What vegetable do you like swapping for tortillas?

Made these tonight for the family and it was a nice change from traditional tacos.  I'm trying to cut back on gluten and this is a yummy alternative to shells and tortillas... even my picky husband was happy and full!

These were absolutely delicious. And so easy to make.

Upgrade Your Taco Tuesday With These Amazing Tomatoes

Taco Stuffed Avocados. The perfect low carb Taco! These avocados are loaded up with the BEST taco meat, cheese, tomatoes, lettuce and a dollop of sour cream. Perfect for an easy lunch or light dinner.

Taco Stuffed Avocados

tbsp Chili Powder

Salt

Cumin

½ tsp Dried Oregano

¼ tsp Garlic Powder

¼ tsp Onion Powder

tomato sauce

avocados halved

cheddar cheese (shredded)

cherry tomatoes (sliced)

lettuce (shredded)

cilantro

Add the ground beef to a medium size sauce pan. Cook over medium heat until browned.

Drain the grease and add the seasonings and the tomato sauce. Stir to combine. Cook for about 3-4 minutes.

Remove the pit from the halved avocados. Load the crater left from the pit with the taco meat. Top with cheese, tomatoes, lettuce, cilantro and sour cream.

If you want to make a larger area in the avocado for the toppings, spoon out some of the avocado and set aside to make guacamole! Then fill with toppings.

Turkey taco lettuce wraps are my go-to recipe when I want to eat something easy, delicious and light, and of course, healthy and low-carb! I forgo the taco shells and use lettuce leaves instead, and don't even miss them!

Turkey Taco Lettuce Wraps

99% turkey

garlic powder

tsp cumin

salt

tsp chili powder

paprika

oregano

onion

tbsp bell pepper (minced)

water

lettuce leaves lettuce

shredded reduced fat cheddar (omit for Whole 30)

Brown turkey in a large skillet breaking it into smaller pieces as it cooks.

When no longer pink add dry seasoning and mix well.

Add the onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.

Wash and dry the lettuce.

Divide the meat equally between the 8 leaves and place in the center of each leaf and top with your favorite taco fixings!
