Keto Meatloaf

80/20 Ground beef

Onion (diced)

Pork

Worcestershire sauce

Garlic powder

Salt

Reduced sugar ketchup

Preheat oven to 350 degrees F.

In a large bowl combine all ingredients except ketchup. Mix ingredients until fully combined.

Press ingredients into a parchment paper lined loaf pan.

Bake for 30 minutes. After 30 minutes add ketchup on top and bake for 25-35 minutes more.

Remove from oven and let rest for 15 minutes.

Are you more likely to use ground beef or turkey in meatloaf?

This meatloaf was very bland. Ketchup was good so I made more just to give the meat some flavor. Definitely could use some more seasonings.

Made this today using ground turkey instead of beef. It turned out AMAZING. I was little weary about the ketchup but that was also excellent!!!

This Classic Meatloaf Recipe Will Make You Actually Want to Eat Meatloaf.

Big Mac Keto Meatloaf is made with pork rinds and ground beef, stuffed with cheese, and topped with Big Mac sauce for the best low carb meatloaf recipe EVER.

Big Mac Keto Meatloaf

Pork rinds (finely crushed)

Onion powder

American Cheese

Mayonnaise

Dill pickle relish

Yellow mustard

White wine vinegar

Paprika

In a large bowl combine ground beef, pork rinds, egg, Worcestershire sauce, onion powder, salt, and garlic powder. Mix ingredients until fully combined.

Press ½ of the ground beef mixture into the bottom of a parchment paper lined loaf pan. Make a slight indentation in the center of the ground beef leaving a 1 inch edge.

Place cubed American cheese into indentation and the cover with the remaining ground beef mixture pressing it into the bottom half so the meatloaf is sealed.

Bake for 60-70 minutes.

While the meatloaf bakes whisk all of the Big Mac sauce ingredients together in a bowl. Set aside.

When done baking remove the meatloaf from the oven and let rest for 10 minutes.

Remove the meatloaf from the pan and then top with Big Mac sauce.

Lean Ground Beef

Preheat oven to 350F.

In a large bowl, mix together ground beef, egg, almond flour, half and half, tomato paste, Worcestershire sauce, onion powder, garlic powder, salt, and pepper. You will get a loose mixture.

Form into four individual patties. Place a grill rack on to a sheet pan or in a square baking dish. Place the meatloaves on top of this so that the grease can drip down into the baking sheet. If you don’t have fancy contraptions like grill racks that fit into baking pans, don’t worry about it.

Bake at 350F for 20 minutes.

Meanwhile, make the glaze: Mix together tomato paste, water, Stevia, and Dijon mustard and set aside.

Remove the meatloaves from the oven and turn on the broiler. Move the oven rack about 6 inches away from the broiling element.

Cover the tops of the meatloaves with the glaze. Broil for 5-6 minutes until a thermometer inserted into the meatloaves registers 145F and the glaze has browned a little. Serve hot.

Preheat oven

Mix ingredients

In a large bowl, mix onion, ground beef, ground pork, pork panko, red pepper, oregano, parsley, egg and garlic.

Put meatloaf in pan

Place into a 7” round cake pan, loaf pan or casserole dish. Push down to mold meat to fit the loaf pan or dish.

Marinara time

Add of the marinara to the top of the meatloaf and spread to cover evenly. Cover with aluminum foil and place into the oven at 375 degrees for 30 minutes.

Pepperoni

Remove foil, add remaining sauce and ½ of the pepperoni slices. Replace foil and place back into the oven for 20 minutes. 

Finish your pizza

Add cheese and remaining pepperoni to the top of the meatloaf. Place back into the oven for 5-7 minutes, or until cheese is melted. Serve pizza pie style.

Preheat oven to 190C/375. Line an 8in loaf tin with parchment paper and set aside.

In a large bowl, add all ingredients, reserving a ½ cup of cheddar and 1 tablespoon of rosemary. Mix well.

Press

Press the mixture into your prepared loaf tin.

Bake for 30 minutes, then remove from the oven and top with the reserved cheddar and rosemary.

Bake

Bake for another 25-30 minutes until browned and cooked through.

Serve

Cut into thick slices and serve with a side of Broccoli Mash.

This has been my GO TO recipe while on Keto. It’s simple and absolutely delicious. The only thing I changed was omitting the rosemary (I’m not a fan). Otherwise, its the perfect comfort food, especially with the colder months coming. I pair it with cauliflower mash and a side salad. Yum, yum, YUM!

We had never made a chicken meatloaf before. We doubled the recipe and used pepper jack cheese and a few spoonfuls of diced tomatoes with green chilies in the recipe. It was so delicious I could eat the whole thing.
