Borani Banjan (Eggplant with Yogurt Sauce)

Yogurt Sauce:

plain Greek yogurt

garlic clove, minced

Eggplant:

peanut oil

eggplant, ends

yellow onion, thinly sliced

fresh tomatoes, chopped

Step 1

Combine the Yogurt Sauce ingredients together in a small bowl. Cover and refrigerate until ready to use.

Step 2

Heat the oil in a large saute pan over medium heat. Generously season the eggplant rounds with salt and pepper on both sides. When the oil is hot fry the eggplant until lightly browned, 3 to 4 minutes per side. Transfer the eggplant to a paper towel lined plate and set aside.

Step 3

Add the sliced onion to the pan and cook, stirring occasionally, until lightly browned, about 5 minutes.

Step 4

Add the chopped tomatoes, garlic, and 1/4 tsp salt to the onions and stir to combine. Cover the pan and reduce heat to medium-low. Simmer with the lid on for 5 minutes. Season onions and tomatoes with salt & pepper to taste.

Step 5

Add the water to the pan and increase heat to medium. Place the fried eggplant on top off the onions and tomatoes and sprinkle the red pepper flakes on top. Continue to simmer, uncovered, until the liquid has evaporated, about 10 minutes.

Step 6

Transfer to a serving plate and top with the yogurt sauce.

Spaghetti tossed with a creamy garlic and cheese sauce made of mozzarella, fontina, and freshly grated Parmesan.

Three Cheese and Garlic Spaghetti

unsalted butter

heavy cream

TBSP parsley

Cook spaghetti according to package directions. Drain the pasta and set aside reserving 1 cup of the pasta water.

Melt the butter with the oil in a large saute pan over medium heat. Add the garlic to the pan and stir while cooking until fragrant, about 10 seconds. Stir the heavy cream into the pan and bring to a slight boil. Reduce heat to low and stir in the cheeses until melted and well combined.

Take the pan off the heat and add the cooked spaghetti, toss to combine. Stir in reserved pasta water a little at a time until you reach a desired consistency. Stir in the fresh parsley and season with salt & freshly ground pepper.

Slow Cooker Carolina Pulled Pork Sandwiches

THE VINEGAR BBQ SAUCE:

apple cider vinegar

TBSP raw honey

tsp salt

THE PORK:

pork shoulder

TBSP peanut oil

THE RUB:

tsp black pepper

dry mustard

SPICY MAYO COLESLAW:

green cabbage,

mayonnaise

FOR SERVING:

hamburger buns or split rolls

Mix the BBQ SAUCE ingredients in a saucepan. Bring to a boil over medium-high heat, stirring often, until everything is dissolved and well combined. Take off the heat and let cool to room temperature. When cool pour the sauce into a jar and seal with a lid, refrigerate until ready to use.

Pat the pork dry with paper towels and set aside.

Mix THE RUB spices together in a small bowl. Rub the pork all over with the spices and set aside.

Heat the oil in a dutch oven over medium-high heat. When oil is hot sear the pork until well browned on all sides, 2 to 3 minutes per side.

Turn off the heat and transfer the pork to a 6-quart crock-pot. Add the 1/4 cup of apple cider to the dutch oven and use a wooden spoon to scrape the bottom to release any stuck on bits. Pour the liquid from the dutch oven into the crock-pot over top of the pork.

Place a lid on the crock-pot and cook on LOW for 8 hours or until pork is very tender.

Step 7

Transfer the pork to a large plate. Shred the pork using two forks and discard any bones. Return the shredded pork to the slow cooker and stir to combine with any liquid in the slow cooker.

Step 8

Take the BBQ sauce out of the fridge and shake well. Pour some of the sauce into the slow cooker with the pork (your desired sauce to pork ratio) and stir to combine. Season with salt & pepper to taste.

Step 9

Combine the SPICY MAYO COLESLAW ingredients together in a large bowl. Let sit for 10 minutes then season with extra salt & pepper to taste.

Step 10

Serve the pulled pork on the buns with the coleslaw and the remaining BBQ sauce on the side.

Chicken and Broccoli Noodles in Garlic Sauce

CHICKEN AND MARINADE:

egg,

soy sauce

cornstarch

chicken

SAUCE:

TBSP rice vinegar

TBSP sesame oil

tsp crushed red pepper flakes

NOODLES AND STIR-FRY:

linguine noodles

broccoli head,

salt & black pepper

In a large bowl mix together the egg, 1 tsp soy sauce, and 1 tsp cornstarch until combined. Add the chicken pieces to the bowl and stir to coat then set aside.

In a small bowl mix together the sauce ingredients (garlic, 1/4 cup soy sauce, 1/4 cup water, 1 TBSP rice vinegar, 1 TBSP sesame oil, 1 TBSP cornstarch, and 1/2 tsp crushed red pepper) until well combined then set aside.

Cook the noodles according to package directions then drain and set aside.

Heat the 1 TBSP of peanut oil in a wok over high heat.

Add the chicken and marinade to the wok and stir-fry until chicken is no longer pink, 4 to 5 minutes.

Add the broccoli florets to the wok and stir-fry for about 30 seconds.

Pour the sauce and cooked noodles into the wok and stir-fry for about 30 more seconds.

Take the wok off the heat and season the stir-fry with salt & pepper to taste.

Creamy Polenta and Meat Ragu

Ragu:

tomato sauce

14.5 oz can of roasted diced tomatoes

carrots

red wine

tsp pepper

TBSP dried parsley

TBSP cooking oil

Polenta:

cornmeal

mozzarella cheese, shredded

Heat oil in a dutch oven over medium-low heat. Add the onions, carrots, salt and thyme and cook stirring occasionally about 5 minutes or until veggies are tender.

Add the ground beef and cook while breaking it up in the pan about 3 minutes or until no longer pink.

Stir in the garlic and cook for 30 seconds or until fragrant. Stir in the tomatoes, tomato sauce and wine. Cover the dutch oven and cook for about 10 minutes stirring occasionally.
