A sweeter version of the classic Caribbean baked macaroni and cheese dish.

Caribbean Macaroni Pie

elbow macaroni (uncooked)

eggs

evaporated milk ((measure

cheddar cheese (grated, reserve 1/2 cup for topping)

white pepper

brown sugar

salt (to taste)

Preheat oven to 350°F.

Boil macaroni in salted water approximately 8 minutes, or according to package instructions. Once cooked, drain and set aside.&nbsp;

In a large bowl, beat eggs until fluffy.

Add milk, pepper, sugar and salt and stir until combined.

Stir in 3 cups of cheese, and the cooked macaroni.

Pour into a greased, 9x11 baking dish and top with reserved 1/2 cup of cheese.

Bake until firm, 35-40 minutes.

Allow pie to rest for 10-15 minutes before serving.

Trinidad macaroni pie is a classic Caribbean comfort food that is not only easy to make, but delicious served hot, cold, or at room temperature. Serve it as a main dish for a simple lunch, or as a side dish with spicy stewed meats or fish like they do on the islands. I even love eating a cold square of macaroni pie for breakfast!

Trinidad Macaroni Pie

(2 cups) dry elbow macaroni

unsalted butter

onion

(12 fl oz) can evaporated milk ((1 ½ cups))

sour cream

mustard mustard

salt

black pepper

sharp cheddar cheese, grated ((about 3 cups))

scallions, thinly sliced

cayenne pepper

Preheat the oven to 375°F with the rack in the center. Grease a 2 quart baking dish and set aside.

Cook the elbow macaroni in a pot of salted boiling water until just shy of al dente (about 5 minutes). Drain and return to the pot off the heat.

In a skillet over medium heat, melt the butter and add the onion. Stir and cook for about 5 minutes or until translucent. Add the cooked onions to the pot of drained macaroni.

In a medium mixing bowl, whisk together the eggs and the evaporated milk. Whisk in the sour cream, dry mustard, salt, and pepper. Add to the pot of macaroni and give it a good stir. Add all but ½ cup of the grated cheddar to the macaroni, along with the scallions and hot sauce and stir to combine.

Pour into the prepared baking dish and sprinkle the top with the reserved ½ cup cheddar cheese. Bake for 35 to 45 minutes, or until the top is golden brown and edges are bubbly.

Cool the pie for 10 to 15 minutes, then cut into squares and serve. You can also enjoy the pie cold the next day, Caribbean style.

A true Trinidadian comfort food. Similar to your beloved Mac and cheese but more like a casserole. Use this recipe as a guide and add what you like and eliminate what you don&#039;t .

evaporated milk (heavy cream

eggs (whisked)

garlic (minced)

tsp onion powder onion

Tbsp ketchup

tsp yellow mustard

tsp black pepper

Preheat oven to 350 degrees

Bring a large pot of water and 1 Tablespoon of salt to a boil.  Add in the pasta and cook until al dente about 8-10 minutes following package directions

Meanwhile In a large bowl, mix eggs, milk, garlic, onion powder, ketchup, mustard and black pepper.

When pasta is ready drain it an put it back in the pot.  Add in the butter and mix well.

Add in 1 lb of the cheese. Just half of it and mix until combined.

Add in the egg and milk mixture and stir again.

Grease a 9x13 or 2 quart casserole dish and pour the mixture into the dish

Top with the other half of the cheese.

Place into the oven and cook until golden brown.  This should take somewhere between 35-45 minutes.

Remove from oven and let it cool, cut into squares and serve with a side of ketchup.
