This roasted zucchini is a low-carb side to any Mexican dish- a great alternative to rice and beans! Easy to make and and jam-packed with flavor similar to Mexican street corn.

Roasted Mexican Zucchini

zucchini (diced)

olive oil

chili powder

garlic powder

cayenne pepper

kosher salt (to taste)

black pepper (to taste)

cotija cheese (crumbled)

juice of 1 lime

cilantro (chopped)

Preheat oven to 425 degrees F and line a rimmed baking sheet with parchment paper.

In a medium bowl, mix the diced zucchini, olive oil (2 tablespoons), chili powder (1/2 teaspoon), garlic powder (1/2 teaspoon), cayenne pepper (1/8 teaspoon), and salt/pepper until well coated.

Spread evenly on baking sheet and roast for 25 minutes, or until zucchini is browned.

Serve sprinkled with lime juice, cotija cheese, and chopped fresh cilantro.

Mexican Roasted Zucchini

Finally--it's the tortilla you've been waiting for!  These low-carb tortillas are simple to make and require only three ingredients, yet they make delicious wraps for sandwiches and burritos! They are suitable for low-carb, ketogenic, diabetic, and LC/HF diets.

Low-Carb Tortillas

mozzarella cheese ((8 ounces))

almond flour

salt

Preheat oven to 375º F.  Cut 5 pieces of parchment about 14 inches long.  Have a rolling pin and 2 cookie sheets available.

Place mozzarella cheese, almond flour and salt in a food processor. Pulse to chop mozzarella and combine all ingredients well. Mixture should appear mealy.

Transfer mixture to a large, heavy saucepan. Heat over low heat while stirring constantly.&nbsp;

As the cheese melts, the ingredients will start to develop a doughy appearance. When it starts to hold together in a ball, turn it out onto a piece of parchment paper.

While the dough is hot, but not hot enough to burn your hands, kneed the dough to completely mix the ingredients. Divide the dough into 4 equal sections. Place three of the sections back in the warm pan (but not over heat) to keep them warm while you work.

Form one section into a ball and place on a piece of parchment paper.  Pat into a disk shape, then cover with another piece of parchment.  Using the rolling pin, roll into about a 9 inch circle. &nbsp;Place the circle of dough on half of the parchment lined baking sheet. Set aside.

Repeat for the second ball of dough and place it on the other side of the baking pan. Repeat for the other two pieces of dough.

Bake the tortillas for 5-7 minutes&nbsp;or until the outside edges just begin to brown. Watch them carefully as it is easy to burn them. Allow them to cool slightly before gently loosening them with a spatula and removing them from the pan.

Fill tortillas with filling of choice while they are slightly warm for best results. Refrigerate any extras in an airtight container. Warm leftover tortillas gently before using.

Instapot Tacos al Pastor- Low(ish) Carb

pork

tsp mineral salt

onion

garlic (smashed with knife and then minced)

oregano

tsp cumin

cloves

Tbsp achiote paste

smoked pepper blend

tsp pepper

vinegar (white distilled or sherry vinegar)

quince paste (alternative of pineapple)

liquid left

pickled red onions and cilantro (optional additions/garnishes)

Add the cubed pork to the instapot, sprinkle with salt and add 3/4 cup water.&nbsp; Close lid and turn instapot setting to meat for 30 minutes

About 10-15 minutes before instapot pork is done, start the onion-spice mixture.&nbsp; Add oil to a large skillet and turn to med-high heat.&nbsp; Add chopped onion and saute for about 5 minutes or until caramelized. Add mashed garlic and cook 30 seconds.&nbsp; Add all spices (through pepper) and stir into onion mixture for 30 seconds to toast and blend.

Add vinegar to hot skillet mixture.&nbsp; Add quince paste and melt into the onion mixture, stirring in thoroughly.&nbsp;&nbsp;

When instapot pork is done, open and remove liquid (pork juices and water) from bottom of instapot and add to onion mixture in skillet over med-high heat.&nbsp; Add pork chunks and stir thoroughly, coating pork cubes with onion-spice mixture.

Serve in low carb tortillas with pickled onions and cilantro garnish.

This pulled pork casserole is a delicious comfort food made with leftover Mexican pork carnitas loaded with your favorite flavors.

Pulled Pork Casserole

tbsp Butter

Garlic (crushed)

Green Pepper (diced)

Zucchini (diced)

Pepper (ground)

Salt

Cauliflower (riced)

oz Low Carb Pork Carnitas

Lime

serves Low Carb Enchilada Sauce

tbsp Cilantro (chopped)

Cheddar Cheese (grated)

Tomato (diced)

Scallions (sliced)

Place a large pan over medium heat.

Add the butter, garlic and green pepper and saute for 5 minutes.

Add the zucchini, salt and pepper and continue to cook for 3 minutes.

Add the cauliflower rice and continue to cook, whilst stirring for 5 minutes.

Add the Low Carb Pork Carnitas and lime juice and stir well before adding the Low Carb Enchilada Sauce. Bring the pan to a simmer and continue to cook for 5 minutes.

Sprinkle the cilantro and cheese over the casserole. Remove from the stove top and broil until the cheese had melted.

Garnish with the diced tomato and sliced scallions and serve.

These lemon butter fish tacos are loaded with fresh ingredients and perfectly seasoned plump fish. And don&#039;t forget to serve them with my creamy and spicy chipotle crema for a serious flavor boost.

Easy Lemon Butter Tilapia Fish Tacos

In a small bowl, combine melted butter with olive oil and sea salt, lemon juice, and zest. Stir to combine.

In a separate bowl, combine salt, paprika, garlic powder, onion powder, and black pepper.

Evenly sprinkle spice mixture onto both sides of fish fillets.

In a large, heavy pan over medium-high heat, heat olive oil until hot. Cook 2 fish fillets at a time to avoid overcrowding, which allows for even browning. Cook each side 3 to 4 minutes just until fish becomes opaque, feels somewhat firm in the center, and is browned.

Lightly drizzle some of the lemon butter sauce as you cook, reserving the rest for serving.

Drizzle fish with remaining lemon butter sauce.

In a food processor or blender, combine crema, chipotle in adobo and sauce, lemon zest and lemon juice, water, and salt until smooth; transfer to a small bowl.

Flake fish with a fork into pieces.

Heat corn tortillas on a griddle. Fill with fish pieces and serve tacos with chipotle cream sauce and garnish with toppings of your choice.

This delicious Mexican inspired keto nachos recipe is made with pork rinds instead of corn chips. They are quick and easy to make with just 2g net carbs, and super tasty.

Keto Nachos (2g Carbs)

Olive Oil

½ Red Onion (diced)

Basic Ground Beef

Taco Seasoning

Keto Enchilada Sauce

Salt (to taste)

Pepper (to taste)

Pork Rinds

Cheddar Cheese (shredded)

Black Olives (sliced)

Scallion (sliced)

Sour Cream

Heat

Place a nonstick frying pan over high heat.

Saute

Add the 1 tablespoon Olive Oil and half of the ½ Red Onion, saute for 1 minute.

Add the 7 ounces Basic Ground Beef, saute until brown before adding the 2 teaspoons Taco Seasoning, and mix well.

Season

Saute for another minute before adding the ⅓ cup Keto Enchilada Sauce. Add Salt and Pepper to taste and mix well.

Remove

Preheat

Preheat your broiler/grill to high or around 200c/390F.

Spray a sheet pan with olive oil and evenly spread out your 3 ounces Pork Rinds.

Spoon

Gently spoon over the ground beef mixture and sprinkle over the ½ cup Cheddar Cheese.

Grill

Broil/Grill until the cheese is melted and bubbling - about 5-8 minutes.

Topping

Sprinkle over the remaining diced onion, along with the ¼ cup Black Olives, 4 tablespoons Tomato, and 1 Scallion. To make fancy stripes with your ¼ cup Sour Cream, add it to a sandwich bag, snip off the corner and pipe it over your nachos.
