This 9-ingredient Low FODMAP Chicken Cacciatore features tender, juicy chicken and a savory, tomato-olive sauce. Enjoy this easy recipe with mashed potatoes, rice, or whole-grain polenta.

Low FODMAP Chicken Cacciatore

olive oil

chicken thighs

carrot,

red bell pepper, diced

dry white wine (or low FODMAP broth)

tomatoes

oregano

capers

kalamata olives

In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper. Once the pan is hot, sear each side for about 2 minutes.

Add carrot, bell pepper, white wine, tomatoes, and oregano. Stir and bring to a brief boil. Reduce heat and simmer for 15-25 minutes, or until chicken is cooked. Cooking time will vary depending if boneless or bone-in chicken is used. Chicken is done when a food thermometer inserted into the thickest part reads 165°F.

Stir in capers and kalamata olives and continue heating until everything is warm.

Serve warm with optional garnishes of basil or parsley.

This was SO good!! I am amazed at how flavorful it is and I can't wait to make it with mashed potatoes next time! The best part was I could eat with confidence and not worry about it "hurting" me.  Thank you for sharing this wonderful recipe.

One Pot Low FODMAP Chicken and Rice

Place the chicken breasts between two pieces of plastic cling wrap and pound them down to make them even in thickness. This will help the chicken cook evenly and make for more tender chicken. Sprinkle each side of the chicken with salt, pepper, 1 teaspoon cumin and 1 teaspoon paprika.

Melt the coconut oil in a large skillet...

Melt the coconut oil in a large skillet over a medium high heat on the stove. Add the chicken breasts and cook each side for 5-7 minutes or until browned on each side. Remove the chicken from a skillet and set aside on a plate. The chicken doesn't need to be fully cooked yet because you'll be returning it to the heat shortly.

Add the chopped bell peppers, tomato, and ginger to the same skillet and sauté for a few minutes to soften. Add the the remaining 3/4 teaspoons of cumin and paprika along with the turmeric powder to the skillet. Mix the spices into the vegetables to coat.

Stir in the uncooked rice and mix until...

Stir in the uncooked rice and mix until the rice is coated with both spice and vegetables. Pour the stock into the skillet and cover the rice. Carefully add the chicken back into the skillet, cover with a fitted lid and simmer over a medium-low heat for 20 minutes until the liquid is almost absorb. Stir the spinach into the pot, cover and cook until the liquid is fully absorbed and the spinach is wilted.

Garnish with freshly chopped cilantro and serve.

Place the thighs, skin side down on a large, cold non-stick skillet. Turn the heat up to a medium high and cook for about 4-5 minutes or until the skin is nice and golden. Flip, and cook the other side about 3-4 minutes.

Add a couple extra sprigs of rosemary if you wish and then place your dish in the oven. Bake for an additional 25-30 minutes or until cooked through: an internal temp of 165°F/75°C.

Low FODMAP Instant Pot Chicken Cacciatore

chicken thighs (about 1 to 1.25 pounds)

kalamata olive halves

Salt and pepper

Select the “Saute” setting on the Instant Pot. Once hot, add oil and chicken. Saute the chicken for 1-2 minute per side.

Cancel the “Saute” setting. Add carrot, bell pepper, tomatoes, and oregano. Place lid on top of Instant Pot and secure. Set vent to “Sealing”.

Select the “Meat” setting on the Instant Pot. Adjust the time to 20 minutes on “High Pressure” and cook. After cooking, let the pressure naturally release for 15 minutes. Carefully switch the vent to “Venting” to release any remaining pressure. Remove lid.

Stir in capers and kalamata olives. Adjust flavor with salt and pepper.

Serve warm over rice, polenta, or baked potato and top with basil or parsley.

Looking forward to making this delicious - looking recipe. I did have one concern: For me, a pack of 4 chicken thighs is closer to 2 pounds than 1. How significantly would using 4 chicken thighs mess up the recipe? Doing this recipe with less just doesn't seem worth it. Thanks!

My husband is allergic to a large number of foods in addition to having to eat gluten free, dairy free and low FODMAP, so cooking at home is essential and trying to add variety to our meals is a challenge.   I made this recipe tonight and we both loved it!   Easy and delicious!  I'm going out of town soon and was planning menus to make ahead and leave for my husband to eat.
