Air Fryer Maduros That Are Cooked Like Tostones

yellow plantain

Peel your plantain and cut it into 1-inch (2.54 cm) thick coins.

Put the slices on an air fryer rack in a single layer and brush with 1 teaspoon of olive oil.

Air fry the plantain slices for 5 minutes at 350°F (175°C).

One at a time, smash each slice by placing it between two plastic baggies and gently smooshing with a cast iron pan. The baggies help to prevent sticking. Do not use a tortilla press for this!

Lay the smashed slices in a single layer on your air fryer racks. (You may need to cook them in batches if you have a small-capacity air fryer.) Brush the tops with 1 teaspoon of olive oil.

Air fry the smashed plantain slices for 5 minutes at 400°F (200°C).

Remove the plantain slices from the air fryer and flip them over. Brush the sides of the slices that are now facing the top with 1 teaspoon of olive oil.

Put the air fryer trays back in the oven, switching their position in the oven. Air fry for 8 minutes at 400°F (200°C). (Note: air fryer cooking times may vary; feel free to adjust the cooking times listed here as needed.)

Remove the maduros from the oven after air frying. Sprinkle them with the smoked salt while they are still hot. Enjoy!

To the bowl of a food processor, add the cilantro, culantro, onion, red and green bell peppers, garlic, oregano, and cumin. Pulse until combined. The sofrito should have the consistency of a tapenade.

Heat ¼ cup (60 ml) of canola oil in a large pan over medium heat. Once the oil is shimmering, add the sofrito and fry, stirring constantly, until deepened in color but not brown, about 3 minutes. Add the olives to the pan and stir to combine.

Add the ground beef to the pan and cook until no longer pink, about 7 minutes. Season with the ½ teaspoon salt.

Add 1 teaspoon of adobo seasoning, the Sazón seasoning, and the tomato sauce and stir to combine. Cook, stirring occasionally, until most of the liquid is absorbed into the meat, about 7 minutes. Transfer the beef mixture to a medium bowl with a slotted spoon, discarding any excess liquid. Wipe out the pan with a paper towel and set aside.

Peel the plantains, cut in half crosswise, then slice each half lengthwise to get 4 thin slices.

Heat the remaining cup of canola oil in the same pan over medium-high heat until the oil starts to shimmer. Test one plantain slice in the oil--if it bubbles and sizzles, the oil is ready.

Fry the plantains in batches until they are lightly browned on the edges and tender in the centers, 4–5 minutes, turning occasionally with a fork. Transfer to a paper towel-lined plate to drain. Season on both sides with salt.

Arrange a single layer of plantains in the bottom of an 8-inch square baking dish. Using a slotted spoon, top with about half of the meat mixture. Sprinkle 1 cup of mozzarella over the meat sauce. Repeat with more plantains, the remaining meat sauce, and another cup of mozzarella. Finish with the remaining plantains.

In a medium bowl, beat the eggs with the remaining teaspoon of adobo seasoning.

Pour the egg mixture over the plantains, then cover the baking dish with foil.

Bake the pastelón until the eggs are set and the cheese is bubbly, about 25 minutes. Remove from oven and turn the oven to broil. Uncover the dish and sprinkle the remaining cup of mozzarella over the top. Broil for 5 minutes, or until cheese on top is golden brown. Let rest for 10 minutes before serving.

Peel and cut each ripe plantain diagonally into 1/2-inch thick slices.

In a nonstick skillet, heat oil over medium-high heat. Pan-fry the sliced plantains for 2-3 minutes per side until they&#039;re golden brown and the edges are crispy.

Transfer them to a paper towel-lined plate to drain and season them with salt. Serve immediately. Enjoy!

Traditional Dominican Green and Yellow Fried Plantains with Mojo Sauce

Heat the oil on medium heat. Two Separate skillets.

While the oil is heating up, peel the plantains.

Cut green plantains into about 1 inch circles.

Cut yellow plantains in thinner diagonal slices.

Fry green plantain for about one minute each side and set aside.At the same time, fry yellow plantain until each side is nice and golden. Set aside until serving.

Take the green plantain circles and flatten them. (You can smash them with the bottom of a plate, pan or cup)

Put the flattened plantains back in the oil and fry for another 2 to 3 minutes until nice and crunchy.

Remove the plantains and drain on paper towels.

In a small bowl, mix oil, cilantro and garlic.

Serve with plantains.

Prep the plantains

. Slice the plantains on a bias, at an angle, about 1/2-inch thick (as illustrated in images). Set the sliced plantains aside on a plate/platter or small baking sheet.

Fry the plantains

. Heat the oil in a large non-stick skillet over medium heat. Once the oil is hot and shimmering, add the plantain slices into the skillet- working in batches, careful not to overcrowd. Fry the plantains until golden brown and slightly crisp, about 2-3 minutes on each side. Use a slotted utensil (I like to use a fish spatula) to gently flip the plantains while frying; careful not to handle them too aggressively as they&#8217;re super tender.

If you notice your plantains are browning too quickly, reduce the heat to medium-low. I find 2-3 minutes on each side to achieve perfectly crispy yet nice, tender-in-the-middle plantains. However, you can fry your plantains until they reach your desired level of doneness- just look for them to be caramelized on the outside with a buttery center.

Serve

. Set the fried sweet plantains onto a paper towel-lined plate to sop up any excess oil. Season the plantains, if desired. I like to sprinkle them with a mix of cajun seasoning and brown sugar- the perfect savory/sweet combo. Serve plantains immediately as a snack or alongside your favorite main entrees. Enjoy!
