Instant Pot Lentil Soup with Sausage &amp; Kale

Italian sausage

onion

celery (thinly sliced, with leafy tops)

garlic (minced)

bone broth (or chicken stock)

lentils

red pepper flakes

baby kale leaves (loosely packed)

red wine vinegar

Salt and pepper

Hit "saute" button on Instant Pot. Add sausage and cook until meat crumbles and begins to brown, about 5 minutes. Add onion, celery and garlic and cook until softened, about 5 minutes.

Add stock, lentils, red pepper flakes, tomatoes and stir.

Place lid on Instant Pot and make sure the release valve is in the "sealing" position. Press "manual" button and set timer for 12 minutes.

The Instant Pot will warm up for about 10 minutes and then start cooking. After 12 minutes, quick-release by flipping the release valve to “venting."

Add kale and vinegar. Stir to combine and season with salt and pepper, to taste. Sprinkle with chopped parsley before serving.

Easy potato lentil soup with kale (Instant pot &amp; stovetop)

brown lentils

water

lbs potato (around 2 cups chopped potatoes)

kale (chopped)

tomato

onion (chopped)

tsp red chili powder

tsp cumin

coriander powder

thyme

turmeric powder

bay leaves

tbsp oil

salt (adjust according to your taste)

Wash the lentils once or twice with clean water. Drain and keep it aside.

Finely chop the onions, tomatoes, and other veggies if you use them.

Wash, peel, and chop the potatoes into 1 to 1.5-inch cubes.

Prep work

Start Instant pot in saute mode.

Once it is hot, add oil, chopped ginger, garlic, onions, and bay leaves.

Saute the onions for a couple of minutes and add chopped tomatoes.

Let the tomatoes soften a bit and add spice powders - turmeric powder, red chili powder, dried thyme, ground cumin, coriander powder, and salt. Stir everything well.

Now add potato cubes, lentils and mix them once.

To this potato lentils mixture, add water and give a good stir. You can check the salt at this stage and adjust it as required.

Stop the Instant pot saute mode and close it with its lid. Then, seal the vent and start the instant pot again in manual or pressure cook mode. Cook it for 10 minutes on high pressure. 

Once the instant pot finishes cooking, wait for 10 minutes and manually release the pressure. 

To this lentil soup, add chopped kale and stir it well.

Close the instant pot with its lid and let it sit for ten more minutes. The residual heat will cook the kale. Or you can start instant pot in saute mode and let it cook for a couple of more minutes.

Absolutely delicious Instant pot lentil soup is ready to serve!

Instant pot Instructions

Heat a thick-bottomed pot or Dutch oven.

Add oil, bay leaf, finely chopped garlic, ginger, onions, and saute them for 3 to 4 minutes.

To this sauteed onions, add finely chopped tomatoes and let them soften a bit.

Add spice powders - ground cumin, coriander powder, red chili powder, turmeric powder, dried thyme, and salt to the tomato mixture and mix it well.

Then goes the potato cubes, lentils and stir it well.

Add water and cook the lentils over medium heat for around 30 to 35 minutes. Stir the soup in between for even cooking every 10 minutes or so.

By this time, potatoes will also cook thoroughly. If not, you can simmer for a few more minutes.

Now add chopped kale and simmer for a couple of more minutes. The hearty kale lentil potato soup is ready to serve!

Lentil Kale Soup with Potatoes

Dice onion and carrot.

In a large stockpot over medium-high heat, sauté onion and carrot for about 7 minutes. (I use 3 Tbsp. water/broth for no-oil sauté method.)

Meanwhile, mince garlic and dice potato.

Add garlic, potatoes, cumin, and paprika to pot. Stir and sauté 1 minute.

Add 5 cups broth, tomatoes with juice, and lentils (rinsed and drained).

Increase heat and bring to a light boil. Then reduce heat, cover, and simmer for about 25-30 minutes or until lentils are tender.

Meanwhile, roughly tear/chop kale into bite-size pieces, large stems removed.

Stir in kale during the last few minutes of cooking. Salt/pepper to taste as desired.

In a large Dutch oven or heavy pot, cook sausage over medium-high heat until the meat crumbles and begins to brown, about 5 minutes. Add onion, celery and garlic and cook until softened, about 5 minutes.

Add stock, lentils, red pepper flakes and tomatoes and bring to a boil. Reduce to a rapid simmer, partially cover, and cook until lentils are tender, 30-35 minutes.

Add kale and simmer, uncovered, until tender, 2-3 minutes, Stir in vinegar and season with salt and pepper, to taste. Sprinkle with chopped parsley before serving.
