A healthy, vegetarian salad that is better-than-take-out! Asian Chopped Salad and Peanut Ginger Dressing is filled with gut-friendly foods so is something to feel good about. Chopsticks optional.

Asian Chopped Salad Peanut Ginger Dressing

Peanut Ginger Dressing

ginger, peeled, chopped (or a 2-inch piece ginger root)

rice wine vinegar

canola oil

soy sauce

sesame oil

peanut butter

Siracha sauce

orange zest

coriander

Asian Chopped Salad

red cabbage, chopped, about ½ head

green onions, sliced, use most of the onion

cucumber, ¼” dice

orange, peeled and diced (save some of the peel

carrot, shredded

edamame, steamed

peanuts

Combine

all dressing ingredients in a blender or food processer and blend until smooth.

Assemble

salad ingredients in a large bowl. Drizzle dressing over salad and toss to coat.

A summery antipasto-like pasta salad flavored with feta cheese &amp; kalamata olives that makes a perfect one dish dinner. Omit salami to make this a side dish for grilled foods.

Greek Style Pasta Salad with Green Beans &amp; Tomatoes

lemon juice (about 1 large lemon)

apple cider or rice vinegar

garlic (minced)

oregano (minced (or 1 teaspoon dry))

Dijon mustard

salt and black pepper

olive oil

pasta (any shape)

green beans

onion

cherry tomatoes (or diced plum tomatoes)

feta cheese (crumbled)

salami

Kalamata olives

Cook pasta according to package, but set a timer for halfway done. At the half point, add the prepared green beans to the pot and continue cooking for 4-5 minutes (note: we like our beans crisp - you can add yours along with the pasta if you want them to cook the full 10 minutes). Drain pasta with beans and rinse thoroughly with cold water.

Meanwhile, make the vinaigrette dressing: Mix lemon juice, vinegar, garlic, oregano, mustard, salt and pepper together and then whisk in the olive oil until well combined. Set aside.

Add the pasta and beans to a large bowl and mix with half of the dressing to absorb while prepping the other ingredients.

Add the remaining ingredients to the bowl as you prep them and toss everything with the rest of the dressing.

Serve immediately.

Use this spicy chipotle rub when you grill chicken for an easy way to to add explosive flavor! Then use the chicken to top a southwest inspired salad with black beans, corn, and guacamole for a main dish salad everyone will love.

Chipotle Spice Rubbed Grilled Chicken Salad with Guacamole, Corn &amp; Black Beans

chipotle

½ tablespoons kosher salt, ((or 2 ½ teaspoons sea salt))

paprika

black pepper

rosemary

thyme

garlic powder

onion powder

boneless chicken thighs (or 3 boneless chicken breasts*)

lettuce

corn

guacamole

salsa

Prepare spice rub by mixing all the spices and seasonings together in a small bowl.

30 minutes to up to 4 hours before grilling, rub the chicken all over with the chipotle spice rub and place in refrigerator.

Spice Rub Marinade:

Grill the chicken over medium heat, about 8-10 minutes on each side, or until the thickest part of the meat reads reads 165°F on a thermometer. *

Serve on it's own or slice the chicken for the salad.

Grill Chicken:

Prepare salad by dividing the lettuce between 4 to 6 plates.

Evenly distribute the remaining salad ingredients, except the guacamole and salsa, on top of the lettuce (alternately, layer the salad ingredients on a large platter).

Keep plates refrigerated while the chicken cooks and then divide the sliced chicken among the plates. Top each with a dollop of guacamole.

Serve with salsa and tortilla chips.

A new and refreshing take on tuna salad, this easy recipe works for lunches and dinners and makes meal prep a breeze.

Greek Tuna Salad Recipe

water-packed tuna (drained)

jar marinated artichoke heart quarters (drained)

(halved kalamata olives)

feta cheese

garlic

red onion onion

red wine vinegar

salt

flat-leaf parsley

In a medium bowl combine all ingredients except the lettuce.

Add a couple lettuce leaves (or chop it for easier eating, if desired) on six individual plates (or one large platter for serving family-style as a dinner). Spoon tuna salad on top.

Alternately, for a brown bag lunch, pack the tuna into one container and the lettuce into another and spoon tuna on top of lettuce at lunch time.
