This low carb keto cauliflower casserole is truly loaded with flavor!

Loaded Cauliflower Casserole

bacon,

cauliflower,

sour cream

mayonnaise

ranch seasoning

black pepper

colby & monterey jack cheese

cheddar cheese

chives, divided

Preheat oven to 370 degrees. Spray a 11Ã7 (you can also use 13Ã9) baking dish with non-stick cooking spray.

Fry bacon in a large skillet until crispy and crumble. Set aside.

Steam cauliflower until tender, about 15 to 20 minutes.

Combine your sour cream, mayonnaise, ranch seasoning, black pepper in a large bowl. Add the steamed cauliflower florets, 1/2 of the bacon, 1 cup sharp cheddar cheese and 3 tablespoons chives; mix well. Transfer mixture to the prepared baking dish and top with your colby & monterey jack cheese and the other half of the bacon.

Cover dish with foil and bake for 20 minutes. Remove foil and bake another 5-10 minutes or just until cheese is bubbly and beginning to brown. Garnish casserole with remaining chives.

Loaded Cauliflower Casserole Recipe

The original Loaded Cauliflower Casserole! This recipe combines all delicious flavors of a twice baked potato, but in a keto-friendly version. With tender cauliflower cooked in chicken stock, cheeses, garlic, crispy bacon, sour cream and fresh green onions, this is the ultimate low carb comfort food.

chicken stock

green onions, thinly sliced

sea salt and black pepper,

Add the chicken stock and garlic to a large pot. Add the head of cauliflower (whole). And steam the cauliflower, covered,  over medium-high heat for about 15 minutes or until the cauliflower is fork tender and soft enough to mash. 

Drain the chicken stock from pan and let the cauliflower sit in the hot pot for a few minutes to help dry out excess moisture. Mash the cauliflower with the cream cheese and sour cream. Once well mashed, mix in half of the cheese, bacon, and green onions (save the other half for the top). Add add salt and pepper, to taste. 

Transfer the mixture to a casserole dish, top with the remaining cheese and bacon and bake uncovered for 15 to 20 minutes. Garnish with the remaining green onions before serving. 

I made this recently and my entire family, including the picky child, really enjoyed it. It's fantastic!

Loaded Cauliflower Casserole with Bacon & Broccoli

A single serving creamy, cheesy Cauliflower Casserole with bacon reminds me of a loaded baked potato. Low carb and incredibly delicious!

Cauliflower Casserole For One

cauliflower florets ((about ¼ of a large head of cauliflower) 6- ounces)

olive oil

salt

heavy cream

garlic powder

bacon

green onions

Preheat the oven to 425° F (220° C).

In a medium-sized bowl, toss the cauliflower florets with olive oil, salt, and pepper.

Transfer the cauliflower to a rimmed baking sheet and spread them into an even layer. Roast the cauliflower for 20- 25 minutes, until the florets are tender and begin to brown. Remove from the oven and set the baking sheet aside.

In the same bowl that you used to toss the cauliflower, whisk together the sour cream and heavy cream. Stir in the garlic powder, ½ of the cheese, ½ of the cooked and crumbled bacon, and 1 tablespoon of chopped green onions.

Add the roasted cauliflower to the bowl and stir.

Transfer the cauliflower mixture to a lightly buttered 10-ounce ramekin and top with the remaining bacon, and cheese. Place the ramekin on a rimmed baking sheet to catch any possible spills.

Bake for 8-10 minutes, until the cheese melts. Top with remaining chopped green onions. Enjoy hot.

This cheesy cauliflower casserole sure doesn't taste like diet food. It's loaded with cheddar, bacon, cream cheese, and sour cream. My kids love this one!

Preheat oven to 350 degrees. Spray a 9x9 baking dish with non-stick spray.

Add the cauliflower to a large microwave safe bowl along with 1 tablespoon of water. Cover tightly with plastic wrap and microwave for 4 minutes or until cauliflower is soft. Drain liquid from bowl.

Mash cauliflower with a potato masher.

Add the cheddar, cream cheese, and sour cream to the bowl and stir well until the cheese has melted into the cauliflower.

Stir in the bacon, green onions, garlic powder, salt, and pepper.

Spread mixture into prepared baking dish and bake uncovered for 20 minutes.

Serve hot.
