Mango Sago is a quick, refreshing, and satisfying summer dessert popular in Asia, with juicy chunks of mango and a mango/coconut milk tapioca pudding.

Mango Sago

small-sized uncooked tapioca ((about 60 grams))

mangos ((about 1 kg))

200 ml unsweetened coconut milk ((1/2 of a 13.5 oz. can))

60 ml sweetened condensed milk ((1/4 cup,

vanilla extract

In a pot, bring 4 cups of water to a boil. Add the mini pearl tapioca (don’t add it before the water is at a full boil!). Stir and bring it to boil again. Simmer for 15 minutes, or until the tapioca is completely transparent, which means they’re fully cooked.

When the tapioca is cooked through, drain, rinse in cold water to cool, then soak in a bowl of cold water and set aside.

Meanwhile, peel the mango, trimming to remove the center pit. Set aside a large handful of nice chunks for topping. The rest will be blended.

In a blender, add the coconut milk, condensed milk, vanilla extract, and mango. Blend until smooth, and transfer to a large bowl. At this stage, if you like your dessert cold, chill the mango mixture for at least an hour before adding the tapioca.

When you’re ready to serve, drain the cooked tapioca, and add to the mango mixture. Scoop into individual bowls and top with mango chunks.

Mango Sago with Coconut Milk

sago pearls (- or tapioca pearls)

In a pot, bring 1 liter of water to boil. Add the small sago pearls and cook for 15 minutes or until translucent. (Check package instructions.) Stir occasionally to prevent from sticking together.&nbsp;&nbsp;

Turn off heat and strain the sago pearls using a fine sieve. Rinse thoroughly until the sago pearls&nbsp;are no longer hot to touch. Transfer to a bowl and soak in little water.&nbsp;

Reserve about a cup of the mango cubes for later as toppings. Place the remaining in a blender. Add sugar and pulse on high speed until it turns into a smooth puree.

Drain water from the cooked sago pearls and transfer in a larger bowl. Add the mango puree and coconut cream and mix with a spoon or spatula until well blended.&nbsp;

Divide the mango sago into 6-8 serving bowls and top each with the reserved mango cubes. Chill for at least an hour before serving.

Sweet, ripe mangoes and chewy tapioca pearls combine in a creamy coconut mango sauce to make this super easy, refreshing summer dessert. And the best part -- it&#39;s just 5 ingredients!

Creamy Mango Sago

ripe champagne (yellow) mangoes

tbsp uncooked small tapioca or sago pearls

sweetened condensed milk ((or sugar to taste))

milk

full fat coconut milk

Bring a pot of at least 6 cups of water to boil. Add 3 tbsp of uncooked tapioca pearls and simmer until the pearls are almost fully translucent, or about 15 min. Stir occasionally to prevent sticking.

While it’s boiling, prepare your mangoes by peeling them and slicing into halves, making sure to slice around the seed. Slice as much mango as you can off the seed. Dice 1 of the 3 mangoes into chunks and set aside (this will be for the topping).

After 15 min, the tapioca pearls should still have a tiny white dot in the middle. Strain the tapioca pearls and rinse in cold water. Let sit in a bowl of water (this prevents them from hardening).

Put the other 2 sliced mangoes into a blender, and blend with sweetened condensed milk (or sugar) and evaporated milk (or your choice of milk). If you like it sweeter, add more condensed milk. If you want it less creamy and more runny, add more evaporated milk. This mixture should be a little on the sweeter side so that when we mix it with coconut milk, the flavors will balance out.

Drain the tapioca pearls. Give the can of coconut milk a good shake, then mix with the tapioca pearls.

(Optional) Layer into a glass cup or jar by adding in the blended mango first, then top with tapioca + coconut milk mixture. Alternatively, just mix everything together.

Top with the diced mango cubes, mix, and enjoy! For best results, put it in the fridge for 20-30 minutes to enjoy cold :)

After seeing a clip of this on Instagram, I knew I had to make this. It looked so good…. And I was not disappointed! It’s amazing; my new summer addiction! I used the larger mangos, rather than the little yellow ones, and it was perfect. I personally would add more tapioca, but still highly recommend.

This mango tapioca pudding is a refreshing summer dessert made with easy-to-find ingredients. This recipe serves 4 to 5 but you can easily double up the recipe to serve more people. I like adding sliced strawberries to the pudding for some tart flavor and color contrast. Longan or lychee work very well too. If you want a pure mango pudding, feel free to substitute the strawberries with more mango chunks.

Mango Tapioca Pudding (Mango Sago)

(1.9L) water

(155 grams) small tapioca pearls

(235 milliliters) whole or 2% milk

(175 milliliters) full-fat canned coconut milk

honey (divided, add more to taste)

strawberries (see headnote)

Add the water to a pot or large saucepan and bring it to boil over high heat. DO NOT add the tapioca pearls when the water is still cold (see note 2). Reduce the heat slightly to medium-high and add the tapioca pearls. Give the pearls a quick stir. Cook the pearls for 15 minutes and turn off the heat. The pearls will be translucent around the exterior with solid white specks in the center. Cover the pot with a lid and let the pearls sit for another 10 to 15 minutes, until the pearls look completely translucent. It’s okay if a few pearls here and there still have tiny white specks in the center.

Drain the pearls and rinse them under cold water. Transfer them to a large bowl with cold tap water. Submerging the pearls completely in cold water helps them to cool faster and makes them less sticky. Let that sit while you prepare the other components of the tapioca pudding.

Cook Pearls

Add the milk and coconut milk to a saucepan and bring to a boil. Do not cover the saucepan with a lid because it’s very easy for the milk to boil over. Turn off the heat and add 2 tablespoons of honey. (See note 3 for the reasoning behind boiling the milk.) Let the milk cool for 5 to 10 minutes.

Slice a mango along the oblong pit in the center. Using the tip of your knife, make crosswise cuts inside the 2 mango slices to make cubes. Use your fingers to bend the mango slices so that the mango cubes protrude. Then, run the knife below the cubes to slice them off.

Take the piece of mango containing the central pit and use a paring knife to peel off the skin. Then, use the knife to cut off as much flesh from the pit as possible. I generally use the flesh around the pit for the mango puree.

Measure 1 1/4 cups (225 grams) of mango flesh and transfer it to the bowl of a high-speed blender. Add the warmed milk to the blender. Blend everything until smooth. Pour the mango puree into a large bowl.

Prepare Mango Puree

Drain the tapioca pearls and drizzle 1 1/2 tablespoons of honey over the pearls. Toss to coat the pearls with the honey. Add the tapioca pearls to the bowl with the mango puree and stir. Next, add the remaining mango cubes/chunks and sliced strawberries to the bowl. Stir to combine. Taste the mango tapioca pudding and add more honey, if necessary.

Chill the mango tapioca pudding for at least 2 hours before serving.

Tapioca pearls (1/2 cup)

Coconut milk

Condensed milk (1/4 cup)

Whole milk, to serve

Bring a large pot of water to a boil over high heat

Add the sago and cook on medium heat for 8 minutes or until the sago is almost fully transparent

Cover and turn off the heat, let the sago sit for 10 minutes or until it's fully transparent

Drain the sago through a fine mesh sieve and rinse with cold water, set it aside

Peel the mangoes, cut off the mango flesh and remove the pit

In a blender combine half the mango, coconut milk, and condensed milk, and blend until it forms a smooth mango puree

Cut the remaining mango into large chunks

Divide the cooked tapioca pearls and mango mixture between 4 glasses or bowls, and top with chunks of mango (optionally you can also add toppings like coconut jelly!)

Pour milk over the top to taste, stir, and serve!
