Lemon Tart

250 g plain flour

125 g salted butter, cold, diced

300 ml double cream

A delicious lemon curd tart with a layer of white chocolate strawberry filling all topped with toasted meringue dollops.&nbsp;

160 g confectioners sugar

Egg Yolks

vanilla bean paste

lb all-purpose flour (450 grams)

unsalted butter

heaping)

white chocolate

heavy cream

strawberry powder

corn starch

lemon

lemon juice

unsalted butter (cold)

kosher salt

tsp vanilla extract (5 milliliters)

Add the icing sugar, butter, vanilla &amp; salt in the bowl of a stand mixer fitted with a paddle attachment.&nbsp;

Beat the mixture on a medium speed for a few minutes until it forms a paste. Scrape down the bowl halfway through.

Slowly add in the flour, and mix on low speed until it is just combined. The mixture will look crumbly. Don't worry as it will come together when rolled and rested.

Transfer the mixture on a lightly floured surface. You will want to divide the dough into 2 batches to make rolling out easier.

Place a large piece of parchment paper down, lightly flour it, and place one batch of dough on top. Sprinkle the dough lightly with flour and place another large piece of parchment paper over the top

Roll the dough out with a rolling pin to 3mm (1/8 inch).&nbsp;I have a rolling pin with training wheels on the side that tells me exactly what 3mm is but you can eyeball it. 3mm is two pennies thick.

Place the whole sheet of pastry in the fridge for 30 minutes. Repeat the above steps with the second batch of dough if divided.

Once the dough has chilled, remove one sheet from the fridge. Peel off the top sheet of parchment paper, very lightly flour the pastry, then flip it over.

Peel off the remaining sheet of parchment paper, lightly flour the dough again to prevent it from sticking.&nbsp;

Cut out the dough using a 5.75" oval perforated tart ring. Peel off the excess dough and you can re-roll this for another use. You can use different dimensions if you have different tart forms.

Remove the second sheet of dough from fridge. Using a sharp knife, cut long strips of dough about 7-8” long and ¾” wide.

Carefully lift the strips and place them on the inside of the tart rings. Press them against the side so they line up with the dough at the bottom.

Press the bottom of the dough gently with your fingers to mold it to the base of the dough.

Cut off any excess pastry hanging over the top of the tart rings with a sharp knife.

Place the tart shells into the freezer for 30 minutes to 1 hour.

Pre-heat your oven to 320F. Place the tray with your tart shells in the oven. Bake for 15 minutes or until the shell is lightly golden.

Remove tart shells from the oven and allow time to cool before piping so the filling does not melt.

For the Tart Shell

To make the strawberry powder I crushed dehydrated strawberries in a plastic bag then sifted the powder and measured out a tablespoon.

Heat up the heavy cream over medium heat until it’s just about to boil. While the cream is heating chop your white chocolate into small pieces.&nbsp;

Immediately pour the heavy cream over the white chocolate in a bowl. Let stand for about 2 minutes.

Add the strawberry powder and whisk until smooth.&nbsp;

Transfer to a piping bag. You will snip the tip off just before assembling.&nbsp;&nbsp;

For the Strawberry Chocolate:

Strain egg yolks into a bowl and beat lightly with a wire whisk.

Add the sugar and beat until the mixture is thickened and a light lemon color. Whisk in lemon juice and sift cornstarch in and whisk in as well. Transfer mixture to a pot.

Heat on medium-low, while stirring constantly with a wire whisk until mixture coats back of wooden spoon or 168F on a candy thermometer. Do not boil the mixture.

Turn off the heat, add in cold, cubed butter and whisk until melted. Transfer to a bowl, cover in plastic and let cool completely

Transfer to a piping bag and snip off the tip.

For the Lemon Curd:

Add egg whites, sugar and salt in a bowl. Give the mixture a brief whisk.

Place the bowl over a pan of simmering water. Making sure the water does not touch the bowl.   Whisk the egg whites occasionally while it warms up. When the mixture has warmed, whisk it constantly.

Heat the mixture until it reaches an internal temperature of 160ºF or until it's very warm and not grainy between your fingers.   Transfer to the bowl of a stand mixer with a whisk attachment. Whisk until you get room temperature glossy peaks.

For the Swiss Meringue Buttercream:

Once your tart has cooled, pipe in the bottom layer of white chocolate.

Pipe on the top layer of lemon curd.

Transfer the Swiss meringue to a piping bag with a 32 tip and pipe the dollops on top.

Lightly toast the dollops of Swiss meringue using a blow torch.

Melt the candy melts and smear a layer onto parchment paper.

Sift strawberry powder over the candy melt and allow a few minutes to chill.

Cut out different sized small circles of the candy melt using a round piping&nbsp;tips or circle cutters.

Carefully lift up with a spatula and place them on the tarts.

For the Assembly:

An elegant lemon curd tart with strawberry ganache inside and meringue dollops on top.

Lemon Curd Tart

Gregg Wallace fell in love with Michel Roux Snr's lemon tart at first bite. This is his version of the classic recipe

Gregg's tangy lemon tart

plain flour,plus extra for dusting

icing sugar

unsalted butter,cubed

caster sugar

milliliters double cream

juice 2-3 lemon(about 100 milliliters/3.5fl oz) and 2 tbsp lemon zest

To make the pastry, mix the flour and icing sugar in a bowl. Rub the butter into the flour with your fingers until crumbly. Mix in the egg yolks. If the pastry is still too dry, add 1-2 tbsp water until it comes together. Roll into a ball and divide in half (freeze one half for another recipe). Flatten out the pastry with your hands, wrap the dough in cling film, then chill for at least 30 mins. While the pastry is chilling, make the filling. Beat all the ingredients, except for the zest, together. Sieve the mixture, then stir in the zest.

Roll out the pastry on a lightly floured surface to about the thickness of a £1 coin, then lift into a 23cm tart tin. Press down gently on the bottom and sides, then trim off any excess pastry. Stab a few holes in the bottom with a fork and put back in the fridge for 30 mins.

Heat oven to 160C/140C fan/gas 3. Line the tart with foil and fill with rice or dried beans. Bake for 10 mins, then remove the tart tin from the oven, discard the foil, and bake for another 20 mins until biscuity. When the pastry is ready, remove it from the oven, pour in the lemon mixture and bake again for 30-35 mins until just set. Leave to cool, then remove the tart from the tin and serve at room temperature or chilled.

Best-Ever Lemon Tart

It looks so cool, but it has a lotttttt of SUGAR.

I did everything right but used almond flour instead and it was still super jiggle in the center and I was worried when I was going to have the time to cut into it and did not no what to think I left it in there for more then 33 minutes and still super jiggle

Followed this recipe and ended up with an oily mess that never set. Compared it to another lemon tart recipe from a different site and ingredients in this recipe are very off.

Classic Lemon Tart

lemon zest

Heat oven to 375ºF with rack set in middle position.

Whisk lemon juice, lemon zest, egg and yolks, honey, and pinch salt in medium saucepan until smooth. Add butter and cook over medium-low heat, stirring constantly with rubber spatula, until mixture thickens and registers 170ºF 6–8 minutes.

Immediately pour mixture through a fine-mesh strainer into bowl and stir in cream.

Pour warm lemon curd into cooled 9-inch tart crust. Set tart on baking sheet and bake until filling is shiny and opaque and center jiggles slightly when shaken, 10–15 minutes, rotating pan halfway through baking.

Transfer tart with baking sheet to wire rack and let cool completely, about 2 hours.

To serve, remove outer metal ring of pan, slide a thin spatula between tart and tart pan bottom, and carefully slide tart onto serving platter.

Top with berries and dust with confectioners’ sugar, if using.

This is so pretty and delicious. I like that I can make the curd and crust ahead of time. It makes preparing so much easier. Great tart!!!

I just made this and followed the recipe 100%. It says to blind bake the crust for 40 minutes at 375 and mine came out so burnt it’s black on the bottom! I just read another recipe with identical ingredients and it says 20 minutes at 375!!!!

This recipe is perfect! I had no trouble with the crust—buttery and cookie-like. I will say, you need to use large eggs like she specifies here. I used medium eggs this last time and I had less filling. This is my new go-to tart recipe!

The lemon tart filling is my ideal version: smooth and melt-in-your-mouth creamy, and not too sweet or too sour (like so many recipes seem to be??!). It&#039;s set just enough so you can cut neat slices.The tart crust is a French Sweet Tart Crust called Pâte Sucrée. It&#039;s tastier and easier than the usual shortcrust. This is the only tart crust recipe you will ever need!IMPORTANT: Readers have had problems with butter splitting in the lemon curd. This occurs if heat is too strong. Please use low heat, as per recipe directions! :)

French Lemon Tart - Tarte au Citron

Make tart crust per linked recipe, including blind baking the empty tart crust. Allow to fully cool before filling (to ensure it won&#039;t go soggy).

Tart crust:

Preheat oven: Preheat oven to 180℃/350℉ (160℃ fan)

Whisk ingredients together: Put all ingredients in a medium saucepan and whisk to combine.

Thicken on stove: Place the saucepan on the stove over low / medium low heat. Whisk constantly, especially as the butter is melting, to ensure it doesn&#039;t split. Keeping stirring until the mixture thickens enough to visibly mound (ie. holds its shape briefly) on the surface when dolloped – about 5 minutes, though it might take longer depending on stove strength, saucepan heat retention etc. See video and photos for thickness guide. Don&#039;t take it off the stove until it&#039;s thick enough otherwise the Filling won&#039;t set.

Strain into a bowl using a fine mesh strainer.

Fill tart: Pour into tart shell and smooth the filling surface using an offset spatula or similar.

Bake: Bake for 5 minutes. It will still be a soft custard when you touch it but not liquidity. It will set more when cooled so it&#039;s sliceable.

Cool: Cool tart fully to allow it to set before slicing to serve. Pictured with a dollop of creme fraiche (a thick, rich cream that has a slight tartness, and goes very well with the lemon tart) or whipped cream and even vanilla ice cream.

Decorate if desired with lemon slices, edible flowers, raspberries. Else pipe on dollops of whipped cream or dust with icing sugar!

Lemon Curd Tart with Meringue

250 gr (1 2/3 cup) Plain / All-Purpose Flour

gr (1/2 cup) Icing Sugar

120 gr (1/2 cup) Unsalted Butter (very cold)

150 ml (1/2 cup + 2 tablespoons) Lemon Juice

Lemon Zest

120 gr (1/2 cup) Caster Sugar (or to taste)

gr (2 tablespoons) Cornstarch

90 gr (6 tablespoons) Unsalted Butter

Egg Whites

75 gr (1/3 cup) Caster Sugar

Mix the Flour, Icing Sugar and Salt in the bowl of your Food Processor. Add the cold Butter cut into small cubes, then pulse to blend until you get very small crumbs.

Add the Egg and blend until a dough starts to form. Remove from the food processor and bring the dough together into a ball (see note 1).

Place the dough between two sheets of baking paper and roll into a large, thin circle about 4 mm (1/8 inch) thick. Place the rolled pastry over a flat tray and leave in the fridge to rest and chill for at least an hour, or up to 24 hours.

Take out of the fridge and line the pastry inside a 25 cm / 10 inch perforated tart ring - or your choice of tart pan with removable bottom (see note 2). Dock the pastry then place back in the fridge for another hour - or up to 24 hours. 

Preheat your oven on 160&#39;C/325&#39;F and place the pastry in the freezer in the meantime. Blind bake for 30 to 40 minutes or until golden and fully baked. Set aside to cool down completely.

Pâte Sablée (Shortcrust Pastry)

Zest and Juice the lemons. Place the juice in a small saucepan and set the zest aside. Heat up the Lemon Juice until it starts to steam and in the meantime, whisk together the Egg Yolks, Sugar and Cornstarch in a small heat-proof bowl.

Pour the warm lemon juice over the sugar/egg mixture while whisking, then transfer it all back into the saucepan. Cook on low to medium-low heat until the curd starts to thicken, continuously stirring. (see note 3)

Add the Butter a little bit at the time until all incorporated. Add the Lemon Zest then continue to cook for another 2 to 3 minutes (see note 4). If required, pour the cooked curd through a thin mesh sieve to remove any lumps.

Pour the hot curd inside the baked tart crust and spread it around with a small offset spatula. Place it in the fridge to chill and set for at least 2 to 3 hours (or overnight) or until the curd has set.

Lemon Curd Filling

The meringue topping should be added as close to serving as possible.

Combine the Egg Whites and Sugar in a small heat-proof bowl. Place it over a small saucepan filled with a little bit of water (not touching the bottom of the bowl) and turn on low to medium low heat.

Continuously whisk for a few minutes. The mixture should have doubled in volume, be very frothy and the sugar should have dissolved (see note 5).

Transfer the mixture into the bowl of your stand mixer and whisk on medium to high speed until you almost reach stiff peaks (see note 6). Place in a piping bag and pipe over the tart to decorate (see note 7).

Toast the meringue with a kitchen torch then serve.

The classic lemon tart has always been a staple in my house. The super tangy dessert is always a hit, even when made Dairy Free, Eggless and Vegan!

Easy Vegan Lemon Tart

(150 gramsr) Plain Flour

(50 gramsr) Almond Meal

tbsp (20 gramsr) Icing Sugar

(100 gramsr) Coconut Oil

(60 milliliters) Cold Water

Lemon

(220 milliliters) Coconut Cream

tbsp (60 gramsr) Caster Sugar (or

tbsp (15 gramsr) Cornstarch

teasp. (3 gramsr) Agar Agar Powder

teasp. Turmeric Powder (optional, to taste for colouring)

Place the Plain Flour, Almond Meal and Icing Sugar in the bowl of your food processor. Pulse a few times to mix all the dry ingredients together. 

Add the cold Coconut Oil and pulse until it resemble wet sand / thin crumbs. Add the cold water and continue pulsing until the pastry comes together.

Transfer onto a lightly floured surface and assemble into a ball. Cover with wrap and leave in the fridge for 10 to 15 minutes, or until the coconut oil starts to harden.

Preheat your oven on 180&#039;C / 350&#039;F.Generously flour your kitchen bench and roll the pastry to create a large disc. If the pastry cracks, simply use your fingers to re-assemble it. Place in a Tart Tin with removable bottom and prick the crust with a fork. Cover with a small sheet of baking paper and fill with baking beads, weights or dried beans.

Bake for 10 to 15 minutes with the beads/weight, then carefully remove and leave to cook for another 5 to 10 minutes or until fully cooked. Set aside to cool down.

Pastry Crust

Mix the Lemon Juice, Coconut Cream, Caster Sugar, Cornstarch and Turmeric Powder until no lumps remain. Place in a small pot and bring to a slow boil. Don&#039;t stop whisking the liquid until it starts thickening to avoid burning it. Taste and adjust the sweetness to your liking if required.

When the curd starts to boil, add the Agar Agar Powder, whisk for one extra minute and remove from the stove. Directly pour into the blind-baked pastry and place in the fridge to set for 2 hours.&nbsp;

Optional: decorate with Aquafaba Meringues or Lemon Zests.
