For best results, choose adequately ripened pears and a not overly aged pecorino. You need enough sliced pears and cheese to cover the pork loin and “seal” it along with the prosciutto.

Rub the pork loin with salt and fresh ground pepper.

Lay sliced prosciutto on a cutting board, then arrange thin slices of peeled pear on the prosciutto, followed by thinly cut slices of pecorino.

Next place the pork loin on top. Arrange a few slices of pear and pecorino on the top of the pork loin, then wrap the prosciutto around the pork loin. Use the remaining prosciutto if needed to form a lining around the meat.

Carefully tie the pork loin with kitchen twine, making sure it is well secured and snug so it cooks evenly.

Add some oil to a cast iron pot and heat on medium. When the oil is hot, place the pork loin in the pot and cook on each side until the prosciutto is well browned.

Carefully turn the pork loin using two wooden spoons as to not puncture the meat and to avoid letting any juices escape, needed to keep the meat tender and flavorful.

When the meat is browned on every side, including any exposed parts that did not get covered with the prosciutto, add the white wine and reduce. Cover the pot with a lid. Let cook on medium- low heat for about 25 minutes.

Once cooked, let the pork loin rest for at least a half hour inside the pot, or wrapped in a sheet of aluminum foil, before slicing it. This way the meat’s juices will set, leaving it tender and savory.

Pat the pork loin dry with paper towels. Brush the pork loin with olive oil.

Whisk together the pepper, garlic, salt, brown sugar, onion powder, paprika,&nbsp; and cayenne&nbsp;pepper in a small bowl and sprinkle generously all over the pork loin. Save any remaining spice rub for another recipe. Place the seasoned pork loin on a baking sheet and let it sit for at least 20 minutes at room temperature as you preheat your oven.

Preheat the oven to 475° F.

Place pork in oven and roast for 15 minutes.&nbsp;

Lower heat to 350°F, and continue roasting the pork for 45 minutes, or until the internal temperature of the pork loin roast is about 145 degrees F. Allow 10 minutes of rest time before slicing.

How to Roast Pork Loin:

Heat olive oil in a small saucepan over medium-low heat. Add the shallots and cook for about 1 minute to soften.

Add the apples, cranberries,&nbsp;and ginger to the saucepan. Season with salt and cook for about 2 minutes, stirring occasionally.

Stir in the vinegar, maple syrup, garlic, and cayenne pepper, and lower heat to a simmer. Cover and cook for about 30 minutes, or until the apples have cooked down and the chutney is thick and flavorful. Adjust seasoning with salt, if necessary. Remove from heat and set aside to cool.

Score the rind length ways. Rind can be quite hard to cut through, so you will have to carefully use a sharp knife. Make sure to only cut the rind, and not to cut through to the fat and meat underneath.

Pat the rind dry with a paper towel, and salt generously. Make sure to rub salt into the cuts you just made. Then, leave the pork roast to rest uncovered in a refrigerator skin side up for around 24 hours. Make sure to have a look at it once or twice while it rests, and wipe off any liquid that appears. This will ensure that the rind dries out completely.

Preheat your air fryer to 400 F / 200 C.

Transfer the pork roast to the air fryer, skin side up, and air fry until the internal temperature of the pork is 145 F / 63 C. The exact roasting time will vary, but you can find suggested times in the table below.

Remove the cooked pork roast from the air fryer, and leave it for about 15 minutes before you carve and serve.

Place the pork tenderloin on a baking sheet lined with aluminum foil.  Sprinkles with seasoned salt and rub it in.

Slice the tenderloin lengthwise, approximately 1-inch deep.

Slice the cream cheese into strips and press into the slit on the pork tenderloin.  

Top the cream cheese with the sliced pepperoncini.  Set the pork tenderloin aside.

Lay the bacon in strips on the pan with spaces in between. Place the pork tenderloin over the bacon and wrap it (see pics above). 

Cover with foil and bake for one hour.  Remove the top foil and continue to bake for another 20 minutes.

In a large mixing bowl, whisk together the marinade ingredients.&nbsp; Add the pounded pork pieces and toss to completely coat.&nbsp; Cover and marinade for 30 minutes.

Prepare the seasoning: Mince the garlic finely on a large cutting board, then sprinkle with a pinch of kosher salt. Use the knife to press and scrape the minced garlic against the cutting board until you have a smooth paste. Transfer the garlic paste to a small mixing bowl and zest in the orange (save the fruit for later). Add the rosemary, paprika, cinnamon, 1/2 teaspoon black pepper, 2 teaspoons kosher salt, and 3 tablespoons olive oil. Mix into a paste.

Season the pork: Pat the pork loin dry with paper towels. Use a sharp knife to slide under the thin white layer of silverskin and remove it (leave the thicker layer of fat, called the fat cap, on top as it will keep the meat juicy and flavorful as it roasts). Spread the paste all over the pork loin. Set aside at room temperature while preparing the squash and apples, or refrigerate it overnight if you have the time.

Preheat the oven: Arrange a rack in the center of the oven and preheat it to 425°F.

Prep the squash and apples: In a large bowl, season the butternut squash and apple with the remaining 2 tablespoons olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper.

Roast: Set the pork loin in the center of a large roasting pan. Arrange the squash and apples around the pork. Slice the zested orange in half and squeeze the juice from half of the orange over the pork, squash, and apples. Roast for 25 minutes. Reduce the heat to 350°F and roast until the internal temperature of the pork registers 145°F, 30 to 40 minutes.

Rest: Remove the pork from the oven and cover the loosely with foil. Let it rest for 15 to 20 minutes.

Slice and serve: Cut the pork loin crosswise into 3/4-inch-thick slices. Serve with the roasted squash, apples, and a drizzle of the pan drippings over top.
