Preheat oven to 200C/180C fan forced.

Heat oil in a wok or large deep frying pan over medium-high heat. Add chicken and stir-fry for 5 minutes or until golden. Add garlic and stir-fry for another 30 seconds or until aromatic. Arrange corn chips on a large baking tray and top with the firecracker chicken, then sprinkle with mozzarella. Bake for 8-10 minutes or until the cheese is melted and bubbly.

Meanwhile, to make sriracha mayo, combine mayonnaise and sriracha in a small bowl.
Step 5
Drizzle nachos with the sriracha mayo and a little extra sriracha, if using. Scatter with shallots and jalapeños. Serve immediately.
