A warming Lebanese lemon lentil soup (adas bi hamod) made with lentils and silverbeet in a lemony broth. This is a vegan and gluten-free soup.

Lebanese Lemon Lentil Soup (Adas bi Hamod)

Lemon juice (freshly squeezed)

Brown lentils (or green. Cooked)

Silverbeet ((swiss chard) leaves chopped and salks sliced)

Garlic (crushed)

Potatoes

Onion (diced)

Salt (or

Water

Coriander ((cilantro) finely chopped)

Step 1

Over medium heat, in a stockpot, add olive and onion and sweat until softened. Add in garlic and lentils, stir for about a minute.

Step 2

Add potatoes, water and salt, stir through. Cover and cook for about 10 minutes to allow the potatoes to soften.

Step 3

Add silverbeet (swiss chard) and coriander (cilantro), turn heat to a low-medium and cook for about 20 minutes. 

Step 4

Turn off heat and stir through lemon juice. Serve warm.

Lemon Lentil Soup (Adas bi Hamod)

Make this comforting and flavorful salmon chowder.  Using canned salmon makes this dish quick and affordable, while still packing a punch of protein and flavor.

Salmon Chowder

olive oil

onion (chopped)

carrots (chopped)

celery (chopped)

garlic (minced)

cannellini beans (15 ounce cans) (drained)

vegetable stock

water

salt

salmon (4 ounce cans) (drained and deboned)

In a large saucepan heat the olive oil on medium heat for 2 minutes. Add the onion, celery and carrots. Cook, stirring for 5 minutes.

Add the garlic, drained beans, water, stock and salt. Stir to combine. Mix well and bring to boil. Reduce heat and simmer on low for 30 minutes.

Take about 2 cups of the soup out and set it aside. Blend the remaining soup, either with an immersion blender or by putting in a blender.

Pour the reserved soup and the blended soup back into the saucepan. Add the canned salmon. Cook for about 2 minutes to heat through.

Garnish with pepper, croutons or parsley.
