Homemade stevia extract is a simple way to preserve fresh or dry stevia leaf with a delicious flavor and no bitter aftertaste. Plus, it’s budget friendly and easy to use in so many healthy recipes!

With fresh leaf: Wash and remove fresh leaves from the stem. Pick through and remove any brown or wilted ones. Coarsely chop the fresh leaves into smaller pieces before placing them in a clean glass jar.

With dry leaf: Crumble the dry leaves into.a clean glass jar by rubbing them between your fingertips and thumb.

Cover contents completely with alcohol. Place the lid on and secure tightly.

Shake the jar and leave on the counter, out of direct sunlight, for 24-36 hours. Shake occasionally. DO NOT leave the extract to sit for longer than 36 hours.

Strain the leaves out through a fine mesh cheesecloth, nut milk bag, or coffee filter. Squeeze to remove all liquid.

Pour the extract into a small saucepan and very gently heat for 20-30 minutes, stirring often. DO NOT BOIL. Heat just enough so the alcohol evaporates off and liquid reduces in volume.

Let cool and store in the fridge in a small glass bottle, preferably with a tincture dropper.

The Liquid Cocaine is a remnant of the '90s cocktail era—soda guns, sour mix, and drinks with provocative names—that still enjoys some popularity today. There are several varying recipes to be found for the Liquid Cocaine shot, and contrary to what you may have heard from others, we do not agree it's a drink every bartender should know.The peppermint and cinnamon schnapps gives this shooter some brightness in the mouth and some heat to the finish, which may have lent some appeal to the Liquid Cocaine's popularity. As you may have guessed—and despite its incriminating name—this particular Liquid Cocaine drink doesn't have any actual cocaine in it. Instead, it features Jägermeister, cinnamon schnapps, peppermint schnapps and 151-proof rum. The Liquid Cocaine is strong, both in flavor and potency. The below recipe makes enough for two servings, so find an adventurous friend, pour two shots, and enjoy yourself.

Liquid Cocaine

0.5 oz Jägermeister

0.5 oz Goldschläger (or other cinnamon schnapps)

0.5 oz Rumple Minze (or other peppermint schnapps)

0.25 oz 151-proof rum

Add all ingredients to a cocktail shaker with ice, and shake until chilled.

Red onions, quartered

Red peppers, quartered

Garlic bulbs, unpeeled, halved

½ kgs Lamb leg, approx. (Main)

Tbsp Oil

Tbsp Sumac powder

water

g Butter

Milk

Plain flour

tsp Caraway seed

Salt

Place the onion, peppers and garlic on an oven tray. Place the lamb on top. Rub with the oil, sprinkle over the sumac and season with salt and pepper. Pour in the water.

Cover tightly with tinfoil. Place into the oven for 10 hours. Check after five (for peace of mind), then continue for the remainder of the time.

To make the flatbreads — heat the butter and milk in a small pot until the butter has melted. Place the flour, caraway and salt in a large bowl. Pour the milk into the middle and stir vigorously. Knead on a lightly floured bench for 5 minutes. Leave to sit wrapped for 20 minutes.

Divide the dough into 20 small rounds. Roll each one to 5mm thickness and 8cm diameter. Heat a little oil in a frying pan to a high heat. Cook one flatbread for 2 minutes each side until puffed and browned. Adjust the heat if need be, then continue to cook the remainder, two or three at a time.

If reheating the flatbreads, give them 2 minutes in a warm oven.

Remove the lamb from the oven, pour off the juices and reserve the cooking liquid for later. Allow to sit for 15-20 minutes before serving.

Place on a board and shred. Garnish with the oregano and lemon zest. Squeeze the garlic from the bulbs.

Serve the flatbread with lamb, peppers, garlic and a dollop of yoghurt.

Tangzhong is flour cooked with a liquid to create a gelatinous paste that brings softness, tenderness, and added shelf life to bread. This basic tangzhong can be used in almost any bread recipe. Be sure to use flour and liquid from the recipe to make this tangzhong.

Heat the saucepan over medium heat, stirring often to prevent scorching, until the mixture thickens and reaches about 150°F (65°C)
