These Oven Roasted Dill Potatoes are an unexpected twist on the basic oven potato, but in all the best ways possible. Tangy, buttery, crispy — everything a potato is meant to be and more. This will soon become your all-time favorite way to make potatoes. 

Oven Roasted Dill Potatoes

½ pounds baby gold potatoes (cut in half lengthwise)

olive oil

butter

garlic

dill

salt (or

black pepper (or

Preheat oven to 450 degrees. Place potatoes in a large bowl.

Stir together olive oil, butter, garlic, and dried dill. Pour over potatoes and toss to coat. Season with salt and pepper and then transfer to a large baking pan.

Bake potatoes in preheated oven for 15 minutes, turning over once about halfway through, until fork-tender and crisp on the outside.

Sprinkle with the fresh dill and squeeze juice from the 1/2 lemon over the potatoes, stir, and serve immediately.

Lemon Roasted Potatoes

lbs yukon gold potatoes,

tsp dried oregano ((other herbs like dill or basil would be good too))

Salt and black pepper

lemon juice

Tbsp minced garlic

parsley

Preheat oven to 400 degrees. Spray a rimmed, light colored, 18 by 13-inch baking sheet with non-stick cooking spray.

Place potatoes in center of baking sheet, drizzle with olive oil, sprinkle with oregano, salt and pepper then toss to evenly coat.

Spread potatoes into an even layer across baking sheet.&nbsp;

Roast in preheated oven until nearly tender and just beggining to brown lightly, tossing once halfway through, about 30 - 35 minutes total.

Remove from oven, scoot potatoes to center, drizzle with lemon juice, sprinkle with garlic, toss to coat. Spread back out into an even layer. 

Roast 10 minutes longer or until fully tender and golden brown in places.

Sprinkle with parsley and serve warm.

Greek Lemon Potatoes have a tangy flavor with a hint of garlic. They are an easy roasted potatoes recipe that goes well with so many dinners. If you love lemon then you will LOVE these lemon potatoes!

Greek Lemon Potatoes

potatoes

lemon juice (from 3 lemons)

olive oil + 2 tablespoons (divided)

sea salt

each: pepper and oregano

garlic (finely minced)

red pepper flakes

Place the potatoes, lemon juice, ¼ cup of the olive oil, salt, pepper, oregano, garlic, and red pepper flakes to a large baking dish and toss to coat.

Roast the potatoes for 30 mintues then toss and roast them again for another 20-30 minutes, or until the pan is dry and the potatoes have started to brown. For extra color on the potatoes, drizzle them with the remaining 2 tablespoons of oil then broil for 5-7 mintues. (see notes)

Sprinkle the potatoes with the parsley and serve right away.

Bifteki is a version of a Greek burger. This is a traditional, authentic recipe of juicy and flavorful biftekia (plural) baked with crispy and savory potatoes in a lemon olive oil sauce.

Bifteki-The Greek Burger

lbs grass-fed ground beef

onions (grated)

tomatoes (grated)

breadcrumbs (total.)

egg (optional)

red wine vinegar

extra virgin olive oil

oregano

parsley leaves (roughly chopped)

oregano leaves

pepper

mustard

lemons (juiced)

water

Preheat the oven at 200°C/390°F

Peel the potatoes and cut them into wedges or thick slices.

Put them in a baking pan. Add the olive oil, oregano, mustard, and lemon juice, and season with sea salt and freshly ground pepper. Mix well to distribute all seasonings and olive oil evenly.

Pour one cup of water at the bottom of the pan, cover with aluminum foil, and bake at 200°C for 1 hour until they are soft.

Start with the potatoes

Put the ground beef in a bowl. Add the olive oil, oregano, fresh oregano, parsley, vinegar, one teaspoon of sea salt, and plenty of freshly ground pepper. You can add an egg if you like.

Grate the onions and tomatoes, directly into the meat. Let all their liquids pour into the mixture.

Start mixing, and based on how loose the mixture is, start adding the breadcrumbs. Knead well, but don&#39;t overdo it.

Cover the mixture and place into the refrigerator for half an hour.

Start making the burgers ten minutes before the potatoes reach the one hour of baking (or are close to being soft). Form 10-12 biftekia-burgers.

Remove the potatoes from the oven and lay on top of them the biftekia. Bake for another 30 minutes.

Check the burgers to make sure they are done to your liking. Remove burgers and set them aside to rest covered with aluminum foil. Increase the heat to 220°C/ 425°F and continue to roast the potatoes for 10 minutes or until they are golden brown with crispy edges and tender inside.

Serve immediately with plenty of feta on the table, lemon wedges, and fresh bread.
