A fantastic granola that is high in protein and healthy fats, and low in carbs.

Keto Granola

almonds (lightly toasted*)

pecans

sunflower seeds (lightly toasted*)

pumpkin seeds (lightly toasted*)

chia seeds

flax seeds

sesame seeds

Stevia (powdered)

cinnamon

pink Himalayan salt

Preheat oven to 250°F

Line a baking tray with parchment paper or use a silicone liner.

Lightly toast almonds, pecans, sunflower seeds, and pumpkin seeds in a large skillet over medium heat 4-6 minutes. Then transfer to a large bowl and set aside

Lightly toast sesame seeds over medium/low heat for 4 to 6 minutes, until just lightly golden.

Add sesame seeds, stevia, and cinnamon to a food processor and pulse a couple times until powdered and mixed thoroughly.

Add sesame sugar to bowl with nut mix and stir to combine. Set aside

In a separate bowl, beat egg whites with an electric mixer until soft peaks form. Fold gently into granola mix until fully combined.

Spread mixture onto prepared baking tray in a single layer and sprinkle with pink Himalayan salt.

Bake for 45-50 minutes, stir every 15 minutes or so.

Allow to cool completely

Break up in chunks and store in an airtight container for up to a week, in the fridge for 2, or in the freezer for up to 2 months.

Low Carb Granola

/ 150 grams whole almonds

walnut halves

pumpkin seeds

sunflower seeds

flaxseed (milled)

coconut flakes/chips (unsweetened)

/ 80 g smooth almond butter

/ 80 ml water

raspberries

tbsp granulated sweetener (So Nourished)

tsp vanilla extract

Preheat the oven to 150 Celsius / 300 Fahrenheit

Pulse the almonds, walnuts and pecans in a food processor until you have a mixture of smaller and larger pieces.&nbsp;

Repeat the same with the pumpkin and sunflower seeds.&nbsp;

Empty the nuts and seeds into a bowl. Add the rest of the ingredients (only reserve 2 tbsp of the raspberries for later) and mix with a spatula. The mixture should be sticky. If it's still dry, add another tbsp of water.

Press firmly onto a baking sheet lined with parchment paper until you have a flat surface.&nbsp;

Bake for 25-30 minutes until browned. Turn the baking sheet after 20 minutes.&nbsp;

Remove from the oven and let cool. Then break into small pieces, mix the remaining 2 tbsp of freeze dried raspberries and store in an airtight container.

In a 12-inch skillet over medium high heat, melt butter or coconut oil. Stir in swerve and ground cinnamon and stir until the Swerve is melted.

Add coconut, nuts, and seeds and stir to coat them well with the coconut oil and sweetener mix. You want about 2 cups of nuts and seeds total.

Toast for medium low heat 5-8 minutes, until the nuts are toasty and coated with the oil and cinnamon mixture. Stir frequently and do not allow the mixture to burn. Undercook if in doubt, as the mixture will continue to cook with the residual heat even after you take it off the burner.

Tip the mixture onto a quarter inch sheet pan to cool and BE PATIENT. The mixture will crisp up as it cools.

Serve with unsweetened almond milk.

Cup Almonds ((note 1 +3))

Cup Pecans ((note 1))

Cup Walnuts ((note 1))

Cup Coconut ((note 1))

Cup Pepitas ((i.e. pumpkin seeds) (note 1))

Cup Hemp Seeds ((note 1))

Tablespoon Swerve or Lakanto (granular (note 2))

Prep. Preheat oven to 375 F, and line a baking sheet with parchment paper

Combine. Add almonds (1/2 cup) to a food processor and “pulse” 20 times. Add walnuts (1/2 cup), pecans (1/2 cup), and shredded/unsweetened coconut (1/2 cup) to the food processor (if using a different combination of nuts, this is when you&#039;ll want to add softer nuts). “Pulse” 10 times. Add the rest of the ingredients, “pulse” 3 times, just to incorporate. Using a spatula, clean off the edges of the container to incorporate everything, then “pulse” 3 more times. Make sure not to over-process the nuts! (note 4)

Mit diesem Rezept kannst du ein richtig leckeres Low Carb Knuspermüsli mit schokoladigem Geschmack ganz einfach selber machen. Du kannst es perfekt vorbereiten, in einem verschließbarem Gefäß aufbewahren und dann, wann immer dir auch danach ist, genießen.

g Kakaopulver* (entölt*)

g Mehrkomponenten-Proteinpulver* (neutraler Geschmack)

g Sonnenblumenkerne

60 g Kokosraspeln*

g gemahlene Mandeln*

g Chia-Samen*

g Sojaflocken*

100 g Erythrit* (zu Puder gemahlen)

g Fiber Sirup*

Eier

Alle trockenen Zutaten miteinander vermischen.

Eier sowie Fiber Sirup hinzufügen und mit einem Löffel noch einmal alles zusammen vermischen.

Masse auf einem, mit Backpapier ausgelegtem, Backblech verteilen und im Ofen bei 125 Grad Ober- und Unterhitze ca. 90 Minuten trocknen.

Immer nach ca. 20 Minuten im Ofen sollte die Masse immer wieder ein wenig vermischt und auseinander gedrückt werden.

Cup (170 grams) Raw Almonds

Cup (125 grams) Raw Pecans or Walnuts

Cup (150 grams) Raw Hazelnuts

Cup (96 grams) Unsweetened Shredded Coconut

Cup (60 grams) Pumpkin Seeds

Cup (65 grams) Sunflower Seeds

Cup (45 grams) Sesame Seeds

Cup (55 grams) Chia Seeds

Just less than 1/2 Cup (110 grams) NO SUGAR Peanut Butter

(70 grams) Egg Whites

Tsp. (5 grams) Pure Vanilla Extract

***Optional: 1/2 Tbsp Ground Cinnamon

Add all of the nuts, half of the pumpkin seeds, and half of sunflower seeds to your food processor. Pulse to roughly chop nuts/seeds. ***Do NOT over pulse; you do not want a fine meal.

Transfer the mixture to a large bowl. Stir in the rest of the dry ingredients. 

In a separate bowl, whisk the wet ingredients together. Add this to the dry ingredients. Mix together.

Spread mixture in an even layer onto the prepared baking sheet and flatten with your hands and a rolling pin.

Bake for 25 minutes or until golden brown. Remove the tray from the oven and let cool.

Use your hands to break granola apart into pieces. 

Store in cool, dry place in an airtight container.
