These mango overnight oats use a flavorful mango milk to help infuse extra sweet mango lime flavor into each bite. Easy to make ahead for grab and go breakfast.

Mango Overnight Oats

tbsp hemp hearts

lime

tbsp unsweetened plant-based yogurt

maple syrup

tsp turmeric

soy milk, coconut beverage, oat milk

gluten-free rolled oats

tbsp chia seeds

Lime Zest

Place the mango, hemp hearts, lime zest and juice, yogurt, syrup, turmeric, and milk into a blender cup. Blend on high until the mixture is completely smooth. Taste and adjust the sweetness to preference.

Set up 3 airtight containers. Add 1/2 cup rolled oats, 1 tbsp chia seeds and a pinch of salt to each container and stir to combine.

Next, measure and pour 3/4 cup of the mango milk mixture into each container. Stir the mixture really well making sure you are evenly mixing the chia seeds throughout. Allow the mixture to sit for 5 minutes then give another good stir.

Seal the containers and place in the fridge for 4-6 hours or overnight to set. When ready to eat, top with additional toppings of your choice and enjoy.

My Mango Overnight Oats are a simple, make-ahead breakfast that will give you a taste of the tropics. This is one of the easiest recipes to prepare – pureed mango is combined with rolled oats, chia seeds, milk and maple syrup. In the morning, they are ready for you to eat or take with you to enjoy on the go. It’s a great way to begin your day!

250 g (8.8 oz) mango (See Note 1)

(160 ml) milk

vanilla

tbsp chia seeds (See Note 3)

(80 g) old fashioned rolled oats

Greek or coconut yoghurt

toasted coconut flakes

Add the mango to a small blender and puree until smooth.

Combine the mango puree with all of the other ingredients in a bowl. Mix well to ensure everything is combined.

Cover the bowl with clingwrap, or divide the mixture into two glasses or mason jars and cover. Refrigerate for 6 hours or overnight.

In the morning, stir well and enjoy as is, or top with yoghurt, more mango and toasted coconut flakes.
