Lemon Pepper Catfish Fillets

Heat a large skillet over medium heat.

Cut several pieces of aluminum foil or parchment paper into 9 x 12-inch rectangles.

Lay each piece down flat and lightly coat one side with cooking spray.

Lightly sprinkle one teaspoon of lemon pepper seasoning over the coated side of the foil. Spray the foil or parchment paper again with the cooking spray to hold the seasoning in place.

Gently place a fish fillet on one side of the foil. Carefully fold the other half of the foil over the fish. Pat the foil to get all the lemon pepper seasoning onto the fish. The fold up the edges of the foil.

Working in batches, place the foil packets into the heated skillet. The bottom of the foil packets need to touch the bottom of the skillet, so be sure not to overcrowd the skillet.

Cook the fish fillets for seven minutes, or until the fish is opaque and flakes easily with a fork. You do not have the flip the fish.

Remove the fish from the foil and serve.

Air Fryer Fish Recipe

Garnish- lemon slices or fresh chopped parsley, chervil and/or chives

Pat the fish fillets dry with a paper towel. Brush both sides of the fillets with melted butter or olive oil. Sprinkle with lemon juice.

In a small bowl, whisk together the lemon pepper, garlic, salt, paprika, black pepper and parsley. Generously season both sides of each fish fillet with the seasoning. Place fish on a plate or baking sheet while the air fryer preheats. 

Preheat the air fryer to 360 F. Once preheated, spray the basked with nonstick cooking spray. Arrange fish in the air fryer basket. (See notes for cooking from frozen.)

Close the air fryer basket and air fry for 6 to 14 minutes (see cook times below for specific fish).  If desired, with two minutes left of cooking time, open the basket and add a sliced lemon to each filet.

Close the basket and continue to cook for the remaining time or until the fish flakes easily with a fork (internal temperature reaches 140-145 F). 

Once cooled, store the fish in an airtight container in the fridge for up to 2 days.

Lemon Pepper Fish Recipe

Preheat the oven to 425 degrees Fahrenheit. Dry the fish well with paper towels then sprinkle the lemon pepper, garlic powder, Italian seasoning, and paprika evenly over both sides of the fish.

Drizzle half of the olive oil over one side of the fish pieces then pat the spices onto the fish so that they really stick to the fish. Transfer the fish to a baking sheet, oiled side down. Drizzle the remaining olive oil over the fish and once more pat the spices onto the fish. Arrange a few lemon slices around the fish.

Bake the lemon pepper fish for 12-15 minutes, or until it turns white and flakes easily. Serve the fish with the lemon slices on the side and a little parsley sprinkled over the top.

Used Grouper filet's and the results were easy and delicious.

Wonderful recipe. I made it for my family with some rice and broccoli and everyone asked that I make it again. It's a keeper!
