Mango Chicken Meal Prep Bowls

chicken breasts, sliced in half lengthwise ((or 4 chicken cutlets))

avocado, sliced

coconut

cilantro,

mango

olive oil

lime juice

tbsp honey

tbsp Sriracha

garlic

salt

corn

black beans,

red pepper, diced

red onion, diced

tbsp chopped cilantro

jasmine rice

Preheat BBQ to med-high heat (alternatively, preheat oven to 425 F). Cook rice in a rice cooker according to package directions.

Blend ingredients for mango marinade together in a blender, then divide marinade into two separate bowls. Marinate chicken cutlets in the one bowl of marinade for 10 min while leaving the other bowl untouched (do not get this near the raw chicken!)

Meanwhile, mix together ingredients for corn salsa.

Add chicken to grill and cook for 5 min per side (alternatively, bake for 12-15 minutes). Remove from heat. Divide rice among four glass meal prep bowls. Add 1 piece of chicken to each bowl and top with extra reserved mango sauce, corn salsa, shredded coconut and cilantro. Add slices of avocado and refrigerate up to 5 days.

Coconut Mango Chicken Meal Prep Bowls

Sweet champagne mango paired superbly with creamy haas avocados and California grilled chicken for a sweet-savory salad that won't disappoint. This meal is ready in minutes, perfect for a hot summer day or night!

Grilled Chicken Avocado and Mango Salad

oz grilled chicken breast (sliced (from 1 lb raw))

avocado

tbsp diced red onion

baby red butter lettuce

tbsp white balsamic vinegar

salt and fresh cracked pepper

Whisk vinaigrette ingredients and set aside.

Toss avocado, mango, chicken and red onion together.

Fill a large salad platter with baby greens or divide on 4 small dishes.

Top with chicken/avocado mixture and drizzle half the dressing on top.

Serve with remaining dressing if desired.

Sweet and Sticky Mango Chutney Chicken

mango chutney (paleo, if needed)

curry powder

EACH: cayenne powder and sea salt

Preheat oven

sear chicken

Heat the oil in a large, ovenproof skillet over medium-high heat. (See notes) Add the onion and cook until it is soft and starting to brown, about 3 minutes if the onion is very finely minced. Add the garlic and let it cook for 1 minute. Transfer the onions and garlic to a small bowl and set the pan aside.

make mango paste

Mix the mango chutney, curry powder, cayenne, and sea salt into the onions and garlic. Spread half the paste under the skin of the chicken and the remainder on top of the chicken skin. Don't spread any on the bottom of the chicken.

bake chicken

Place the chicken into the pan and put the pan in your oven. Let the chicken cook for 40 minutes. If you're serving this with rice or cauliflower rice, start cooking that now. If you'd like the chicken a little more brown, you can broil it for 3-4 minutes at the end of cooking.

plain Greek yogurt

lemon juice

tbsp sugar

ginger paste

tsp garam masala seasoning ((See Note 2))

tsp cumin

tsp kosher salt

turmeric powder

vegetable oil

full fat coconut milk (or cream)

cilantro

chopped cashews or almonds (optional)

Whisk marinade ingredients to combine, then add to a bowl with chicken. Cover and refrigerate for an hour.

Using an immersion blender or stick blender, puree the mango and set aside.

Heat vegetable oil over high heat in large fry pan. Add marinated chicken and cook for 3-5 minutes, or until the chicken is white all over - it doesn&#039;t really brown due to the marinade.

Add mango puree and coconut milk or cream, stirring to combine. Turn heat to low and simmer for 15 minutes uncovered. Sauce will thicken.

Season with salt if needed. Remove from heat. Serve over steamed rice of choice. Garnish with cilantro leaves and chopped nuts if desired.
