Preheat the oven to 350 and grease a 9 inch casserole dish.

In a medium bowl combine the almond flour, coconut flour, baking powder and salt. Whisk together and set aside.

In a large bowl combine the eggs, melted butter, sour cream and liquid stevia. Whisk until full incorporated. Add the dry ingredients to the wet in two batches as you combine.

Fold in the cheddar cheese and chopped up baby corn. Transfer to a casserole dish and bake for 37-40 minutes.

Allow to cool for 15 minutes and slice into 12 pieces.

This low carb &#x27;cornbread&#x27; contains no corn at all, but it&#x27;s got a very similar taste and texture! We love to serve this alongside soup or chili.

Preheat oven to 350F.

Whisk all the dry ingredients together in a bowl and set aside.  In a separate bowl, add the eggs, sour cream, swerve and butter, then mix to combine.  Add in the jalapeño peppers, cheddar cheese and baby corn.

Mix in the dry ingredients, just until combined.  Pour the mixture into an 8 X 8 glass or ceramic baking dish that&#039;s been sprayed with nonstick spray.

Optional: Top with the thinly sliced jalapeño pepper rings.   Bake for 40-45 minutes or until a toothpick, when inserted, comes out clean.  Store leftovers in the fridge for several days or freeze.  It thaws and reheats perfectly!

Easy Low Carb Cornbread tastes so much like traditional southern cornbread, but without all the sugar or starch! This delicious comfort food comes together in one bowl and just a few steps.

Keto Cuban Cornbread

With that incomparable cornmeal taste, this low carb cornbread is an actual dream. Think unbelievably tender results... at just 6g net carbs!

Low Carb Cornbread (with actual cornmeal!)

120 g (medium grind!) cornmeal

apple cider vinegar

g golden flaxseed meal

g whey protein isolate

xanthan gum

eggs (at room temp)

1/4-1/2 cup allulose (erythritol

84 g butter (melted & cooled)

See recipe video for guidance (pretty please!). This is truly an easy, no-fuss cornbread recipe, with staple low carb pantry ingredients.

Add cornmeal, heavy whipping cream and apple cider vinegar (or buttermilk!) to a medium bowl. Mix thoroughly and set aside to rest for 20 minutes while you prepare the rest.

Preheat oven to 350°F/180°C. Line a a muffin tray with paper liners (or butter generously!). And yes, this recipe can also be baked in the traditional way- i.e. heat up a cast iron pan in the oven with butter (15 minutes will do), add the cornbread batter and pop back in the oven *right away!*. This will create a delicious crisp, golden crust ;).

Add almond flour, flaxseed meal, whey protein, baking powder, xanthan gum, baking soda and salt to a medium bowl. Whisk until thoroughly combined, set aside.

Add eggs and sweetener to a large bowl and whisk (energetically!) for a couple minutes until airy and lighter in color. Whisk in the butter.

Whisk in the dry flour mixture in two parts, and whisk in the cornmeal &#39;buttermilk&#39; mix.

Divide the batter into the muffin pan (using an ice cream scooper is ace here!). Smooth out the top with a wet spatula (or your fingertips), if need be.

Bake for 24-27 minutes, until golden and a toothpick inserted comes out clean (I do 25 minutes). Watch out after minute 15, and tent with aluminum foil if they begin to brown too quickly (you know, an unfortunate tendency of allulose). I also found that these guys barely collapsed at all while cooling- hurray!

Remove from the pan after 10 minutes and allow to cool completely before digging in for best texture. And if you can&#39;t hold your horses (i.e. you&#39;ve got a big bowl of chili awaiting), at least give them 20 minutes to chill out.

Store in an airtight container for 3-4 days or in the freezer for a couple months. Serve warm with a big pat of salted butter (non negotiable in my book!). 

My top tip: consuming some carbs (such as this low carb cornbread) should have very little impact on your GI if consumed the right way: eat your greens first (I do a small fatty salad with evoo and acv), and be sure to pair it with a fatty main course (i.e. the chili!). Many of you have reported back over the past week that consuming moderate carbs this way barely impacts your glucose levels (needless to say, we&#39;re all different so it&#39;s important that you test what works for you!).

Being a Texan Cornbread is almost a daily staple in our house but..At some point in time you gotta try to watch things. I have tried every low carb recipe there is and you can never make nut flours taste like cornmeal. It will never happen. I'm glad I came across this. To be honest all I had in the recipe line up was almond flour, corn meal, splenda and ground flax eggs and milk and butter extract and baking powder. I went with what I had. I did have to add more milk as ground flax gets pretty thick and earlier I had made peach custard for ice cream so I needed to use up some egg whites. I still added the two eggs but I beat some whites stiff and folded that in the mixture. The result was a light fluffy "almost" "close enough" corn bread not wierdly dense as some almond recipes can get I think stiff whites probably helped not sure it wasnt eggy either. Best thus far. I did in a cast iron skillet old fashioned way got the crusty edges. I did have to turn on broil for a sec to get the top brown. This will be my go to and come Thanksgiving it will be the base to my cornbread dressing minus the sweetner. Thank you. I'm sorry I changed so much of your delish recipe but I HAD to try with what I had. (It's pot o bean night) lol

This is now my "go to" recipe for cornbread muffins. I make it with chili, homemade roasted tomato soup, and sometimes eat these for breakfast with very little rise in my blood glucose. I appreciate having a great tasting cornbread muffin that tastes so wonderful.

This keto cornbread is made with almond flour and a small amount of cornmeal. It&#39;s fluffy and delicious, with just a hint of sweetness.

Fluffy Keto Cornbread

½ teaspoon stevia glycerite (equals 2 tablespoons of sugar)

almond flour (6 ounces)

coarse cornmeal (1 ounce, gluten-free if needed)

baking powder (gluten-free if needed)

Preheat the oven to 350°F. Line the bottom of a small Pyrex baking dish (see notes below) with parchment paper and grease the bottom and the sides with butter.

In a medium bowl, whisk the eggs with the stevia and melted butter.

Whisk in the almond flour, cornmeal, salt, and baking powder. If the batter is very thick and difficult to mix, add 1-2 tablespoons of water.

Transfer the batter to the prepared pan. Smooth the top out with a rubber spatula.

Bake until the bread is golden and set, and a toothpick inserted in the center comes out clean, 20-25 minutes.

Cool the bread for 10 minutes in the pan on a wire rack before slicing and serving.

Made this tonight to go with chili and it checked all the boxes! So happy to have found a cornbread recipe that tastes so good without a ton of carbs. My husband and I have been working hard to lower our A1C and have tried to find healthy versions of our favorite foods, so many many thanks for sharing this recipe.

I made this today and we had it with fried catfish. I halved it to make 6 servings, but I made muffins, and it made 10 of them in my small muffin pans. That is under 2 net carbs a muffin!. I like savory, so omitted the sugar, but I did add 1/4 teaspoon of sweet corn extract for flavor. The cornmeal added that cornbread texture, and the sweet corn extract added the corn flavor.  Note, this bread did not have that almond flour mealy texture. The cornmeal defeated that for not a lot of added carbs.

This is now my go-to cornbread recipe! I might add a bit more sweet corn extract next time...

This recipe turned out delicious.  I used fine white cornmeal as that is what I had on hand, and baked it in my 8 inch cast iron skillet.  Lovely texture and it did not stick in the pan at all.

Everyone raved about this recipe. So good! I've made it many times now and it always comes out perfectly. Of late, I have been adding about a half cup of sour cream! Yum!

Just made this cornbread for a chili party cook-off tomorrow. It was awesome. It really lived up to its name, it was fluffy and I could taste the hint of corn, too. I tried a couple of changes. For the butter I used some leftover butter, a leftover avocado, and finished the half cup with some coconut oil I had around. It tasted fine.  
I made mini-muffin size for the get-together and cooked them the shortest time. The recipe made 24 mini-muffins easily and a bit more.

I was so happy to find a keto corn bread recipe that had actual cornmeal in it.  Satisfying and delicious!

Keto Cornbread

My low carb take on an American classic - Keto cornbread. Crumbly, rich and buttery, just like a good cornbread should be. I added cheese, jalapeños and bacon to this one for extra flavour because we all love Mexican food, right?&nbsp;

Preheat the oven to 350° F / 180C / 160C fan. &nbsp;

Place the bacon on a greaseproof lined baking tray and bake for 20 minutes until crisp. Flip half way through cooking for even crispness! Allow to cool and chop into small bits.   

In a medium bowl mix all dry ingredients - almond and coconut flour, flaxseed meal, whey protein, baking powder, salt. Optional: add  1/4 cup of grated cheese, bacon and jalapenos and stir. 

In a different bowl, beat the eggs with an electric mixer for about 3 minutes until airy and lighter in colour. Add the butter and cream and briefly whisk again until just combined. (Don’t over-whisk or the eggs will deflate!!) 

Add the dry ingredients and fold until fully incorporated.&nbsp;

Pour the batter into a well-greased 10 inch skillet or 9 x 5 inch casserole dish lined with parchment paper.  Optional: top with 3/4 cup of cheese.  

Bake for around 30 minutes or until you can insert and remove a skewer without any crumbs sticking and golden on top. 

Allow to cool slightly before removing from the pan. Place on a wire rack to cool before slicing.&nbsp;

I am a southerner in the USA and I (untypically) am not fond of cornbread, especially the sweet kind. Looking for a substitute that was healthy and diabetic friendly, I found your recipe. I had all the ingredients (I milled my own flax seed) and went strictly by your directions. I added the optional ingredients: the bacon, the cheese, and red and green bell peppers (in lieu of jalapeños). It turned out beautifully. AND AND so very tasty!  I will make this often.
