm, to 160 degrees on a thermometer, about 4-6 minutes. Remove from heat.

2. Using the whisk attachment, beat the egg white mixture on low speed, gradually increasing to high, until stiff, glossy peaks form, 5 to 7 minutes.

3. To put the cupcakes together, use a cupcake corer (or a knife) to cut a hole in the center of the cupcakes.

4. Fill the center of the cupcake with lemon curd.

5. Frost the cupcakes with the meringue frosting. I use Ateco tip 808.

6. Finish off the cupcakes with a slice of lemon, if you like, then toast lightly with a kitchen torch.

7. Refrigerate cupcakes until ready to serve.

Vegan Lemon Curd

Place the vegan butter, lemon juice, coconut milk, vanilla extract and powdered sugar into a medium-size saucepan over low heat.
