beef rump steak, trimmed, thinly sliced

garlic clove, crushed

milliliters (1/3 cup) fish sauce

lemon grass, pale section only, finely chopped

rice vermicelli noodles

Lebanese cucumber, halved, thinly sliced

peeled,

basil leaves

mint leaves

coriander leaves

canola oil

brown onion, halved, thinly sliced

milliliters (1/3 cup) fresh lime juice

tbsp white sugar

red chilli, finely chopped

(1/2 cup) bean sprouts,

(1/3 cup) roasted unsalted peanuts, coarsely chopped

This Lemongrass Chicken with Rice and Zucchini is OMG-level good! Tender chicken thighs, sautéed and then simmered in a creamy coconut and lemongrass sauce, sits next to a steamy pile of jasmine rice, fresh herbs, and your choice of veg.

paprika

garlic powder, onion powder, salt, and pepper

olive oil

jalapeño, ribs and seeds removed (optional), minced

lemongrass

brown sugar

coconut cream

juice and zest of one lime

salt

cilantro and/or basil, chopped

Cook the chicken

Heat the oil in a large skillet over medium high heat. Add the chicken thighs, sprinkle with spices, and cook for 8-10 minutes until cooked through. Remove from pan. Once cooled, shred / pull into small bite-sized pieces.

Make the lemongrass sauce

Add the garlic, jalapeño, and ginger to the chicken pan (you don&#8217;t have to wipe it out &#8211; save all those good flavors). Sauté until fragrant. Add the lemongrass and brown sugar; stir to combine. Add coconut cream and bring to a low, gentle simmer. Season with lime zest, lime juice, and salt.

As my husband is vegan, I may try this as a tofu spiced saute in addition to the fantastic chicken sautee.

I made this tonight…a double recipe since I had a 3# package of chicken thighs. The chicken took longer than 8-10 minutes to cook, even though I split it into batches so as not to overcrowd. Next time I think I’d cut it up a bit first to shorten the cooking time. I added fish sauce and a splash of soy sauce and a second lime for the double batch. I think I’d halve the sugar next time too. But overall a delicious meal!

This was amazing! Omitted  the jalapeño for my kids and it was a total crowd pleaser! Make this recipe!!

Made this recipe today and added mushrooms and onions while sautéing the chicken. Also added a dash of fish sauce to the lemongrass sauce for a little more fullness of flavor. It was delicious!

Made this last night.  It was really good.  Cozy, delicious.  Next time I think I will leave more of the jalapeño seeds and ribbing is because I like a little more heat.  I air fried some broccoli as a side.  Would make again.  Perfect!

This recipe is a keeper for sure! It was a hot night so I prepped the chicken in the instant pot so I didn't have to stand over sizzling chicken on a hot pan, hah! I used two jalapenos with all the ribs and seeds and it was perfectly spicy to balance the sweet citrus. Thank you!!

SO yummy!  My kiddo said she’d be happy if I just made the sauce again. Used Trader Joe’s Ajika seasoning instead of paprika and jalapeño, and used coconut milk for fewer calories - but simmered it for a long time to thicken it. 10/10 will make again. 
Would be delicious with tofu plus veggies as well.

This recipe was delicious and was easy to make.  I could not find the coconut cream, had to use coconut milk.  It was still good, the family agreed it was a keeper recipe.  I could not find lemongrass paste but making the lemongrass was quick and easy.

(80 milliliters) vegetable oil

eschalots, thinly sliced

Vietnamese Grilled Lemongrass Pork Chop Recipe (Sườn Nướng)

pork chops (about 3 lbs)

fish sauce

oyster sauce

sugar

honey

green onions (thinly sliced; whites/greens separated)

neutral oil (divided)

Lemongrass Meatballs Bowls! A quick and easy meal featuring quinoa or rice topped with quick pickled carrots, herbs, peanuts, and easy lemongrass pork meatballs, all covered with spicy mayo.

Lemongrass Meatball Bowls

rice vinegar

sesame oil

carrots,

pork

lemongrass paste

chili paste (like Sriracha or Sambal Oelek)

cornstarch

quinoa

cilantro

basil

mint

green onions

peanuts

spicy mayo (1/4 cup of mayo with a 1 tablespoon of sriracha)

Quick Pickled Carrots

Whisk the rice vinegar, palm sugar, sesame oil, and salt together. Soak the carrots in the mixture.

Quinoa

Cook your quinoa according to package directions.

Meatballs

Mix all ingredients. Roll into small meatballs with your hands (they might feel wet and heavy &#8211; pop them in the fridge or freezer for a few minutes to get them to hold their shape a bit better if needed). Heat a little bit of olive oil over medium-high heat. Add the meatballs and fry until golden brown on the outside and fully cooked (not pink) inside.

Bowls

Layer the carrots and meatballs over cooked quinoa. Top with herbs, peanuts, and/or spicy mayo.

Lol I bet to differ Deb- I love POY. And I can always trust whatever recipe (and often time I hope it’s a bowl because who doesn’t LOVE a big bowl of nourishing food) turns out flavorful and amazing. Lindsey’s recipes are always simple yet fun and spot on YUM.

Ha-ha!  Can't believe I also knew this factoid!  I work with a Vietnamese lady and once I'd finished butchering the pronunciation (!) she laughed and said - I have Bahn mi for lunch and showed me.  Sure enough - it was a sub roll!!  OK I'm totally biting the bullet and buying a bottle of fish sauce after your recommendation.  Can't wait to make this - looks fabulous. Just made / ate this and it was delicious. So many flavourtowns. I didn't know there was a thing as lemongrass paste until I was ordering groceries for this recipe. And it was on sale. You've changed my life!

Can't rate this highly enough! Made it with a rice noodle base andickled some shredded cabbage too. Dressed it with a mix of hoi sin, sweet chilli and crunchy peanut butter - totally amazing. Thank you so much for posting this

I've made a bunch of your recipes in the past, but this one was such a hit with my girlfriend that I felt inclined to offer my gratitude :) I obviously enjoyed it immensely as well.  The meatballs were superrrr super tasty, combined with the tangy carrots and the balance of the quinoa really made it a winner.  An FYI to anyone else out there making this bowl, I couldn't find Coconut Palm Sugar or Lemongrass paste...I used brown sugar and lemon zest instead...I think they filled in nicely.  Thanks again, Lindsay! Keep killin' it.

I love these meatballs! I used ground chicken breast and doubled the recipe because I have faith in your recipes. (Going to freeze some for a rainy day.) This lucky girl had some leftover coleslaw from your fish tacos, so threw that in the bowl as well. Thanks for another great recipe.

This was an AMAZING dinner! We served it over quinoa, although I'll be excited to try rice next time. The meatballs were so delicious, and pickled carrots are one of my favorite things ever. Just can't go wrong with this one! We will definitely be having it again. :)

Vietnamese Grilled Pork Chop with Lemongrass (Sườn Nướng Sả)

lbs pork chops

vegetable oil (divided)

Marinate pork chops

with fish sauce, oyster sauce, sugar, honey, black pepper, lemongrass, garlic, whites of green onions, and oil (1 tablespoon) for 30 minutes or overnight in the fridge for better results.

Grill

about 10 minutes per side at medium-high heat or 400°F for thick cuts (over 1 inch in thickness). Grill for 8 minutes per side for thinner cuts.

Make the scallion/green onion oil

Add greens of green onions and remaining oil (1 tablespoon) in a microwave-safe bowl. Microwave on high for one minute. Set aside.

Brush with scallion oil

for a beautiful finish and amazing aroma.

Serve

with steamed rice, a fried egg, thinly sliced cucumbers and tomatoes. Drizzle with soy sauce, Maggi seasoning, or Vietnamese dipping sauce (Nước Chấm).
